I have learned so much about myself.
I said I would create a long sappy post but I need to nap and finish today’s reading to get ready for tonight’s celebration (9pm CST since I started jan 4 EST 😝😝😝)

And you may not be able to tell from my before and after photos or even from the scale but I DEFINITELY feel so much stronger and so much more in tune with myself.... and that’s exactly what I was hoping for.

75 hard is hard as hell but I’m almost done and you can count on a long sappy post on March 19 lol. Almost there!
Keto PB & J Cookies
(This recipe makes A LOT of cookies so you can half it if you want)
2 sticks unsalted butter, softened
1 cup lakanto sugar
1 egg beaten
2 tsp vanilla extract
1/4 tsp salt
1 3/4 cup of low carb flour (I got mine from netrition.com) .. can use almond flour but not coconut
1 cup peanut butter powder
1/2 tsp baking soda
1/2 sugar free strawberry jelly
Preheat oven to 350 degrees.
Using an electric mixer, mix butter and sugar for 5 minutes until light & fluffy.
Add egg and vanilla extract and mix til combined.
In a separate bowl mix low carb flour, peanut powder, baking soda, and salt. Then add to wet ingredients and mix thoroughly.
Make small balls and press down with thumb to create little craters. Fill craters with 1/2 tsp of jelly each.
Bake for 18-20 min or until almost golden brown. Cool for ~5 min (this is important if you want your cookies to crisp up!!)
