𝗙𝗿𝘂𝗶𝘁 𝗰𝘂𝘀𝘁𝗮𝗿𝗱
A delicious dessert made with mixing seasonal fruits with custard sauce.
Madfoon is one of numerous Arabian meals made with a combination of meat and rice .
It is prepared with chicken and lamb (with meat left on the bone) that is spiced with coriander, cumin, pepper, cloves, and turmeric.
After several hours of cooking, the meat is tender and moist, thoroughly infused with spices. The meat is served on top of saffron rice and charcoal is placed to get the smokey flavor and aroma for both chicken and rice . it is usually accompanied by yogurt and a spicy chili sauce
*Ingredients*
*For marination*
1. Chicken (with skin) - 1 kg
2. Saffron -1/4 tsp (mixed with water)
3. Salt as per taste
4. Sumac spice - 1 tsp
5. Whole garam masala spices - 1/2 cup(grinded)
6. Turmeric -1/4 tsp
7. Ginger-garlic paste - 1/2 tsp
8. Olive oil - 2 tbs
*For rice*
1. Mandi rice - 2-3 cup (soaked for 1 hour)
2. Water as required
3. Salt as per taste
4. White onion - 1/2 sliced
5. Olive oil
6. Whole garam masala spices.
7. Green chilly paste -1/2 tsp
*potato can be cut in cubes and can be baked along with the chicken*
*whole spices should include,cinnamon sticks,bayleaf,peppercorns,cloves,star anise,cardamom etc*
Method:
1. Marinate the chicken with the given ingredients for marination for 1-2 hours.
2. After 2 hours bake the chicken marinated and potato pieces ,both covered in aluminium foil for 50-55 mins in 180 degree celsius
3. Now to make the rice,saute the whole spices and onion in olive oil.
4. Add required water to cook the rice and add salt as well
5. Once the rice is cooked and chicken is baked,place the chicken on the rice along with chicken stock you get inside the foil
6. In a small cup ,put hot charcoal and pour some oil and close the lid of the madfoon . Close it until the smoke has fully gone.
7. Madfoon is readyy!!
