👉 1 medium ciabatta loaf
👉 3 tbsp olive oil
👉 2 skinless, boneless chicken breasts
👉 1 large cos or romaine lettuce, leaves separated

🔰 Method
👉 Heat oven to 200C. Tear 1 medium ciabatta into ragged croutons. Spread over a large baking sheet or tray and sprinkle over 2
tbsp olive oil.
👉 Rub the oil into the bread, Bake for 8-10 mins.
👉 Rub 2 skinless, boneless chicken breasts with 1 tbsp olive oil, season. Lay the chicken on the pan and leave for 4 mins.
👉 Turn the chicken, then cook for 4 mins more.
👉 Grate a handful of parmesan cheese and mix with the garlic, anchovies, 5 tbsp mayonnaise and 1 tbsp white wine vinegar.
👉 Tear 1 large cos or romaine lettuce into large pieces and put in a large bowl. Pull chicken into bite-size strips and
scatter half over the leaves, along with half the croutons.
👉 Add most of the dressing and toss with your fingers.

Garlic Marinated Chicken🔥
🍗This Garlic Marinated Chicken is bursting with flavor and works just as well on the grill as it does in a skillet on the stove top🤤😍
-Ingredients
1/4 cup olive oil
1/4 cup lemon juice
3 cloves garlic, minced
1/2 Tbsp dried oregano
1/2 tsp salt
Freshly cracked pepper
🔥 1.5 lbs. boneless skinless chicken breasts
Instructions
🔥 Add the olive oil, lemon juice, garlic, oregano, salt, and pepper to a large zip top bag, or a large shallow dish. Close the bag and massage to combine the ingredients, or stir the ingredients in the dish until combined.
🔥 Filet each chicken breast into two thinner pieces. Place the pieces in the bag or dish, making sure the chicken pieces are completely covered in marinade. 🔥 🔥 Marinate the chicken for 30 minutes up to 8 hours, turning occasionally to maximize the chicken's contact with the marinade.
🔥 When ready to cook, heat a large skillet over medium flame. Transfer the chicken from the marinade to the hot skillet and cook on each side until well browned and cooked through (about 5-7 minutes each side, depending on the size of the pieces). I cooked two pieces at a time to avoid over crowding the skillet, which can cause juices to pool and prevents browning. Discard the excess marinade.
🔥 Transfer the cooked chicken from the skillet to a cutting board and let rest for five minutes before slicing and serving.

Dinner tonight was this manioc & white sweet potato bowl with marinated tofu, kimchi and raw rainbow veggies 🌈

Have you tried manioc? And what about white sweet potatoes? 🍠

The sweet potato and manioc are baked at 200C for 25 minutes. I added some paprika powder, salt, pepper, garlic powder and a little sesame oil to the manioc before baking.

With this bowl, I served an almond dressing from brown almond butter, tamari, maple syrup, lemon juice and a splash of kombucha.

I love fermented foods for their multiple health benefits and try to include some every day!! 🙌🏻

How do you store vegetables to keep them fresh?🤔

Often seen as a sideshow on our plates, I'll be putting them front and center. Clean eating with full flavor 💪
Here's my 'Pot roasted cauliflower with spiced quinoa, toasted sunflower seeds, yoghurt and mint'. It's completely vegetarian and packs a punch.

Serves 4

Ingredients
☘️ 1 large head cauliflower
☘️ 100g butter
☘️ 2 cloves garlic, sliced
☘️ 1 onion, diced
☘️ 3tbsp ras el hanout spice mix
☘️ 200g quinoa
☘️ 1 litre vegetable stock
☘️ 20g toasted sunflower seeds
☘️ Large handful mint
☘️ 100g yoghurt
☘️ Zest and juice of 1 lime

Method

☘️ Preheat the oven to 200c. Heat a large casserole dish, add some oil.

☘️ Peel back the green leaves from the cauliflower, remove the base. Place in the pot and begin char all over

☘️ Once it begins to brown, drop the heat slightly and add the butter, baste the cauliflower for 1 minute, then add the spices, onion and garlic.

☘️ After another minute, reduce the heat and add the quinoa into the base of the pot, coat it in the spiced butter, then add the wine and reduce by half.
Add the chicken stock and season with salt.

☘️ Place a lid on the pot and place in the oven for 30mins, or until the quinoa has absorbed the moisture and the cauliflower is soft.

☘️ Season the yoghurt with the lime juice and salt
Remove the lid from the pot and garnish with the yoghurt, sunflower seeds, mint, and lime zest.

Serve in the middle of the table.

Save* it for later! Another great way to use your fresh vegetables and make dinner prep seamless is to wash and SHAVE your Brussels sprouts, cabbage and carrots & store them in an airtight container in the fridge.

When dinner time is near they will be ready to add crunch and nutrition into your stir frys and salads.
