Man it feels good to be back in the gym😤💯⁣

Grateful for all the new individuals on my page! Thanks for being here🙏🏻⁣

I’m sure you’re wondering why I’m posting fitness photos on my page; especially since you probably only followed me for cooking, cutting & food in general & there hasn’t been any fitness posts recently on my feed…⁣

I wanted to just share a bit about why you’ll see fitness on my page😌⁣

The name SixPackChef originated because of my fitness background as a bodybuilder, a diagnosed clinically obese child & also as a cancer survivor! 2 out of the 3 things happened while I was cooking in restaurants including some of the best in the world. ⁣

I was a former Canadian National Level Bodybuilder placing 3rd in Canadian Nationals and 5th in North America! I stopped competing due to the pandemic & since then haven’t found the time to dedicate to being back on the stage. I do contribute my success to my culinary knowledge letting me make delicious food healthy, giving me a 1 up on other bodybuilders & also helped with me never really craving any junk food⚖️⁣

I always said that one of the “weapons” that helped me with my cancer battle was physical activity. I knew that chemotherapy would make me tired & also wipe out all cells including my muscle cells. I made it a must to always stay active and do exercise. It was my way to not give signals to my body to shut down & also it kept me mentally & physically occupied🏋️⁣

I haven’t been able to go to the gym for the last 6 months due to snapping my finger tendon completely in half but recently have been slowly getting back into the gym🤝🏻⁣

I know I’ll probably lose a bunch of you because this isn’t what you signed up for but that’s ok; thanks for being here & hopefully you might come back! For those who are sticking around, I appreciate you and feel free to msg if you ever have any health or fitness questions👊🏻⁣

We created a 13 Course Omakase Menu where served his yakitori & I created dishes using all the parts of the chicken that he didn’t serve drawing inspiration from chicken, egg, his culture & the binchotan grill. ⁣⁣

It’s been 2 months since my last progress update! ⁣

Here’s where we are sitting at right now. ⁣

Sorry I missed out on the last few months updates but due to travelling to Korea/NYC and life… I forgot/wanted to share other things with you guys like my⁣
mini-vlogs⁣

So during my travels I was not on a consistent diet & really just ate intuitively while being cognizant of portioning (of course this is because I’ve measured food as a bodybuilder/chef for years so I can eye ball things fairly well) based on the diet gave me. ⁣

I want to reiterate that over the years I’ve learned that if you are in a leaner/metabolically responsive state, being more free on your diet occasionally or having a “cheat meal” is not going to be the end all be all. For most people it’s being motivated/staying consistent year round that makes it difficult especially when you have no motivation or fitness goal. ⁣

I’m currently on a plan to put a bit of weight back on & fill out the frame moving into the next few weeks into winter. The reason for this is to build up my bodies metabolism more so that I can eat even more food but also I’ve seen a bit of a dip in my gum performance which is an indicator that it might be time to change up the diet/calories. This is an aspect that Matt looks at very carefully every week we do progress updates.⁣

Since then Matt has implemented more red meat into my diet, upped carbs slightly as well as giving me a designated “free meal”. ⁣

We aren’t trying to get fat here but goal is to slowly add back more calories to get the body primed to increase workout performance which leads to muscle growth & better physique composition…or in other words: GET JACKED!

:The tendency to delay, postpone & not start anything until you’ve had a cup of coffee⁣

“I put the 'pro' in procaffeinate.”⁣

If only “working” actually looks like this. During my stay in Korea, something I was so amazed by was their cafe culture! Hands down they have not just the most amount but also the most unique & creative concepts. You can’t go anywhere without passing a cafe.⁣

Even the most ubiquitous franchise options are fun & creative! ⁣

There was a cafe for essentially everything; cats, dogs, sheep, coca-cola, Hello Kitty, p**p, 2D, space, yarn etc!⁣

Aside from independent cafe shops, it was very common for regular brands to have their own cafe shop within the store; for example I went to a North Face store that had their own cafe, fashion brand Style Nanda had a whole floor that looked like a swimming pool or even high end brands like Dior had a cafe in store. ⁣

I also learned that Americano is thee drink of Korea; iced specifically. They are infatuated with it like North Americans are with PSL.⁣

The reason for their love for it is because espresso’s are too bitter & the effect of caffeine is too sudden. ⁣

Macchiato is too sugary & cause worrying about being fat. ⁣

For fraps, they don’t like whip cream much because once again they think fat when they see it.⁣

Latte is hard to digest due to dairy.⁣

Thus, the Americano is the most popular and inexpensive option & having it iced makes it refreshing, easy to carry & to drink.

Recapping this weekend's Chinese Lunar New Year celebration, catch me welcoming the Year of the Ox with the all new 2021 Toyota Corolla XSE CVT!⁣

I'm always excited for Chinese Lunar New Year because it's full of positive vibes and is a huge celebration! For me it's all about reuniting everyone together to enjoy a lot of great food, share laughs and exchanging well wishes.⁣

We didn't get to have any gatherings but I still got to Bai Nian, a tradition of wishing each other goodluck and fortune, and even dropped off some longevity noodles and traditional lucky food for the family! ⁣

Oh and can't forget about Lai See, the Lucky Red Pockets! It just wouldn't be Chinese Lunar New Year without those!⁣

I've really taken advantage of the awesome features of the new Corolla including listening to my favorite tunes on Apple Carplay, warming up from the Canadian cold with the heated seats and enjoying the drive experience of the sports mode. ⁣

Thank you for letting me experience the XSE CVT! Just like an ox symbolizes strength and hardwork, I'm ready and excited for a year of harvesting all the fortune and happiness!⁣

“THAI SHRIMP & NOODLE YELLOW CURRY”⁣

I wanted to take the iconic Thai curry noodles and see how I could come up with a new interpretation while honouring the original.⁣

The traditional flavors of a Thai yellow curry noodle are Yellow Curry (cumin, coriander, turmeric, fenugreek, garlic, salt, bay leaf, lemongrass, cayenne pepper, ginger, mace and cinnamon), coconut, lemongrass, lime, fish sauce, palm sugar and chilli.⁣

Check out how I switched things up:⁣
🔺Using noodles to wrap the shrimp! This gives a crunch and texture to the dish while keeping the shrimp moist as it fries⁣
🔺Reducing coconut cream and yellow curry paste together and then thinning it with shrimp broth creates a concentrated umami rich dipping sauce that packs a bunch like Thai food should⁣
🔺To add acidity and freshness I created a jelly out of lime juice, lemongrass and ginger. This creates a unique pop of freshness when it melts in your mouth versus diluting the sauce and also adds a fun visual appeal⁣
🔺Typical condiments would include garlic, chilies and some type of pickles so I pickled chillies with a base of vinegar, fish sauce, garlic and palm sugar to mirror those flavors⁣

The end result is a dish that has all the components and flavors of the traditional dish but presented in a fun and exciting way!⁣

It's ironic how Seasonal Affective Disorder is known as SAD🍂🍃⁣

It's a type of depression that's related to changes in seasons and typically begins and ends around the same times every year👀⁣

Typically starting in the fall and continues into the winter months it gets us unenergetic and groggy. It definitely is a mood and vibe but not in the good way we want😞⁣

Sprinkle on Covid and 2020 as a whole and SAD can easily become more than just "seasonal"😶⁣

Here are some ways to handle SAD:⁣
🔺Find Light: Lack of light exposure is a main reason so find some! Wake up early and go outside⁣
🔺Eat Well: Many people tend to overeat or emotionally eat during SAD so consciously try to eat better⁣
🔺Stay Active: This goes hand in hand with the above 2!⁣
🔺Dont be Reclusive: Try to avoid solidarity tendencies. For me my socials, FT and phone calls is where I get to connect with people and stay in touch with everyone!⁣

It takes so much strength to pull yourself out of a dark place mentally and emotionally. So if you've done that today or any day at all, you should be so damn proud of yourself👌⁣

I've always shared with you all my ups and downs and recently I was filming some content and got happy when I saw how I was looking a bit "better" physique wise. I had fallen off training/dieting for the last few weeks and recently got back into it 1-2 weeks. It also made me realize how my mental health also followed the same pattern.⁣

Whether it was during my battle with cancer, whenever I have any issues or situations or the crazy year that's been 2020...Physical health has always been my go to and answer to dealing with everything that is life.⁣

Exercise is the single most powerful tool you have to optimize your brain function and mental health.⁣

It's impact on cognitive abilities and mental health is directly correlated and is one of the best treatments we have for most mental and psychiatric problems.⁣

For me; the gym, basketball, hikes, fishing, walking or just going out to soak up the sun and air...all work.⁣

I just wanted to share and maybe help remind someone especially during these times that: Physical health is Mental Health💯

Peanut Butter Pumpkin Spice Cookies🍂🥜🍪⁣

PB & PSL...⁣

These 5 letters have taken over the hearts (and sometimes waistline lol) of everyone. So being the greedy fat kid in me I thought why not combine them together to get double the love🤷🏻‍♂️⁣

The nutty toastiness of peanut butter go soooo well with the warm comforting notes of pumpkin spice: cinnamon, nutmeg, ginger, clove and allspice!⁣

I've put a little twist into the classic PB cookie by adding in protein powder so that it results in a much more tender crumb and texture compared to OG PB cookies. Using oat flour, it adds that extra earthiness which goes so well with the other ingredients.⁣

Lastly the sweetness in this recipe actually comes from the flavoring of the protein and the sweetness of pumpkin...essentially SUGAR FREE✌️⁣

Ingredients:⁣
🔺½ cup Natural Peanut Butter⁣
🔺¼ cup Pure Pumpkin Puree⁣
🔺1 scoop Pumpkin Spice Latte Perfect Diesel Protein⁣
🔺1 Whole Egg⁣
🔺½ cup Oat Flour (feel free to sub for pastry or cake flour if you prefer a more Caley texture)⁣

Method:⁣
🔺Preheat oven to 350F⁣
🔺In a large bowl, mix peanut butter, pumpkin puree, PSL Diesel and egg until combined and smooth⁣
🔺Add in the oat flour and mix until a sticky dough forms⁣
🔺Using two spoons drop 1-1.¼ tbsp worth of cookie dough evenly on a parchment lined baking tray. Make sure to give them some space ⁣
🔺Bake for 8-10 minutes. The edges will look golden but the middle may still be slightly soft. That is ok, as it cools it will harden slightly.⁣
🔺Serve or store in an airtight container.⁣
