Great effort on this one guys! I enjoyed a glass of the Wild Fermented - Muscat Blanc and must say I found it very interesting! Definitely would like to have a Sushi combo 🍱 platter to combine with.

Wild Fermented’ is produced from grapes of the muscat blanc à petits grains variety, collected from an exclusively dry vineyard with limestone and clay substrate.
A product or organic cultivation and viticulture.

Serving temperature 8-12 ° C.

Enjoy it with mediterranean dishes, all kinds of fish, sushi, exquisite with Nikkei cuisine.

Chatziioannou Winery is targeting primarily on the production of wines of superior quality. Based on the high quality of organic grapes we have the ability to vinify avoiding to implement industrial protocols, thus basing our philosophy of vinification to “Nature makes it Better”. The production and the selection of grapes is based on carefully selected vineyards owned by the winery.

The minimum age of these vineyards is 20 years, and all of them are anhydrous. Paying our deepest respect to mother nature all vineyards are cultivated under certified organic rules and the winemaking techniques are in complete accordance with the above stated philosophy. Concluding, it is important to mention that in order to secure high standards of quality, the annual number of bottles produced is confirmed and numbered.

Vinification

Each variety is vinified separately in a “classic” way. After the end of alcoholic and malolactic fermentation, the wines are transferred in oak barrels for a year, during which they are racked and blended according to their evolution.

Description

Deep ruby color, complex aroma that combines spicy notes with mature and dried red fruits like red current and cassis. Ripe dried red currants and cassis on the palate, full-bodied, with ripe and integrated tannins, excellent balance with an aromatic and lingering aftertaste at the end.

Variety Composition:
Malagouzia 100%.

Region / Location / Vineyard:
Amyndeon plateau. Amyndeon viticulture zone. North-western Macedonia. "Turtles" sub-region. 670m altitude, with north-western exposure, facing mount Voras. 69ha of Linear, privately owned vineyard situated at an altitude of 620-710m.

Vinification Method:
Destemming, no crushing, cold soak - skin contact under controlled conditions, alcoholic fermentation at gradual increasing temperatures, maintenance of wine "sur lies" for two months with regular stirring.

Tasting Characteristics:
Brilliantly, light yellow in color with greenish tints. Strong and lively nose, typical Malagouzia, suggesting rose petal with floral aromas and sweet spices, melon, litchi with a note of honeysuckle. Round and mellow on the palate, fat but balanced, high in alcohol with plenty of finesse. Well structured, reminding the nose aromas with a hint of rosemary. A richly textured wine with superb length and balance. A classy wine with long finish and persistent aromas.

Harmony:
Excellently married with green salads, baked vegetables, pasta, low fat fishes and a wide variety of Greek sea food "Meze".

Best served at 11ο C (51,8 ο F).

Our 14 acres vineyards are cultivated with great care, and enthusiasm that leads, our 3rd generation family, to constantly research and experiment with Greek and foreign varieties. New technological advances blend well with tradition throughout vine growing and vinification processes.

For over than half century, our wine philosophy focuses on the production of high quality wine that is bound by the ecosystem of mount Ataviros and expresses the uniqueness of the natural surroundings. To achieve this, the cultivation and vinification are handled with care, by not only using knowledge and experience but also by merging tradition with technology.
