I'm double board certified, and I've been in academic medicine for over 20 years. And yet were it not for coming across some videos on YouTube, specifically Sally Norton's interviews, I'm not sure I would still be here. At one point I found myself in an emergency room with heart palpitations and extremely high blood pressure. This was after years of unexplained muscle and joint pain, and a host of other physical and mental issues. Excessive oxalate in the body is toxic—a consequence of increased intake of oxalate itself, its precursors, altered gut function (leaky gut, inflammatory bowel, etc.) and renal failure.



Elevated oxalate levels promote tissue deposition of calcium oxalate, vascular inflammation and damage [1] and other problems related to altered levels of calcium, other electrolytes and nutrients.



The best way to prevent elevated oxalate is to limit:

1) use of high oxalate foods

even as little as 10 mg/day of dietary oxalate is well absorbed and makes a significant contribution to bodily oxalate load [2].



2) supplemental C doses over ~250mg

Oxalate is a breakdown product of vitamin C [3]. Large doses of vitamin C increase oxalate in people with normal kidney function [4]. The risk of kidney stones is doubled in men taking ascorbic acid [5].

As one research team put it: “Currently there are no well-documented benefits of high-dose ascorbic acid supplement use and it seems prudent to advise that high-dose preparations be avoided, particularly by those with a history of kidney stones.” [5]



3) gut damaging foods (lectins, oxalates, excessive fiber) and drugs



If your body already has oxalate deposits, lowering intake will (ironically) increase blood levels because the body begins to flush out accumulated oxalate deposits after several (~5) days of a sustained low oxalate intake.





The amino acids glycine and hydroxyproline are also oxalate precursors, but they contribute just a sliver of daily metabolic oxalate production. One source of these amino acids is an elevated breakdown of our own connective tissues (for example, from injury or excessive exercise).



The amount of oxalate produced from amino acids is small, even on a high-protein diet. Eating meat may decrease internal oxalate production.[6]

Oxalic Acid. It can clean your clock.
Do not ingest.

Your spinach, almonds, and chia (among many other popular foods) are a slow (drip, drip, drip) oxalic acid delivery system. It's a serious downside to these cherished “health” foods. Yes, they contain oxalic acid. Eating too much doesn’t have to kill you to be a poison that will sap your vitality and leave you in pain.

I should not have been surprised to find oxalic acid in my Mother’s paint cabinet yesterday (she is a do-it-yourslefer who never throws anything away). Amazed nonetheless.

I’ve been an unaware “oxalate case” for many decades, and I am so happy to have discovered the root cause of my health problems, and finally be living to my full potential.

Who can you trust to provide you with decent information about the science of oxalates and the harm they can do?
As the oxalate conversation grows, more and more bad information is coming out. In case you don't have years to spend reading the medical literature, let me share a few important tidbits.
In a recent video, a Keto proponent (Rob, ) advised people to “follow causality” to understand topics like oxalate. So in this sequence (slide left to see each of the images) I will follow the causality, with full citations. You’ll see why not paying attention to dietary oxalate can be dangerous for people starting a Keto diet for weight loss (or really: for anyone who is unawarely eating various popular “healthy” high-oxalate vegetables).
Despite that video's dire warning that oxalates threaten to undermine the whole Keto idea, I am happy to reassure you that Keto and low-oxalate can very happily co-exist. I know many people who are doing it successfully. The only thing standing in your way is learning something about oxalates so you can make smart choices about what low-carb, high-fat foods to put on your plate.
