Confession, my pot has been turn down. I fell sick, then birthday celebrations (thankfully I was better in time), then catching up to work, then my daughter started school and I just haven’t made my way back the way I need to. That said, Roland has been holding down the ship, including doing these home made Lollies for our daughter. Not as much sugar, we know exactly what is inside and though I’m not a chocolate or milk fan I gave them a taste and it is 👌
Here is something I never thought I would like in a million years that Roland introduced me to!

I’ve been trying a lot of “one day only” meals recently so as to not have left overs for the next two weeks. What that looked like for me is trying “quicker” meals - sandwiches and wraps top that list of grab and goes! (I must admit we miss hot food though)
I’m not really a turkey fan (though perhaps if I get some really turkey I can shred or slice it could be an option) but what I did this time is make it a chicken sandwich instead. I cut chicken breast in a flat cut still and lightly seasoned before giving it a quick heat to cook it, then added some of my favs like lettuce, tomato, bacon, onion, cheese!
Next time I’ll press this out to make a toastie!
This could also easily be an egg toastie too!
I’ve always been a lover of oats, it brings back the nostalgia of my dad’s cooking this on weekends for breakfast. This recipe had to be included in my cook book. Recently, I have tried adding chia seeds to them! Who would have thought to add this power food to my oats! It adds a different flavour, but so don’t dislike it and happy to get some extra goodness in!
First attempt at trying to make lunch “fun” for Lauren. Green cheese paste cut in the shape of a car with some fruit and some additional protein. Please send all ideas as I embark on this journey. is around the corner

Sherpherd’s Pie has to be one of my favorite dishes for so long, usually I buy minced meat for the filling. This time we purchased whole pieces of beef and lamb and grind it ourselves!
Not only did we get way more meat that we needed, but we knew exactly the cut of meat inside! The mix is less fatty and makes a ‘heavier’ more filling meal!
I’m just in love with this version of Sherpherd’s pie! Give it a try and tell me what you think of the difference in taste! Would you be team minced meat or team grind it yourself?

This all started from an idea 15 years ago, to capture the essence of my favorite meals by my dad. It’s a reflection of food I grew up eating in Barbados.
Ultimately this was a labour of love for him, I wanted to capture his recipes so I can pass them on generation to generation ❤️.

I don’t eat pancakes too often, but they are such a comfort food and super easy to prepare.
It’s one of my favorite home cooked meals.
Here’s my twist/ the way I like them best.
💥First they must be miniature pancakes for me.
💥I also make them extra crispy on the outside but super soft on the inside
If you want to give it a try, here is the recipe:
✨1 ½ cups all-purpose flour (can sub for oat flour)
✨¼ teaspoon salt
✨3 ½ teaspoons baking powder
✨1 ¼ cups milk
✨3 tablespoons butter, melted
✨1 egg
✨ Agave / Maple syrup or your sweetener of choice to taste on top
✨I add some blueberries to taste to mine inside and as a side dish but not necessary
You will notice sugar is missing, but for those with the extra sweet tooth you can add:
✨1 tablespoon white sugar
I find I don’t need it and the sweetener on top give me the fix of sugar I need to pull them together plus the blueberries
For miniature pancakes use a table spoon for sizing or a small scoop.

Today home made coconut and chia bread with quinoa flour. It’s packed with tons of other nutrients. My husband's version to curb his sweet bread indulgence.

Some pan roasted bread, with fry egg, mashed avocado mix, pan seared tomatoes, freshly squeezed juice, tea and fresh fruits because why not get some extra vitamins!
It’s such a beautiful Saturday, I decided I’ll make breakfast for the family! This is how it started.
Life is so unpredictable in both god and bad ways, this time around in a good way! As many of you know I recently welcomed by new bundle of joy and though I would like to say I had it all covered my other love (cooking) once again fell behind!
But food is life for me, at first my dad helped a lot and that hurdle he got me over I can’t that him enough! Now I’m in phrase 2 and now / has kicked in!
Now I’m finding my new rhythm I found a few moments to snap these shots of my dessert.
