Hey friends! I haven’t posted on this page in a good long while but I’m on a journey and want to show you how it goes.

To backtrack a little, I’m a certified holistic nutritionist and work as an operations manager of a year round farmers market. I’ve always enjoyed “healthy food” (ie fruits, veggies, nuts, seeds, beans, etc.) and have prioritized them the last couple of years. I have also eaten lots of fast food as it was convenient while traveling almost every weekend, and I’m just lazy sometimes.

In July of 2023, I went to a new doctor who had me do a food sensitivity test (based on DNA), and I had several sensitivities, the biggest one being all dairy. I started an elimination diet and lasted a couple of weeks but gave up because I was going to Europe in September and wouldn’t stick to the diet there (my excuse lol). Recently I’ve had some horrible stomach issues and skin rashes so I went back to that doctor. She’s doing some testing but also wants me to actually do the elimination diet this time. For at least a month, cut out all of my food sensitivities, and then slowly introduce them back in and pay attention to any reactions I have.

So here we are! Day 2 of the elimination diet while also trying to focus on the things that my body loves. Radishes & rainbow chard cooked in avocado oil with s&p, 3 pasture raised eggs cooked in avocado oil with s&p, and a kiwi. It’s delicious, too!!

I’ve got some very exciting news to share! As most of you know, I am passionate about local food and nutrition, and am a Certified Holistic Nutritionist. I have been working with seniors for the last 7 years, making my way to my current position as the Medicare Specialist at Egyptian Area Agency on Aging. I recently accepted the opportunity to change my career path and start working with LEAF Food Hub as the Operations Manager. Although I am sad to leave Egyptian, I am beyond excited for my new journey with LEAF to make healthy food more accessible to people throughout Southern Illinois. 👩‍🌾❤️

Are you kidding me right now…. Homemade chicken bone broth aka liquid gold 🤩

Highly recommend for gut health, immune support, bone health, and overall wellness. The stomach is now known as the “second brain”, and it’s surrounded by the immune system! Pretty crazy that every system in your body is literally connected.

Love a good mason jar salad 😍🌈

Add 2-3 Tbsp olive oil, lemon or lime juice, and seasonings of your choice (I used lime juice, cumin, garlic salt and Flora Bay Farm] green garden seasoning).

Next add any veggies that could be “pickled” (I used cucumber, Flora Bay Farm] French radishes, sweet peppers, Jill Rendleman] green onions, and mushrooms)

After that, add any beans, legumes, grains, or corn that you’d like (I chose black beans).

Lastly, add any greens you prefer (I used Jill Rendleman] baby green lettuce and cilantro microgreens).

Just shake it up and enjoy!

Huevos Rancheros for brunch today 🍳

Butternut squash soup & grilled cheese w/ bacon 🤤

1. Take a large butternut squash, peel and slice it into large chunks
2. Quarter an onion
3. Put them on a pan, drizzle rosemary infused olive oil from LEAF Food Hub] (or regular olive oil) on top and roast them in the oven on 400 degrees for about 25 mins or until soft
4. Mince (however much you prefer) garlic and ginger
5. Once the butternut squash and onions are done, blend them well in a blender.
6. Put rosemary infused olive oil (or regular olive oil) into a pot, add the garlic and ginger until fragrant.
7. Add the blended squash and onion, then add 4 cups (or more depending on what consistency you want) of vegetable broth or broth of your choice.
8. Season with salt, pepper, cayenne, smoked paprika, Italian seasoning, onion powder, and garlic powder. (If you have a mushroom/rosemary salt and herbs de Flora Bay seasoning, that is what I used as well - you can find these at LEAF Food Hub])

Fill a glass with ice, add 1 shot of vodka or whiskey, 1 shot of apple butter ginger shrub, a splash of apple butter hickory syrup, and top it off with club soda. SO YUM!

Anyone else OBSESSED with sauerkraut??? I literally eat it straight out of the jar on a daily basis 😂

Sauerkraut is fermented cabbage which promotes the growth of good bacteria in your gut! It can also help lower bad cholesterol levels, is high in fiber, and high in antioxidants (cancer fighters)!

My go-to ✨basic✨ brunch

Avocado toast, everything bagel seasoning and microgreens. These are radish microgreens that I stack right on top of the avocados. Radishes are (surprisingly to me) in the family of cruciferous vegetables, like broccoli, kale, and cauliflower. They may have even more anti-cancer properties than broccoli sprouts, and are a great source of folate, vitamin B6 and vitamin C!

So grab some radish microgreens from or and make yourself some easy avocado toast! 😋
