These yummy stuffed peppers are making another appearance in our home tonight. May have added a little extra cheese tonight 🧀🧀🧀🧀

Ingredients
-1 lb ground chicken
-1/2 sweet onion chopped
-1-2 jalapeños chopped
-16oz fresh baby spinach
-1 1/2 cups grains precooked (I use Trader Joe’s rice medley..adds great texture)
-8 to 12 oz your fav jarred salsa
-a few dashes of Tabasco for a kick
-4 large bell peppers cut in half seeded

Directions

-place prepped bell peppers in baking dish
-add EVOO to a large skillet
-brown ground chicken
-add chopped onion and jalapeños
-sauté a bit
-add spinach wilt down
-turn off heat
-add grain of choice
-add salsa and Tabasco
-mix well, stuff peppers
-top with shredded Mexican cheese blend

That’s right no salt and pepper! The salsa does that for you 😘

Bake 350 covered for 40mins...uncovered 15-20. Want bubbly and browned. We serve ours with sour cream, Cholula and sliced Avacado

As always I modify. Add extra lemon zest, drain/rinsed capers and red pepper flakes to taste🍋🌶🍾

Super easy pasta salad! Perfect BBQ side or as a meal! 💛 Packed full of veggies!

1 lb Farfalle cooked per box
Instructions drained (I don’t rinse but you can)
1 cup frozen peas
1 cup frozen corn
1 can artichoke hearts drained and chopped
1 red bell pepper (I mixed In some orange too)
4-6oz your favorite vinaigrette
Shredded parm or Asiago to your liking
S&P to taste

Mix well. Refrigerate at least a few hours or overnight. Enjoy! Happy Summer friends and family.

Trying new things. First time steaming King Crab Legs at home....don’t be afraid. Steam 12-20mins depending on size and serve with melted butter and lemon! Yes please 🦀🍋

It’s perfect Grilling weather! We love a good potato salad! You can do the same with russet potatoes, or Macaroni! It’s always a hit. This has been made for every family get together and celebration since I was a little girl.

Adjust the veggies and sauce to your liking. 💛 I add a crazy amount of eggs because we 💛 egg salad!

Rough recipe as I do this from heart and probably different every time. Can’t go wrong with the ingredients🥰

-3lbs potatoes rinsed well skin on or 1 box macaroni cooked. (Red potatoes are done when a knife comes out easily. If unsure one out and try! Usually boil 20-30mins..salt your water) Macaroni follows box directions drain)
-1 large can sliced olives drained
-1/4-1/2 small red onion diced
-3-6 celery stalks diced
-6 boiled eggs sliced
-4 DILL pickles diced

Dressing
Mix together
-2 cups Mayo (Best Foods)
-1/4-1/2 cup mustard
-kosher salt to taste
-course ground pepper to taste

Add cooked potatoes quartered or macaroni in a large bowl. Add veggies to your liking, pour over sauce, mix well taste for S&P! Refrigerate for a few hours or overnight.

What’s for dinner in your kitchen??

Ingredients

Swiss Cheese Chicken 😍 One pan meal the whole family loves. These stormy desert evenings have had us craving comfort food! This dish is just that.

-2lbs chicken breast sliced in cutlets
-2cans cream of chicken soup
-1 box chicken stove top stuffing
-8oz/10 slices aged Swiss cheese cut in half
-1/2 cup Pinot Grigio wine (can use water or milk)
-1/4 cup unsalted butter melted
-salt, pepper, garlic powder

(This is with the sauce doubled. Can just use one can COC and 1/4 cup wine)

Heat oven to 350. Filet chicken breast into thin cutlets. Season both sides with salt, pepper & garlic powder. Place into a 9x12 baking dish. Top each chicken cutlet with Swiss cheese. Whisk together the Cream of chicken soup and wine then pour over chicken & cheese. Top with box of stove top stuffing. Drizzle with melted butter. Bake 40mins covered with foil 20mins uncovered. Serve with toasted veggies or salad.

Mix Recipe for Meatloaf. Only modifications I make are I use ritz or saltine crackers instead of breadcrumbs. I also love them in mini loaves. My hubby doesn’t care for ketchup on top but I do💛

Lettuce Wraps with Fresh Ginger

Ingredients
-2 tblspns Olive Oil
-16oz Ground Chicken (can sub ground turkey)
-16oz White Button Mushroom (or Baby Bella’s)
-(2) 8oz cans Water Chesnut’s drained
-1 bunch Green onions thinly sliced
-1/2 sweet onion minced
-3 tblspns fresh minced ginger
-1 1/2 tblspns minced garlic
-4 tblspns low sodium tamari (or low sodium soy sauce
-1 head living butter lettuce (or iceberg)

-brown ground chicken in the olive oil
-add cleaned minced mushrooms cook down until moisture is gone
-add minced sweet onion & sliced green onion cook down until onions are translucent
-add in drained minced water Chesnut’s, minced ginger & minced garlic. Cook down 5-8 mins
-add soy sauce and cook and addition 3mins

Rinse and dry lettuce cups...assemble 💛

**serve with extra tamari, chili paste, hot mustard
**we like a side of jasmine rice and edamame but they are a meal in themselves

***can be made Vegetarian by omitting meat just double the shrooms 🙂 Yummy leftover too

Corn tortillas, scrambled eggs, avocado, tomato & cilantro. Add a little S&P and a dash of your favorite hot sauce. Crowd pleaser and ready in minutes! 💛

-laughing cow cheese
-everything bagel seasoning
-micro greens
-cucumber
-cherry tomatoes

Baked Buffalo Chicken Flautas
A friend brought over buffalo chicken dip and I was instantly in love. This is our favorite way to enjoy those flavors!

Ingredients:
-8 flour tortillas (cooked in a pan or over a flame until browned)
-2 rotisserie chicken breasts shredded
-1/2 cup ranch or blue cheese dressing
-1/4 cup Franks red hot
-1/2 cup shredded Mexican blend cheese
-1/2 block softened cream cheese

Want cheesier or spicier go for it. Want healthier...try less cheese or using light cheese & dressing.

Instructions:
-preheat oven to 350
-brown tortillas set aside
-add shredded chicken breasts to a bowl
-add cheeses, dressing and hot sauce mix well
-assemble each with filling, roll tight, place seem side down in a baking dish
-bake until fully golden about 30-40mins.
-serve with extra hot sauce, dressing and of course celery & carrots

Asian Coleslaw with Toasted Ramen
💛 Been making a few versions of this throughout the years. Finally found one that’s perfect! 💛RECIPE BELOW💛

1 (16oz bag coleslaw)
1 bunch green onions chopped
2 packages chicken ramen, save seasoning
1/2 cup chopped almonds (can use sliced)
2 tblspns sesame seeds
2 tblspns butter
1/2 cup granulated sugar
1/4 cup olive oil
1/2 cup apple cider vinegar (we like Braggs)

-Preheat oven to 350
-Crunch up ramen place in a bowl with almonds and sesame seeds
-melt butter and mix in 1 seasoning packet..pour over ramen mixture combine well. Spread on a baking sheet bake 10mins. Remove and cool
-Place slaw and chopped green onions in a bowl
-for dressing combine sugar, olive oil, apple cider vinegar and remaining seasoning packet
- add dressing and ramen to slaw mix well
-salt & pepper to taste
-if you like the noodles crunchy serve immediately. We like ours soft. So let it sit for a few hours.

A version of this has been in Brian’s family for years. Made a few adjustments for our tastes. Feel free to do the same. Can’t go wrong. 💛

Happy Friday! Tonight is just a reminder to teach your kids to cook. I find they’ll try almost anything if they can help. Tonight was my first time in the kitchen with the Shanester solo. He enjoyed every minute and so did I💙.

Artichokes are a side in our house tonight! Takes a little work but do not be afraid! The end product is worth it!
Recipe 👇🏻
-trim ends and spiny leaf tips of two large artichokes
-cut artichokes in half and remove “Choke”
-immediately rub with lemon (prevents browning)
-drizzle cavity side up with EVOO, S&P, fresh garlic and more lemon.
-place cavity side down in a baking dish, drizzle a little more EVOO, S&P
-add water to cover the bottom of the pan, roast at 425 for 45 mins covered with foil, 15mins uncovered! (Done when leaf pulls out gently and inside is soft)
-get ready for flavor town...and only scrape the inside of the leaf of you may “choke” 😜

The heart is the best part. Will post when done

***serve with melted clarified butter or mayo

🌶🍅Salsa two ways🍅🌶

This fresh salsa screams summer! No real recipe. Just fresh ingredients to your liking....which I’ll include in the comments. You can chop for a chunky “Pico” or blend for a thinner “Restaurant” style. Of course it’s great with tortilla chips, on grilled chicken, in tacos but I ❤️ it on my egg whites! It’s actually just tasty enough to drink 😜🤣

Cooking & Creating meals can be easy! Lunch for the hubs and I using leftovers from last night. Tacos Al Fresco! Seared corned tortillas on the stove, stuffed with leftover grilled chicken sausage, peppers & onions. Top with store bought avocado salsa, cilantro for me and not him (he says it tastes like soap😜)

I will be starting this page off with a recipe I hold dear to my heart. I learned how to make this from my beautiful mother and my husband tells me it’s the meal that stole his heart. It has even become a favorite for my kiddos!! I included a picture of me making it for the first time for Brian in my apartment almost 20 years ago!
