Salmon Pasta Bake

Ingredients

75g butter
75g plain flour
900ml milk
500g pack spinach and ricotta tortellini
150g frozen peas
4 tbsp freshly chopped chives
3 x 125g salmon fillets, skinned and cut into 2cm pieces
salt and pepper to taste
50g mature Cheddar cheese, grated

Directions

1. Preheat oven to 200°C. Melt the butter in a large pot over a medium heat and add the flour. Cook, stirring, for 30 seconds, then remove from the heat and gradually stir in the milk. Return pot to the heat and cook, stirring constantly, until thickened.

2. Add the tortellini and boil for 1 minute. Take pot off the heat and fold through the peas, most of the chives, the salmon and plenty of seasoning.

3. Empty mixture into an ovenproof serving dish and scatter over the cheese and remaining chives. Cook in the oven for 20 minutes or until bubbling and golden. Serve with a crisp green salad.

Crock Pot Sweet and Sour Meatballs.

Ingredients
For the Meatballs:

1 1/2 pounds ground beef
2/3 cup cracker crumbs
1/2 red bell pepper finely chopped
1 teaspoon red pepper flakes or more to taste
2/3 cup chopped onion
1/4 cup milk
2 teaspoons salt
1 teaspoon pepper
1 egg
2 teaspoons ginger

For the Rest...

4 tablespoons cornstarch
1 cup brown sugar
1/3 cup soy sauce
1/4 cup white vinegar
1/3 cup ketchup
1 green pepper chopped
1 red bell pepper chopped
14 ounces pineapple tidbits divided into juice and tidbits

Instructions

Mix meatball ingredients together and roll into meatballs. Brown and cook over medium heat in large skillet until cooked through (Or you can roll them and bake them in the oven at 425 for 13-14 minutes).

In a small mixing bowl, mix cornstarch and brown sugar. Drain pineapple juice into brown sugar mixture with soy sauce, vinegar, and ketchup.

Add meatballs, peppers, and pineapple tidbits to crock pot and pour sauce over.

Cook on low for 2-4 hours or until sauce is thickened. Serve over rice.

Sweet ‘n’ Tangy Chicken Wings

Ingredients
12 chicken wings (about 3 pounds)
1/2 teaspoon salt, divided
Dash pepper
1-1/2 cups ketchup
1/4 cup packed brown sugar
1/4 cup red wine vinegar
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon minced garlic
1 teaspoon liquid smoke, optional
Optional: Sliced jalapeno peppers, finely chopped red onion and sesame seeds

6 boneless skinless chicken breast halves (8 ounces each)
6 slices fully cooked ham
6 slices Swiss cheese
1/4 cup all-purpose flour
1/4 cup grated Parmesan cheese
