process of making gamo croissants typically takes several days and involves several stages:

Day 1:

Make the dough: A basic dough is made with flour, yeast, sugar, salt, and milk. This is left to rest and rise.
Roll and fold the dough: The dough is then rolled out and a block of butter is placed on top. The dough is folded and rolled several times to create many layers of butter and dough, a technique known as laminating. The dough is then chilled.

Day 2:

Shape the croissants: The chilled dough is rolled out into a large rectangle and cut into triangular shapes. These are then rolled up from the wide end to create the crescent shape.
Proof the croissants: The shaped croissants are left to rise, or proof, until they have doubled in size.

Day 3:

Bake the croissants: The croissants are then baked in a hot oven until they are golden brown and crisp.
This multi-day process allows for the yeast to develop flavor and for the dough to properly rise and become light and flaky.
