Enjoy a delicious breakfast with this Salmon Toast, Egg Benedict.

Ingredients:
3 Tbsp. chives or any choice of garnishing
2 Large eggs
3 Egg yolks
2 Tbsp. (1/4 stick) unsalted butter
Freshly ground black pepper
2 large or small slices sourdough or whole wheat bread
1 Tbsp. fresh lemon juice
1 Small Tomato
4 oz. Thinly sliced smoked salmon

To poach the egg, fill up a large pan with 3 or 4 inches of water. Heat up the pan on high heat. Turn the heat down to a simmer when bubbles start to rise up. Add one teaspoon of vinegar and swirl the eggs in the pan for 3-4 mins until the desired texture.

For the hollandaise sauce, stir the egg, and lemon juice mixture for 30 seconds. Melt the butter on a medium pan until it has liquified. Slowly add butter into the egg/lemon juice mixture until the butter is gone.

Toast the bread until each side is a golden crisp. Layer on the salmon, poached egg, tomato, and drizzle with the hollandaise sauce. Top it off with garnishing and black pepper for the finishing touches, and enjoy!
