Ingredients for marinate:
-6 chicken drumsticks
-1 stem curry leaves
-½ tsp sugar
-1 tsp salt
-½ tsp pepper
-½ tsp chili powder
Ingredients for spicy coating:
-350 g all purpose flour
-¼ tsp baking powder
-1 ½ tsp salt
-3 tsp pepper
-3 tsp chili powder
-3 tsp sesame seed
Other ingredient:
-2 eggs
Instructions:
1. Finely chop fresh curry leaves.
2. Add chopped curry leaves, ½ tsp sugar, 1 tsp salt, ½ tsp pepper and ½ tsp chili powder, marinate for at least 15 minutes.
3. Mix 350g all-purpose flour with ¼ tsp baking powder, 1 ½ tsp salt, 3 tsp pepper, 3 tsp chili powder and 3 tsp sesame seed, whisk and make sure all ingredients is well distributed.
4. Crack and fully beat 2 eggs.
5. Dredge drumstick in flour mixture, fully coat chicken drumstick with flour, one at a time.
6. Dip drumstick in the egg and coat well.
7. Back to flour mixture to give another coat of flour, set aside for 10 minutes.
8. Heat 1 liter of oil to 160°C-170°C(320°F-340°F).
9. Medium-low heat(or 160°C), deep fried for about 10 mins until golden brown, set aside.
10. Raise oil temperature to 180°C, double fried for 1 minutes.
11. Tip to non-greasy and crispy fried chicken is to double-fried for 1 minute.

⭐ 𝐒𝐚𝐥𝐭 𝐚𝐧𝐝 𝐏𝐞𝐩𝐩𝐞𝐫 𝐒𝐡𝐫𝐢𝐦𝐩 ⭐
Ingredients
For the salt & pepper seasoning (Jiao Yan)
-1 tsp whole Sichuan pepper
-½ star anise, break into small pieces and remove the brown seeds
-½ tsp sesame seeds
-¼ tsp fennel seeds
-4 tsp salt
-For frying the shrimp
-300 g shell-on shrimp (or prawns)
-3 tbsp corn starch, or tapioca starch
Neutral cooking oil, for deep or shallow frying
You also need
-2 tbsp minced shallots, or onion
-2 tbsp minced red chili pepper
-2 tbsp minced green chili pepper
-2 tbsp minced garlic
-1 tbsp minced ginger
-1 stalk scallions, finely chopped
Instructions
Make the salt & pepper seasoning
1. Put Sichuan pepper, star anise, sesame seeds, fennel seeds and salt into a pan. Toast over low heat while stirring from time to time.
2. Once the salt darkens slightly and the spices become very fragrant, remove from the heat then grind in a mortar or a spice grinder. Set aside.
Prepare the shrimp
1. Rinse the shrimp under running water. Use kitchen paper to pat dry.
2. Add corn starch. Gently stir to have all the shrimp evenly coated with the starch.
Fry the shrimp (two ways)
⭐Option 1 DEEP FRYING: Pour oil into a wok over high heat (I use about 800ml). When it reaches 375°F/190°C, gently slide in the shrimp. Use chopsticks to separate if they stick together. Take out when they look pink and crispy. It took me about 90 seconds. Depending on the size of your shrimp, adjust if necessary.
⭐Option 2 SHALLOW FRYING: Pour oil into a pan over high heat (enough to cover half of the shrimp when laid flat). When it starts to smoke, place in the shrimp (Fry in two batches if necessary to avoid overlapping). Flip over to fry the other side when the first side turns pink and crispy. Please be aware that the oil will splash quite a bit so place a splatter screen over the pan if available. Alternatively, you can hold a lid over the pan (but do not cover completely) to block splashing.
Combine the dish
1. Pour the oil out of the wok/pan leaving just a thin layer on the surface. Add shallots, pepper, garlic and ginger. Fry over medium heat for about 1 min.
2. Put in the fried shrimp and ½ tsp of the salt & pepper seasoning (or to taste). Toss well to season evenly then garnish with scallions. 3. Dish out and serve immediately.

⭐𝐒𝐰𝐞𝐞𝐭 𝐚𝐧𝐝 𝐒𝐨𝐮𝐫 𝐂𝐡𝐢𝐜𝐤𝐞𝐧 ⭐
Ingredients:
- 2 tbs tomato sauce
- 2 tbs chili sauce
- 2 ts soya sauce
- Handful green, red and yellow capsicums
- 1 yellow onion
- 4 cloves garlic chopped
- 1 tbs chopped ginger
- 300 grams chicken breast or thigh cut into small pieces.
- 1 ts white pepper
- Some salt
- 1 egg
- 2 ts corn flour
- 1 tbs light soya sauce
Instructions :
1. Marinate chicken for at least 30 mins.
2. Before frying, coat with more corn flour.
3. Heat up oil and deep fry.
4. Fry till chickens turn golden. Use medium flame. This takes 5-6 mins
5. Strain chicken from oil.
6. Heat up the same oil and add in chicken back into the oil and fry again for another 30 seconds. This is called double frying. Double frying allow chicken to stay crispy and chicken wont turn soggy.
7. Keep fried chicken aside.
8. In a another pan, heat up 2 tbs oil, add in garlic, ginger, tomato sauce and chili sauce.
9. Saute well for 1 minute.
10. Add in light soya sauce. Give it a stir.
11. Add in 1/4 cup hot water.
12. Season with sugar.
13. Add in all vege. Mix well.
14. Add in 1/2 ts white vinegar.
15. Add in fried chicken and OFF THE HEAT.
16. Give it a good stir and we are done.
17. Ready to serve !

-Mackerel fish
INSTRUCTIONS
1. Clean the mackerel fish and cut a deep slit along the backbone. Put this aside and prepare the kaffir lime leaves by cutting them into thin strips.
2. Blend all the ingredients in A and put aside.
3. Pour oil into a heated pan and add in the blended ingredients. Then, add some sugar and salt according to your taste. On low heat, stir constantly until aromatic and becomes a paste.
4. Add in the kaffir lime leaves and mix well.
5. Using a spoon, stuff the sambal paste into the slit on the fish. Then, fill the pan with oil and deep fry the fish until it is cooked.
