Oops - Forgot to take the photo before we took a bite! Reindeer meat is a traditional dish for the Norwegians. We decided to sample a pizza with reindeer meat and a reindeer sausage. Both were delicious although I found the sausage casing a bit “tough”. Since Norway is not know for its wine - it was a delicious French wine tonight.

It’s not normal for us to post non food or gardening posts - but we are on an adventure to learn about Norwegian culture and food. During this adventure we were blessed to experience an aurora. Lots more info to come.

A simple pork loin roast. Layer the bottom of your oven proof dish with sliced potatoes, cut carrots in half lengthwise and layer on top. Wrap loin with a couple slices of bacon and brown in frypan with a drizzle of oil. Roughly chop and sauté fresh garlic cloves. Place on top of vegetables. Make a cup of chicken stock using 1/2 c water and 1/2 c dry white wine. Pour over top. Cover in foil and roast for 30 minutes, uncover and cook additional 20 minutes. Company stopped over last evening and stayed for dinner. Fixed our simple Mushroom Cheese Stuffed Chicken Thighs, served with fresh from the garden boiled potatoes along with some fresh Broad Beans.
