Nothing more homely and comforting than a home made Bunny Chow. This is one of our household favorites, Durban styled Mutton Bunny. Made with love out of Jolins Kitchen 🤤👌

3 colour Lamb Breyani

Ingredients:

-1.5kilo Lamb
-Maas (Plain Yoghurt is bland)
-2 Table spoons Masala (I used 1 table spoon of babez & 1 kashmiri)
- Jeera & cumin 1 tablespoon each.
-3 good pieces of cinnamon sticks
- 3 aniseed
- You can find these dry spices in a briyani mix at spice shops.
-1 Chopped tomato
-1 chopped onion
-Ginger & garlic
-1 potato (We don't like too much potato you can add more.
- Some chopped coriander
- 3 chillis cut in halves.
- a few bay leaves & curry leaves.
- 2 cups of rice
- Food coloring ( We used red & yellow).

Method :

Wash meat put in a container then add all spice hard & powdered, some coriander & tomato with 1ltr of your the maas & mix. Let it stand in the fridge for an hour long the better.

Heat up pot & gooi the onions, once onions start sweating a big table spoon of ginger & garlic & curry leaves with your Chilli, simmer for around 10mins & throw your marinated breyani.

Cook for 1.5hrs, low heat is always the best.

Boil your 2cups of basmati for about 15mins, strain & set aside.

-Fry or bake your potatoes until golden brown

Braise 1 big onion until golden brown.

-once your pot is cooked for 1.5hrs, lower your heat to level 1, lay your rice on top. Then take a teaspoon of food coloring & mix with 2 tablespoons of water. Throw the coloring in a zigzag formation. Lay the potatoes & garnish with chopped coriander.

Close pot & let it steam for a solid 30mins.

Dhai (sour milk to drizzle over your Breyani)

Ingredients:

-Maas
-Chilli
-Cucumber
-Dhania/Cucumber
-salt

Chop chillies, dhania up finely and grate cucumber into a bowl. Pour in maas and add a flat teaspoon of salt.

Blend ingredients together and drizzle over your breyani once dished on your place.

Let Dhai set in the fridge.

What better way to say goodbye to 2021 with a lekker crayfish and prawn potjie 😋🤤

Ingredients :

- Used 8 crayfish tails
- 500gram prawns de-shelled or shelled
- 350gram chicken breasts cut up.

-1 onion
-3 Chilli cut halfs & red crushed Chilli (Optional)
- A good quality masala (Optional) - we use Kashmiri or mother in law, according to your liking - stay away from Raja 🤭
-Fish spice
-Cajun Spice
-crushed black pepper
-Prawn & seafood spice
-500mil fresh cream
-500mil tomato puree
-cornflour
-Coriander
-parsley
-crushed ginger & garlic
- Oil

Method :

Set fire to a lowish heat & heat up pot with oil & gooi in diced onions & all chilli, once the onions start sweating throw in a table spoon of ginger & garlic, simmer for 8mins.

Then a flattish tablespoon of masala & stir, might need to add quarter glass of water for masala to cook through for about 8mins.

Throw in cut up chicken breasts, flat tablespoon of cajan spice stir close pot, braise for another 10 to 15min till some oil rises.

Then the crayfish tails with fish & prawn spices, about a flat tablespoon each, stir nicely with chicken pieces & simmer for 8mins. Thrown in tomato puree 1 more stir & close pot for 15mins.

I like crushing some black pepper in-between

Throw 3 quarters of your cream in & mix the rest with some corn starch & Throw the rest in. Immediately after add your prawns right on top close pot & simmer for 15 to 20mins Then take pot off the heat.
Add chopped up coriander &, parsley to finish off.

Serve with white basmati rice. 👌
Total cooking time: Around 50 minutes
