Apologies I haven’t been quite so active on here lately. I’m hoping to start sharing more recipes I’ve soon. I’ve changed my name from cleanleanbakes to Fuelled Wellbeing as I’ve done this over on my Instagram page as well if you want to find me on there 🙂

Totally loving warm baked oats right now! Especially apple baked oats with yoghurt figs, maple syrup and cinnamon 😋
Here’s the recipe:
80g Gluten free Oats
2 Tbsp Flaxseed (optional)
25g Protein - I used Apple Crumble and Custard Whey
Tsp Baking Powder
Tsp Mixed Spice
Pinch of Salt
1 Egg
4 Tbsp Egg Whites or Almond Milk
Tbsp Maple Syrup
A few vanilla flavour drops or ½ Tsp Vanilla Extract
80g apple puree or mashed banana
Toppings:
Handful of chopped Walnuts
½ Sliced Apple
Instructions
1️⃣Preheat the oven to 180oc
2️⃣Spray an oven proof dish with a bit of oil
3️⃣Combine all the dry ingredients in one bowl and then all the wet in another bowl before adding the wet ingredients to the dry ingredients
4️⃣Pour the mixture into your dish and then sprinkle with chopped walnuts and sliced apple
5️⃣Place in the oven for 25 minutes
6️⃣Serve warm with yoghurt and a sprinkling of cinnamon
This week has been a slightly slower week at work for me as with it being half term I’m not going into my special schools which gives me time to catch up on all the admin! It was def needed ☺️

Figs and Pumpkin is a combo 😍😋
I thought I’d seen the last of figs but found some at a market last week and they went so well topped on this vegan chocolate pumpkin smoothie 😀
Here’s the recipe for the smoothie:
1/2 cup frozen cauliflower (pre steamed)
1 frozen banana
Handful frozen berries
Scoop of chocolate caramel whey or chocolate vegan protein
Tbsp Cacao Powder
Tbsp Peanut Butter powder
toffee drops (optional)
Heaped Tbsp pumpkin purée
Tsp pumpkin spice
150ml Almond Milk + extra water if needed!
Layered up with figs, berries, granola and choc sauce in my bowl ❤️

I feel I’m ending Pumpkin Season (almost ending I have one more left I think) with a bang with these healthy satisfying Pumpkin Oat Breakfast Bars. A super quick and easy one bowl recipe that is Vegan, Gluten Free, High in Protein and makes a great grab and go breakfast! If you saw my stories last week you’ll know I was having about three of these bars as a post workout breakfast (my second breakfast of the day) so yummm!
I have made both a vegan and non vegan version therefore I include both options in the recipe. It’s simply a case of swapping out eggs for flax eggs and whey protein for vegan protein!
You’ll need:
🎃165g (2 cups) Gluten Free Rolled Oats
🎃50g (1/2 cup_ oat flour (blended oats)
🎃50g Cookies and Cream Flavour Protein (or flavour of your choice)
🎃1½ tsp pumpkin pie spice
🎃1 tsp baking powder
🎃½ tsp sea salt
🎃270g (1 cup) pumpkin puree
🎃250ml (1¼ cup) almond milk or other milk of preference
🎃2 eggs or flax eggs
🎃3 Tbsp maple syrup
🎃2 tbsp sugar- I used zero calorie sugar or coconut sugar
Optional toppings; h**p seeds and cacao nibs as well as chopped almonds!
It’s pretty much a case of combining it all and placing it in the oven but the full recipe is on my blog, linked in bio and stories!
