Tried Spaghetti Carbonara for the first time (not traditional, but close-ish) and it was a winner. What are some of your favorite noodle dishes? Extra points for spaghetti pasta suggestions π₯.

Miso Butter Green Beans, folks! I taught these in a Holiday Sides cooking class and made them for Thanksgiving this year. They were a crowd favorite, so thought I would share the recipe. They would make a great addition to any holiday meals you have coming up in December π.
Serves 6 to 8
Total time: 35 minutes
2 pounds green beans, trimmed
6 quarts water
1 tablespoon + 1 teaspoon kosher salt
2 tablespoons unsalted (room temp) butter
2 tablespoons yellow miso
2 tablespoons mirin
2 tablespoons soup stock
1 tablespoon high heat oil
1 to 2 tablespoons sesame seeds (optional)
1.) Blanch the green beans. Boil the 6 quarts water with 1 tablespoon salt. Add beans and boil for 2 minutes then strain and put into an ice bath (bowl of ice water) to stop them from cooking further. Remove from the ice bath and set aside.
2.) In a bowl, whisk together the butter, miso, mirin and soup stock. Set aside.
3.) Heat a large skillet (cast iron or carbon steel) on medium high heat, add the high heat oil followed by the green beans. Sprinkle with remaining teaspoon of salt. Stir to combine. Cook, stirring often until the beans are heated through and lightly browned, then turn the heat to low.
4.) Add the miso butter and toss until evenly combined. Remove from the heat. Serve warm with a sprinkle of sesame seeds.

I finally got around to making shakshuka at home with what I had on hand after being inspired by a friend (thanks, Kenz π). This has been on my list for a loooooong time and not gonna lie, wish I had tried it sooner. Rich tomato sauce stewed with peppers, onions, cumin, paprika, cayenne and feta; baked off with eggs and served with grilled bread to slop it all up. Throw some fresh herbs on there and you have yourself a proper meal anytime of day.
I am still waiting for millet to be a shiny star in the food world. After quinoa being in the limelight for years, I got bored with it and was delighted to find this nutty ancient grain. It cooks similarly to quinoa and can be used in all the same ways. Check out our video for more info!

What's your favorite bean? I love all beans, but my new fave is the cranberry bean. I used a Brothy Beans recipe by with these little beauts and served them as she did over a crusty piece of grilled bread with sauteed greens, a soft boiled egg and fresh parm. Sometimes chocolate chip cookies are the only answer. The question doesn't even matter.
This easy, peasy veggie fried rice is becoming a new fave. Ginger, onions, carrot, bok choy and peas? Yes. Please.
2 tabs high heat oil
1 onion, diced
1 inch ginger, grated
2 cloves garlic, minced
1 small head box chop, chopped
2 carrots, cut in half moons
2 teaspoons garlic salt
1/2 teaspoon kosher salt
1 cup frozen peas
2 cups cooked and chilled long grain brown rice
1 tablespoon toasted sesame oil
2 tablespoons mirin
2 tablespoons tamari
1 tablespoon rice vinegar
4 to 6 eggs, scrambled
2 tablespoons sesame seeds
1.) Sautee onion, ginger, carrot, garlic, and bok choy in the high heat oil for a few minutes on medium-high heat with garlic salt and salt, until veggies ate soft but still retain a crunch.
2.) Add the peas and rice. Stir in well and continue stirring until rice is heated through.
3.) Add sesame oil, mirin, rice vinegar and tamari. Taste and adjust seasonings as needed.
4.) Fold in the scrambled eggs and serve with sesame seeds.
*Also yummy served over a bed of arugula and topped with pickled radish.

Our last video was on how to cut an onion. This week we would like to show you how to caramelize that onion. These sweet, jammy, lil' pieces of oniony goodness are one of my favorite things to have on hand. Spread them on crackers with cheese, add them to an avocado toast or sandwich, stir them in hummus. They make everything extra yum. We can't get enough!

Some friends recently introduced me to my new breakfast obsession: the Potato Mess!
Hashbrowns or smashed fried potatoes smothered with sour cream and piled with bacon bits, caramelized onion and arugula. Then you top it with a runny egg and drizzle it with maple syrup and Sriracha. Serve it with a side of avocado for extra goodness!
Deconstruct and mix it all together for the most flavorful bite π.
πDreaming of this spur of the moment steamer clam dinner my sister and I threw together at the coast last weekend. We shared our first hug (yay vaccines!) in over a year, got a rare weekend away without kids or husbands, drank pink champagne and set the cutest table for each meal. It could not have been more glorious π«π«π«.
π₯ Eggs are hands down one of my favorite foods. When we remodeled our kitchen and I didn't have a stove for two months, I missed eggs the most. Especially a farm fresh egg from a happy chicken!
My best friend, Erin, has five girls who all started laying this past fall. Feeling incredibly fortunate to be reaping the benefits of all the hard work she put into building her own coop and raising her chicks. πππ
