Baker's sustenance for that final push of the day to get these last two doughs shaped and out to bed for the night. Been a busy day that started at 5am when the alarm company called. No issues, just a fluke. Made bagels for this week's market, processed a couple hundred pounds of dough for this week's breads, and made a beautiful ruby red strawberry filling from my garden (organic strawberries). Look for strawberry featured goodies this week's market along with new savory flavors for snacks! See you tomorrow afternoon and Saturday morning
Baker's breakfast. Never trust a baker who doesn't eat their own bread. 😉 Been here since before the sun, getting the breads and bagels baked for market today! Come see me! These bagels won't last.
Pov: Spending the afternoon sanding boards to become bagel boards to fit your new bread oven. Next step is to cover in linen.
Alot of work and little rest over the last couple of weeks, but things are taking shape. I've been joking for years that I have been collecting everything I need for a bakery in my house/garage. I am thankful that I was able to do that over extended time to keep my opening costs down. Still, I have had to purchase a lot, a new oven, a new spiral dough mixer, a new to me 20qt mixer, sinks, and tons of little things. So many casters for every single thing.
I am beginning to see a light at the end of the tunnel and the possibility that this little venture just might have legs. After moving everything multiple times, it seems like maybe everything is now in the place it's supposed to be. Final tidying, clean, and organization, and then it will be time to bring the sours out of hibernation and start feeding them again. And then the test runs of everything for a solid week or so. I am getting excited that the bread making is very close.

Little by little, this space is beginning to transform. Its been a tough couple of months, so the pace has been slower than I'd like. We've landed in a small space for production and are in the process of getting it ready for market season. Sinks and mixers have arrived, and the oven is on the way. Lots of putting things together still in front of me. 🤞Everything gets installed and approved here in the next 3-4 weeks. More info to come regarding changes for this community supported microbakery.
New things for Tang and Sass! Looking forward to market season this year. Lots of changes for 2024. Announcements coming soon.
We have a variety of items available for pre-order for your Valentine celebrations!
POV: You've raided all the goodies from your pastry chef tribe, .cubillos.young and , and added a few of your own to put together mom's Holiday Cheer tins this year. Mom's moving, so our annual 3-day candy making adventure couldn't happen this year. I like the look of this collection of goodies and see potential for an offering through tangandsass for holiday season 2024. Stay tuned.....
Thanks so much for stopping by yesterday! It was great to see new faces and reconnect with returning customers. See you next time!
Come out and see us today from 1-5. It's gonna be a nice cool day to shop local and enjoy the festival vibes that happen every month at this market. We will be offering some favorite sourdough breads (buttermilk, cheese & multigrain) and focaccia. We also have a couple of new bread items; pan de mie (fancy french for tender white bread and great for those tomatoe sandwiches 😉) and oat and honey (super kid friendly for those pb&js).
We also have a selection of treats this week: blackberry streusel breakfast bread, white chocolate and berry cookie sammich, strawberry-raspberry jam bar and blueberry morning buns(not pictured).
Come see us today!
