Grilled chicken seasoned with smoked paprika, sea salt and pepper. I cooked my noodles and tossed it with 1/2 cup of garlic Alfredo sauce. I added my steamed broccoli into the Alfredo mix and I’m ready to dig in!

4-INGREDIENT PEPITA SALSA CHICKEN PEPPERS by sara.haven
Serves 1 but can easily be doubled, tripled, quadrupled. •••
1/2 cup shredded chicken breast
1/4 cup Trader Joe’s pepita salsa (any salsa works, but this one adds the best flavor)
1 red bell pepper, sliced down the center and de-seeded
1/4 cup shredded cheese •••
1. Preheat oven to 400 F. In a small bowl, combine chicken and salsa. Fill each pepper half with chicken and top with cheese. Bake ~10-15 minutes, or until cheese is melted and peppers are slightly soft.

It really isn’t all that hard to make everything look pretty either. Fold your cold cuts, crumple your cheese, and get a variety of flavors/textures. 👌🏻
I always like nuts for crunch and berries for the sweet. I got most of this stuff at Trader Joe’s - but target has a really awesome selection for all things charcuterie. 💯

Santa Maria-style tritip for dinner! So I just found out not long ago you can only get this cut of meat in California! Cooked right, it’s super tender! If you can get ahold of it in your area, I highly recommend it! I ate it with a side of loaded broccoli and sugar free Sweet Baby Ray’s BBQ sauce 💁🏻‍♀️
BBQ high 10 min each side direct heat, drop heat all the way and cook on indirect heat for 35-45 min. Let meat rest 7-10 min before cutting so the meat reabsorbs its juice.

I found these smoked salmon nuggets at our this past weekend for a busy day and today was that day. Just was not in the mood to deal with food. There were a ton of flavors between habanero, tequila lime, Caribbean jerk, and all sorts of other seafood but the spicy habanero was talking to me. Let’s let’s just say I was in heaven. Chowed down on this bad boy after a quick lunch time 5k run. I could’ve had pounds of that salmon. So good.

Lately, a lot of you are sharing with me that you’re trying to follow a sugar free lifestyle but really struggling. Some of you say that you really crave something sweet & think those days are over.
I’m here to let you know that with the latest sugar substitutes, you can’t tell the difference! So, this week I’ll be sharing some of my favorite sweets that are totally low carb, sugar-free & keto approved.
Just be aware that even these sugar free “treats” need to be eaten in moderation if trying to lose weight. Too many could definitely throw a curve ball in your progress.

½ cup pumpkin puree⁠
2 tablespoons avocado oil⁠
¼ cup granulated sugar-free sweetener⁠
2 eggs, room temperature⁠
1 teaspoon gluten-free vanilla⁠
1 ¼ cups almond flour⁠
1 ½ teaspoons pumpkin pie spice⁠
½ teaspoon salt⁠
1 teaspoon baking soda⁠
𝗜𝗡𝗦𝗧𝗥𝗨𝗖𝗧𝗜𝗢𝗡𝗦⁠
Preheat the oven to 350°F/180°C. Grease an 8″X8″ baking pan; set aside. Add pumpkin, oil, sweetener, eggs, and vanilla to a medium mixing bowl. Mix until well combined. Add almond flour, pumpkin spice, salt, and baking soda. Mix until well combined. (If your batter is too thick, add 2 tablespoons of water)Pour the batter into your prepared pan. Bake for 25 - 30 min (or until the top darkens and the center is set).⁠
Optional: Frost with keto cream cheese frosting. Enjoy!⁠

Ingredients
For the marinade
¼ cup olive oil
¼ cup lemon juice
zest of 1 lemon
2-3 garlic clove crushed
2 tsp fresh thyme
2 tsp rosemary
1 tsp dried oregano
1 tsp salt
1 tsp pepper
For the skewers
4 large chicken breasts skinless, boneless
wooden skewers soaked in boiling water for 30 minutes

Instructions
Combine all the ingredients for the marinade.
Slice the chicken into bite-sized chunks and place in a bowl. Pour over the marinade, cover and allow to marinade for at least 30 minutes but up to 24 hours, covered in the fridge.
Thread the marinated chicken onto soaked wooden skewers or metal skewers.
Heat an outdoor grill or stovetop grill pan then cook the skewers, turning every 3-5 minutes, until the chicken is cooked through and golden brown on all sides.
Remove from the heat and allow to rest for 5 minutes before serving.

Save this post for the recipe. . . . INGREDIENTS CHICKEN MARINADE 1 ½lbs bonesless skinless chicken breast, cut into 1 ½ inch cubes ½ cup low sodium soy sauce 2 tbsp extra virgin olive oil 2 tbsp honey 1 tsp dried thyme 1 tbsp fresh minced garlic or ½ tsp garlic powder ½ tsp dried oregano ¼ tsp dried sage ½ tsp fresh ground black pepper 1 bay leaf 1 tsp red pepper flakes 1 can of beer (Guinness stout or beer of choice) VEGETABLES 3 bell peppers, trimmed, stems removed, and sliced into squares 1 zucchini, ends trimmed, cut into ½ inch slices Cloves from 1 head of garlic, peeled 1 red onion, peeled, sliced into squares 2 tbsp olive oil 1 tsp kosher salt ½ tsp black pepper INSTRUCTIONS Clean chicken breast and cut into roughly 1 ½ inch cube pieces In a large bowl add all the ingredients (minus the beer) and whisk together. Once mixed, pour in beer, and stir to combine. Add in chicken, mix, cover with a lid or wrap, and refrigerate for minimum 2 hours or overnight. While chicken is marinating, slice up all of your vegetables that are going onto the skewers. Once done, drizzle olive oil, salt and pepper, and mix to coat the vegetables

Toss asparagus and salmon in some olive oil and season with salt, pepper and garlic powder. Add 1 tbsp coconut aminos to the salmon. Air fry for 12-15 minutes! Sprinkle the asparagus with Parmesan cheese. Paired with sliced tomatoes sprinkled with salt, and avocado!

Ingredients⠀⠀
1 large salmon fillet (see note)⠀⠀
salt and pepper, to taste⠀⠀
1/2 cup butter, melted (see note)⠀⠀
juice of 2 limes (plus one lime, thinly sliced)⠀⠀
1 tablespoon minced garlic⠀⠀
1/3 cup cilantro, roughly chopped⠀⠀
Instructions:⠀⠀
Preheat the oven to 350 degrees. Line and grease a large baking sheet with foil. Lay salmon on foil and season with salt and pepper on both sides to taste. Slip lime slices underneath the salmon.⠀⠀
Stir together butter, lime juice, and garlic. Pour mixture over salmon. Fold sides of foil up over the salmon (don't worry if it doesn't cover the salmon completely).⠀⠀
Bake for 15-20 minutes. Switch oven to broil and cook another 5 minutes. Sprinkle chopped cilantro over the top and serve.⠀

Ingredients:
8 oz ground beef
1/2 cup sloppy joe sauce
2 tbsp no sugar added ketchup
8 jalapeno peppers
1/2 cup shredded cheddar
Instructions:
1. Brown ground beef & mix with sloppy joe sauce
2. Preheat oven to 350F. Slice Jalepenos length wise and remove the insides and seeds. Add beef into the jalepenos and top with shredded cheddar.
3. Bake for 20 minutes, remove from oven, let cool & enjoy! .
