The best most easy peasy granola 🤎 you can make this your own and use any variation of nut butter, nuts/seeds, and additional goodies you have on hand.
gather:
-2 cups rolled oats
-1/2 cup pumpkin seeds, (or slivered almonds, or a mix of both)
-1/2 cup coconut flakes
-2 tbsp flax seeds
-2 teaspoons cinnamon
-1/2 teaspoon sea salt
-2 tablespoons melted coconut oil
-1/4 cup maple syrup or honey
-2 tablespoons creamy almond butter
-1/3 cup chocolate chips, yellow raisins or dried cranberries, optional
Prepare:
-Preheat the oven to 325°F and line a baking sheet with parchment paper.
-In a medium bowl, combine the oats, nuts/seeds, coconut flakes, cinnamon, and salt. Drizzle in the melted coconut oil and sweetener and add the almond butter. Stir until everything is well-coated. Scoop the granola onto the baking sheet and press the mixture into a 1-inch-thick dense layer (to get those chunks)
Bake for 15 minutes and rotate the pan halfway. Bake for 15 more minutes, or until golden brown. Let cool for at least 15 minutes before storing. Sprinkle with chocolate chips/raisins/dried cranberries once cooled.
Serve over smoothie bowls, with fruit & milk of choice 🫶🏼
