Meal prep Thursday-
Friday- salad with onions, tomatoes, cucumber and ranch with candied bacon on the side.
Saturday- left over crack chicken. Cucumber, Greenpepper, red onion in dijon mustard dressing salad.
Sunday- salad with strawberries, left over ham cubed, cucumbers, onions, parm cheese and dijon dressing.
Monday- had extra chicken from the crack chicken I made so I saved for chicken wraps. I put lettuce, onion, mustard and mayo, mission low carb shells. I will have 2 of these.
Tuesday- More left over crack chicken and cucumber salad.
Wednesday- made up a lb of beef for freezing. I will make hamburger wraps with this. 2 of them. With the same fixings as my chicken wrap.
Thursday- My daughter wants pasta so I am going to make up meatsauce that I will use for low carb lasagna.
Dinner tonight. Fried ham steak and scrambled eggs with tomatoes, garlic, onions, and cheddar/parm cheese. Sautéed the onion, tomatoes, and garlic first. Delish!

Another dinner favorite. I tweek and add French fried onions... cause they are delish.
Okay welp I'm back from vacation! So today is meal prep day for my long work week. So before vacation I made meatballs for myself and the fam, chicken, and lasagna. I had left overs from those meals so i froze them. I try very hard to make extra of any meal I cook for the fam on my days off so that I can use them for lunches on my work weeks. So this will take care of 4 days of 7. I have 2 lbs of beef cooking that I will season with garlic, salt, and pepper and will bag up into single servings. So when my left overs are out I will take out a bag of beef and season as needed. l will make tacos 1 day , big mac wraps 1 day, and then just a maid rite (I season with part of a ranch packet mix and add a little water and flour to thicken) wrap another day. I always plan to have stuff for quick salads as a side if need be. My favorite it lettuce, red onion, strawberries, bacon bits, parm cheese, and the apple cider vinegar dressing I posted on here. So that is my whole meal plan for the week. We use a chalk board marker and write our meal prep on the side of the fridge. We started this one today. The girls meals are also on this calender above the line. We save so much more money this way as well because we buy groceries based off of what we already have in the house.
Another favorite! Make lasagna as you normally would but use low carb shells in place of your noodles and Raos as your sauce. I baked it at 425° for like 40 minutes. Just until the cheese on top is done.
Another whole fam favorite. I made extra to freeze for another meal on a day I work.
Big mac bowls are by far one of my families favorite meals! I make extra sauce just to have to put on other things.
Dinner tonight I wanted to show the difference between my kids plates and my plate. Their portion of veggies and fruit (no apples for me) is alot larger and I eat more protein. Dan-os seasoning is very good. :) I really only eat one large meal a day. And never after 5. I will have my protein coffee in the morning. Then my big meal and one snack at night. LOTS OF WATER. I drink about a half gallon a day.
I make lots of salads. These dressings are delish!
One of my favorite sweet tooth fixes! Chia seed pudding. I usually just use one packet of truvia and let it sit in the fridge for about an hour before eating. Sometimes I will add a few berries. Also sometimes constipation can happen during keto because we tend to over do the cheese. This will help remedy that problem.
Be careful with the "keto" stuff that's on the market. Alot of it is a money grab! BUT if you need a sweet treat these are delish! I am not a baker so alot of the make it yourself stuff I simply just won't do it. These I would never have more then one in a day and usually the Bars I eat half and save the other half. Also a warning if you buy the store bought keto brownie mixes you WILL go to the bathroom! 🤣 Do not over do them.

Morning time. Start my day with a protein shake. I use it as the creamer in my iced coffee every morning. The syrup just add a bit more sweetness and the mct oil. I follow it with lots of vitamins. Be careful no gummies they all have carbs.
Hello Amanda here! I have had success with the keto low carb lifestyle over the past 6 months and I get the same question alot. What do I eat in a day? So I thought this would be a place that I can post my meal plan for the week and some awesome recipes that I love and alot of them my kids also love. I do meal prep once every other week usually Thursdays so I will share how I meal prep as well! I will be starting back strong with Low carb after vacation! So for now I'm just gonna share some things that have been working for me. I don't want to loose momentum and I know some of you are looking for momentum so maybe we can help eachother. Please share anything that u are loving and is working for you as well I love new ideas. I feel like keto fails people who don't change it up enough. Eating to much of the same foods for to long will burn you out. 🥰🥰🥰
