Made these pretzel bites earlier today with Charlie and had a blast making about a hundred or so of them for the week. This is only what’s left of what was out because the family immediately started eating them. I had salted, unsalted, and some cinnamon sugar ones. Took about half of each type and froze those for some after school microwaveable treats. And served these with a vegan nacho cheese sauce.

We made a massive plate of vegan nachos for dinner last night with some tofu, black beans, peppers, and onions as well as with an awesome cashew nacho cheese sauce. Even Charlie liked it except for how spicy it was.

We decided that although Emily and I are vegetarians we were going to lean into veganuary this year. Started it off with several lovely dishes but this is our arugula and berry salad with maple curried pecans on top and tons of great veg for the side. I also made up a vegan chili Mac and cheese but forgot to snap a photo for our dinner. I’ll try to post a photo or video of each of our meals throughout this month and hope to share a bit more recipes throughout this new year.

Nothing says Christmas like a log of chocolate cake covered in chocolate ganache and filled with chocolate whipped cream. This was fun to bake up with the family.

One of my favorite things about the weather turning cold is that I get to cook warm welcoming dishes for dinner like this creamy vegan mushroom pasta. Truly creamy and delicious

Waking up and getting some yard work done before having a simple breakfast of avocado toast with spinach and tomatoes. Best way to start a Labor Day.

Sometimes you’ve got some simple meals of veg that’s leftover and that’s when you make rice, roasted potatoes, and a cabbage Brussel sprout and mushroom mix for dinner.

A trip of panini works for any lunch or dinner. Pepperoni and mozzarella for Chase. Turkey and cheese for Charlie and a tomato, carrot-top pesto and mozzarella for Emily and me.

Roasted cabbage with vegan cashew cream and dukkah seasoning. Perfect way to use up the rest of the cabbage from lunch.

More of a knife and fork avocado toast with an oozy over easy egg and pickled onions.

Cheesy homemade lasagna for lunch is the best quick family meal.

It might be cold and miserable outside but inside we’ve got warmth and fresh baked peanut butter cookies.

Cold outside but avocado toast with some freshly pickled onions and some freshly picked tomatoes from the hydroponic garden makes a great start to the day.

Lunch of a vegan green goddess dressing over a curried cauliflower salad is the perfect meal to power into the afternoon with.

Saturday is a great food prep day and nothing like some vegan green goddess dressing to make ahead for a week off work.

Vegetarian risotto with sautéed mushrooms and fresh basil.
