Lime pickle, a tangy condiment, is traditionally preserved in Sri Lankan style by sun-drying limes with a mixture of salt, spices, and vinegar. My mother prepares lime pickles when limes are inexpensive, and during times when limes are pricey, she cleverly adds lime pickle to coconut sambal instead of lime juice.
