"THURSDAY TIDBITS"

FISH

Did you know that defrosting fish at room temperature or in water in a sink can cause more harm than good? Either food poisoning or an allergic reaction.

Fresh fish should be frozen at source or kept at temperatures below 16 degrees, our kitchens are generally above this temperature, especially looking at our hot climate, what happens is at temperatures above this, histidine will easily be converted to histamine which can lead to scombroid food poisoning.

Scombroid poisoning is not an allergy, it can affect anyone, even people with no allergic history to that.

Symptoms include
Palpitations, flushing rush, headache, dizziness, sweating, burning of the mouth and throat etc.

Note:
Histamine is not killed at normal cooking temperatures, meaning if the fish has been contaminated with histamine, even if you cook it properly, you can still be poisoned.

* It's safer to defrost fish under controlled temperatures like in a refrigerator.
