Empanadas! 🇲🇽
Ingredients:
- Maseca Corn Masa
- Meat of your choice (these ones are chicken, but you can also use beef or pork.)
- Fillings (this can vary, for these ones we used salsa verde and BBQ, you can add veggies and other items to your liking!)
- Frying oil
Directions:
Prepare meat and fillings how you like. Prepare your masa using directions on the bag. Once your masa is mixed up, grab out a tennis ball sized lump of masa and roll it in your hands until it resembles a ball. Using a tortilla press or a plate with a ziploc bag cut down the sides, press down to flatten the ball into a large shape that resembles a tortilla. Add your filling in the middle, and then carefully fold over, and use either a fork or your hands to crimp the edges together in order to prevent the empanadas from falling apart. Fry the empanadas, flipping once one side becomes golden brown, and remove them and drain them on a wire rack whenever they are golden and crispy on all sides!

So incredibly stoked to get to use these awesome spice jars that I got for Christmas from my girlfriend and her family! 😁 Maybe some day I'll be selling my spice blends, but time will tell!
Ever been hungry and can't decide if you want tacos or pizza? Get both and make this Taco Pizza!
Ingredients:
- Pizza Dough
- Sauce*
- Shredded Cheese
- Ground Beef
- Taco Seasoning
- Garnishes**
Steps:
Prepare pizza dough according to instructions. (Don't do what I did on my first go of this and burn the crust, the Pillsbury Dough Boy lied when he said to cook it at 425 for 8 minutes!)
Cook ground beef and season to taste with taco seasoning, about 1 pack of seasoning per pound of beef, more or less depending on how much seasoning you like.
Once dough is ready, pour and spread the sauce on the crust, then top with ground beef, cheese,
and whatever garnishes of your choosing.
Bake until the crust is done and the cheese is melted and bubbly.
Cut, serve, and don't forget the bev!
* you can use whatever sauce you like, whether that's pizza sauce, taco sauce, or hot sauce
** Garnishes are whatever you like on tacos, such as lettuce, green peppers, onions, Doritos, etc.
Ham and Cheese Hawaiian Sliders! Crunchy, cheesy, and meaty! Definitely perfect for your next party!
You need:
- Hawaiian Rolls
- Ham
- Cheese*
- Butter
- Minced Garlic
Steps:
In a bowl, mix some garlic into some butter and melt it in the microwave. It'll only take about 30 seconds or so for the butter to melt.
Cut your Hawaiian rolls down the middle, and take the tops off and set them aside.
Layer lots of ham onto the bottom of the buns, then once you have added enough ham, layer some slices of cheese on top, then place the top buns back over top.
Brush the garlic butter over the tops of the buns, and pop the entire thing in the oven on 350 for a few minutes, just until the cheese is nice and melty and the buns are a little bit browned.
Cut the buns into individual sliders, serve while they're hot, and never forget the bev!

Back at the den to smoke some baby backs, and let me tell all of y'all, these were ABSOLUTELY fall off the bone tender!
Chorizo Potato Tacos 👀👀
Chicken Potato Skillet 👀
A simple yet delicious meal that you can cook to impress a crowd!
You'll need:
- chicken breasts
- potatoes
- shredded cheese
- seasonings
- oil
Chop the potatoes and the chicken into about 1 inch cubes. Then, add your seasonings you like to the chicken and the potatoes, and mix them around. Add some oil to your skillet and get it hot, sear the chicken and potatoes (you can do them together or separate them). Once the chicken is cooked and the potatoes are tender, remove them from the skillet. Drain off the oil from the skillet, and then add your chicken and potatoes back to the skillet. Top the mixture with cheese, and then place the entire skillet in the broiler for about 5-7 minutes until the cheese is melty and bubbly. Serve while it's hot, and NEVER forget the bev!
If you're making this for a big crowd, you can use a roasting dish to put it in the oven.
