This delicate, multi-layered, mousse-based cake is made from a chocolate biscuit, Bailey’s cream, chocolate mousse, caramel, and hazelnuts (for a bit of crunch), all topped with a shiny, smooth hazelnut praline glaze.
If you like complementary flavors and unique textural contrasts on your plate, this cake is for you. Ideal for celebrations or sharing with friends and family.
Today, celebrate Bastille Day with some Paris-Brest!
This classic French dessert is shaped like a wheel to commemorate the Paris-Brest-Paris bicycle race. It’s made of choux pastry and filled with praline cream.
Don’t worry, we have also made some Éclair Paris-Brest.

Celebrate Mom with this delicious and colorful Peach Mousse Cake. Made from delicate peach mousse, peach compote, vanilla crème brûlée, moelleux sponge, crunchy pistachio streusel, and delicately sprayed with chocolate velour.
We wanted to create a cake that can be loved by the whole family—colorful, attractive, and delicate. So, like peaches, we’ve made this cake as a very limited edition. Why? Because that’s the end of peach season, so we won’t be able to make it soon. 🍑
How to order? Pre-order online and select Sunday, May 12th, on our calendar for pickup. This cake is only available for pickup on Sunday, May 12th, for Mother’s Day.

Our Story
Eclair at the Bay is a new unique homemade pastry business entirely dedicated to the creation of contemporary eclairs. Located in the beautiful town of Byron Bay, we are making delicious eclairs and baked goods in a quaint and relaxing environment. We are aiming at the highest quality possible with tradition and authenticity in mind, sourcing fresh and local ingredients.
This project is the creation of Pastry Chef Pavel.His passion for pastry began when he started working in Michelin Star restaurants in London. Rigor, consistency and creativity were the key words of those years of experiences, to learn how to make desserts that are not only beautiful but delicious too. After severals years of working for celebrity chefs and Michelin star restaurants around the world he decided to bring this knowledge to the bay and create something unique, elegant and tasty.
