Wondering what to do with any leftover boiled Easter eggs?!! 🤔…😍😍😍…Avocado Egg Salad!!!!
🥑🥚🥑

Yum!

What You Need:
2 hard-boiled eggs, chopped
2 hard-boiled egg whites, chopped
1 ½ ounces avocados, pitted and peeled
¼ cup plain greek yogurt (I use Fage)
2 tsp fresh lemon juice
1 tbsp chopped green onion
¼ tsp dijon mustard
1/8 tsp salt
¼ tsp freshly ground pepper

How To Make This:
In a medium bowl, combine the hard-boiled eggs and egg whites, avocado, Greek yogurt, lemon juice, green onion, and mustard.

Mash with a fork.
Season with salt and pepper. Enjoy!

Super simple! We like to keep some hard boiled eggs in our fridge for a quick protein bite.

Craving Italian food…I wonder why???

Creamy Garlic Tuscan Shrimp
4 servings
each serving provides: ½ leanest, 2 healthy fat, 1 ¼ greens, 2 ¼ condiments
Ingredients:
2 cloves garlic (2 condiments)
22.4 oz of raw shrimp, peeled and clean (2 lean)
½ cup (1.76 oz) diced green onion (1 green)
0.25 oz sundried tomatoes (no oil) (1/8 green)
1 ½ cups of half & half (8 healthy fats)
¼ tsp salt (1 condiment)
¼ tsp pepper ( ½ condiment)
4 cups (4.24 oz) raw baby spinach (4 green)
¼ cup parmesan cheese (4 condiments)
½ tsp dried Italian herbs (1 condiment)
2 tbsp fresh parsley (½ condiment)
Heat a large skillet over medium heat. Add the garlic and fry till fragrant; about a minute. Add the shrimp and cook on one side then flip to other side. Cook till pink. Transfer to bowl and set aside.
Cook the green onions in the skillet then add the sun dried tomatoes. Add the 1/2 &1/2 and bring to a gentle simmer. Add the spinach leaves and allow to wilt in the sauce. At this point add the parmesan cheese and herbs. Cook a little more to thicken a bit; then add the shrimp back in and top with the parsley.

Love what she says…DONT LET AGE BE A FACTOR.

It’s been one year since I started my health journey. In that timeframe I have lost 121 pounds. It has not only created weight loss for me but it has created happiness and more energy. I also started this when I was 70 years old. Don’t let age ever be a factor !! 😊😊😊😊

Finishing the last of my lettuce with this bad boy tonight!! Super easy for a Friday.

Quick and Easy Egg Salad

Makes 2 servings
Per serving:
1 lean
3 condiments
1 green
1/2 optional snack

Ingredients:
6 Hard-boiled Eggs
2 tsp dijon mustard
4 tbsp low fat plain Greek yogurt
2 tbsp fresh chives, finely chopped
1/4 tsp salt
1/4 tsp paprika
2 dill pickle spear, finely chopped*
1 cup Romaine lettuce leaves
Directions:
Peel and chop the eggs and put in a medium sized bowl.
Add dijon mustard, Greek yogurt, chives, salt, paprika and pickles.
Stir gently until combined.
Refrigerate leftovers in an airtight container up to 3 days.

Delicious and Easy! 🐟🌮🥗

Fish Taco Cabbage Bowl

Ingredients:
2 ½ pounds (40 oz) Tilapia or other mild white fish (4 leanest)
2 tsp + 2 tsp olive oil (4 healthy fats)
2 tsp Szeged Fish Rub (or use other fish rub of your choice) (4 condiments)
1/2 tsp ground cumin (1/2 condiments)
½ tsp chile powder (1 condiment)
4 cup (9.84 oz) green cabbage, thinly sliced (8 greens)
1 ½ cups (7.38 oz) red cabbage, thinly sliced (6 greens)
½ cup (1.76 oz) thinly sliced green onion (1 green)
6 oz avocado (4 health fats)

Dressing Ingredients:
1/4 cup plain non-fat Greek yogurt (2 condiments)
2 Tbsp fresh-squeezed lime juice (3 condiments)
2 tsp Green Tabasco Sauce (1 condiment)
¼ tsp salt (1 condiment)

Instructions:
Thaw fish overnight in the refrigerator if frozen. Mix the fish rub, ground cumin, and chile powder in a small dish. When you're ready to cook, pat fish dry with paper towels, then rub both sides with 2 tsp. of the olive oil followed by the fish rub mixture. Let the fish come to room temperature while you prep the other ingredients.

Cut away the core of the cabbage and discard, the use a knife or a Mandoline Slicer to cut the cabbage into thin slices; we used the 3 cm blade for the mandolin (You can also use pre-sliced coleslaw mix if you don't want to bother cutting the cabbage). Thinly slice the green onion. Whisk together the lime juice, and salt to make the dressing.

Brush a stove-top grill pan or heavy frying pan with the other 2 tsp. olive oil and heat the pan about a minute at medium-high heat. Then add the fish and cook about 4 minutes on the first side. Turn gently and cook about 4 minutes more on the other side. (Actual cooking time will depend on how thick your pieces of fish are. Fish should feel barely firm to the touch when it's done.) While the fish cooks, mix about half the green onions into the cabbage mixture and stir in enough dressing to barely moisten the cabbage.

When the fish is done, let it cool slightly on a cutting board, then use two forks to shred the fish apart. Fill bowl with 1/4 of the cabbage mixture and top with desired amount of fish. Drizzle a little more dressing over the top. Serve right away, with guacamole if desired.

Ricotta Chocolate Almond Mousse

1 Serving: 1/2 Lean, 1 3/4 Condiments, 1 Snack

Ingredients:
1/2 cup skim ricotta cheese
1 tbls unsweetened cacao powder
1/4 tsp pure vanilla extract
1 packet organic stevia, or more or less to taste
1/2 ounce sliced almonds

Directions:
In a small bowl, whisk all ingredients together except almonds. Pour into a small ramekin and top with almonds. Cover and chill in refrigerator for at least an hour before serving. Enjoy!
