Today’s Texas Recipe! 😋 😋 😋
Spicy Cowboy Queso Dip
INGREDIENTS
1 lb ground beef
1/2 lb chorizo sausage
1 white onion, finely chopped
1 red bell pepper, diced
2 jalapeños, seeded and finely chopped
16 oz Velveeta cheese, cubed
1 cup sharp cheddar cheese, shredded
1 cup Monterey Jack cheese, shredded
1 (10 oz) can diced tomatoes with green chiles, undrained
1/2 cup milk
1/4 cup fresh cilantro, chopped
1 tsp cumin
black beans
Salt and pepper to taste
INSTRUCTIONS
In a large skillet over medium heat, brown the ground beef and chorizo until fully cooked, about 8 minutes; drain excess grease.
Add chopped onion, red bell pepper, and jalapeños to the skillet. Cook for 5 minutes until vegetables are softened.
Reduce heat to low and add all cheeses, diced tomatoes with chiles, and milk. Stir continuously until the cheese is completely melted and the mixture is smooth.
Season with cumin, salt, and pepper. Stir in chopped cilantro just before serving.

Did Y'all Know?This is William Levi Buck Taylor, the original "King of the Cowboys." Taylor was born in Fredericksburg in 1857. He was orphaned when his father was killed in the Civil War. At age 14, he became a cowhand and worked all over the west, eventually meeting up with Buffalo Bill Cody, who was taken by Taylor's looks and his height: He stood 6'4" tall, a giant in those times.
Cody decided to make Taylor one of the stars of his famous traveling show and invented a whole backstory for him. Taylor died in 1924.

Today’s Texas Recipe! 😋 😋 😋
Cajun pasta be Poppin
Ingredients
8 oz. Shrimp peeled and deveined
2 Large chicken breasts cut into pieces
2 Links of andouille sausage cut into slices
6 Tbsp. Butter divided
3 Tbsp. Cajun seasoning divided
1 tsp Ground thyme
1 Onion chopped
1 Bell pepper chopped
1 lb. Linguini cooked and drained
⅓ C. Of the pasta cooking liquid reserved
1 C. Heavy whipping cream
1 Can Diced tomatoes
2 tsp. Minced garlic
Salt and pepper to taste
Instructions
Heat 2 Tbsp. butter in a skillet over medium high heat and saute the shrimp with 1 Tbsp cajun seasoning until cooked through. Remove and set aside.
Add the sausage to the skillet and saute until browned. Remove and set aside.
Place 2 Tbsp butter into the skillet and saute the chicken pieces with 1 Tbsp of cajun seasoning until cooked through. Remove and set aside.
Put the remaining 2 Tbsp of butter into the skillet and saute the onions and peppers over medium heat until softened.
Stir in the garlic and reserved cooking liquid. Saute for 30 seconds.
Mix in the heavy whipping cream, diced tomatoes and thyme as well as salt and pepper to taste. Simmer until the sauce thickens.
Add the meat back to the skillet as well as the linguini noodles. Stir to combine well and serve.
