"Dhi bengan"
All you need for this recipe
1) eggplant / baigan
2) dahi
3) salt
4) sugar
5) cumin powder
6) chilli powder
7) chat masala
8) mustard seeds
9) dry red chilli
10) curry leaves
11) hing
12) oil
Procedure
1) First marinate the eggplant/ baigan with salt and red chilli powder, and fry it in oil.
2) meanwhile mix salt, sugar, cumin powder, chat masala, red chilli Powder with curd.
3) pour the fried eggplant/ baigan in the mixed curd.
4) for tempering, heat a little oil, add dry red chilli, mustard seeds, curry leaves and a pinch of hing and pour it on the mixture.
5) now, your dahi baigan/ ଦହି ବାଇଗଣ is ready 👍

Today on my plate -
" Beetroot veggies wrap" 🌯
Recipe:-
All you need for dough 👇
1) wheat flour
2) grated beetroot
3) salt
4) water
▪️ "Mix the above ingredients to make a soft dough"
All you need for stuffing
1) onion
2) capsicum
3) carrot
4) cabbage
5) corn
6) paneer
7) garlic
8) coriander leaves
9) black pepper
10) oregano
11) chili flakes
12) oil
13) mayonnaise
▪️Heat the pan, and put some oil
▪️Then add finely chopped garlic and saute for 1mint
▪️Then add all the veggies together with black pepper, salt, oregano and chilli flakes.
▪️Saute it for 5-10mints.
▪️ Meanwhile make your wraps.
▪️ Spread some Mayo on the wrap and then veggies and wrap it.
▪️ Enjoy your day 😊💞

Not so regular post, but this is so close to my dream, passion and love for food and cooking. This was my 2nd attempt for the audition of "MasterChef India". For the first time i had given the audition last year and failed. Unfortunately, this year, i also didn't get selected. But I am very happy and blessed that I am surrounded with such lovely people, who keep motivating and encouraging me. So that I feel so empowered whenever I fall down, i stand up with full on energy. So, better luck next time. 🙂
