Mexican Turkey Burgers 🍔 Less than 2 carbs! And packed with SO much flavor! I add chopped bell pepper, cilantro and green onions into the ground turkey, form into patties, and let the grill do all the work. Top it with some guac, jalapeños, onion and tomatoes and you're in summer BBQ dinner heaven!

Rainy morning’s got me in a mac n’ cheese mood! There’s nothing like cozying up to some good good comfort food when the season says summer (almost) but Mother Nature says not yettt! With everything going on, it feels so good to be able to get outside and wind down like this after a long day. It seems simple, but I’ve practically dreamed of being able to do just this and live exactly here for almost half my life. It took a while. It took a lot of sacrifices. And it took a lot of detours. But luckily, I get to live that dream every day now. What a blessing.
We’ve been really enjoying the amazing California weather (warm during the day, crisp high 50s at night), the beautiful Pacific Ocean, and watching Jet & Sophie chase a tennis ball from one side of the beach to the other over and over again. After work today, we decided to make the short drive down with the puppies, a couple blankets, a cooler with “dinner”, and watch them play, watch the sunset, and enjoy the views.
We brought along our own low carb “adult lunchables” as I like to call it - some sliced meats (pastrami + prosciutto), some sliced cheese (aged gouda + brie), some sliced cucumbers, tomatoes, macadamia nuts, and of course - just 2.6 net carbs and as you know by now my favorite low carb beer.

These pictures are 9 months apart, that still blows my mind and I’m so proud for how far I have come. I am happy about how I look, I am even happier about how I FEEL. I have heard comments about looking like I need to eat a cheeseburger, and all I have to say is okay! 😂🍔 I love cheeseburgers! But really, you’re damned if you do you’re damned if you don’t! I am happy with my body, I am happy with how I look and most importantly I am thrilled that I am healthy! Health is the most important thing to me when it comes to maintaining my weight now and I work hard to do this! I lived for years feeling the pains physically and mentally of being unhealthy so health will always come first in my journey. I remember the fears of obesity related illnesses, and wanting to better my life so I could live a long healthy life so I would be able to see my children grow. I am happy to report my BMI started at 42.8 and is now 20.8, which is healthy for my height of 5’2! Weight loss isn’t about just being “skinny” or image -> it’s about HEALTH! ❤️

I was SOOO excited when I lost those first 17 pounds! I remember taking these first set of weight loss pictures and feeling like a total babe. Look at me now! I'm so happy I stuck with it. Bacon wrapped shrimp😍

I put salt and pepper on the shrimp then wrapped each one in half a slice of bacon. Baked in the oven at 350 for 15 minutes then flipped them and continued baking until they were crispy 🙌🏻 Sauce is simply mayo, mustard, hot sauce and paprika mixed together. 🤤

Confidence really isn't something anyone can give you, someone can't just tell you your worth it and then you magically believe it, as much as I wish thats how it worked it isn't. Confidence is something you have to give to yourself. You have to realize how amazing you are. You have to know your own worth, because you are all beautiful and amazing in some way shape or form. Confidence is when you tell yourself, my opinion of myself matters more than everyone else's opinions of me, that you need to be the you that your moat happy with. I can't give you confidence, the only one that can is you. You, yes.. YOU, can tell yourself that you are worth it, because confidence is believing in yourself and not being afraid of what other might think. Pleasing others is something we always want to do, and there is nothing wrong with that, but change yourself for you. Dont listen to all the people that try to bring you down and hurt you. Everyone struggles with it, I myself dint even have perfect confidence, there is no one way we should be. You need to be happy with yourself. There is no way to control what other people do or say but you can change how you react to it.♥

🦐 Shrimp alfredo over a bed of broccoli. Legit don’t even miss the noodles with this dish .
Alfredo sauce:
1/2 stick of butter
1/2 cup heavy whipping cream
1/2 cup Parmesan cheese
Everything but the bagel seasoning .
Melt butter, then add in heavy cream and seasoning.. Cook until well mixed. Then add in Parmesan cheese and stir till melted. .
Shrimp was cooked in butter and Trader Joe’s onion salt few minutes each side. Placed over a bed of broccoli and topped with Alfredo sauce then topped off with extra parm cheese and some more Trader Joe’s onion salt. .

This is THRIVING after breast cancer - between 2018 to 2019 I went from an Overweight BMI to an Obese BMI to a NORMAL BMI!!!!! 🙌🏻🙌🏻🙌🏻
It disappoints me that it took a life threatening diagnosis for me to wake up and make my health a priority. Survival was not in my favor, HOWEVER, I am NOT READY TO DIE! I’ve got more living to do and I’m gonna do it!! But let me be clear, I never woke up to a 53 lb loss. This took an incredible amount of determination and discipline but I did it. If you know me well enough you know I do everything at 200% and losing pre and post chemo weight was no exception.
I will say I couldn’t have done this without my Oncology team, I look up to them so much. I wanted to make them proud of me - I looked forward to each appointment I had, I wanted to show them I was literally moving the needle. I couldn’t just beat cancer and go back to how I always lived NO WAY.
As this year comes to a close I am beyond proud of my resilience and strength I’ve put in ensuring this ISN’T my final chapter. 2020, we ready! 🙌🏻✨ # thrivingaftercancer

Bacon, Sausage and Brussel Sprouts

Heat oven to 400 degrees. Spread out Brussels sprouts, smoked sausage and bacon on sheet pan. Drizzle with oil, salt and pepper; toss to coat.
