Today I want to share with you the "Mini cob with ham and cheese".

Servings: 4
Total Time: 45 minutes

Ingredients:
4 small crusty bread rolls or cob-style bread rolls
100g Primo English Ham
130g (1 1/4 cups) coarsely grated pizza cheese
4 Omega-3 eggs
1 tbsp pouring yogurt
Chopped fresh parsley or snipped chives, to serve

Directions:
1) Preheat the oven to 180C/160C fan-forced. Line an oven tray with non-stick baking paper. Cut a quarter from the top of each bread roll and reserve. Scoop out some of the bread centre of each roll to create a cavity.

2) Lay 2 slices of ham in each, overlapping to create a cup. Scatter 1/4 cup of cheese inside each of the rolls. Place rolls on the prepared tray. Carefully break an egg into each, being careful not to spill over the sides. Drizzle 1 teaspoon of yogurt over each egg. Scatter another 1/3 cup of cheese over the tops. Cover loosely with foil to secure. Bake for 25 minutes.

3) Remove the stuffed rolls from the oven. Place the bread lids on the tray cut-side up next to the rolls. Sprinkle the remaining cheese around the edge of the rolls and over the lids. Replace foil on the rolls. Bake for a further 10-15 minutes or until the cheese has melted and eggs are just set but still soft. Scatter with parsley or snipped chives. Serve with the cheesy lids.

Recipe notes:
Note: As an alternative, you can whisk the eggs and yogurt together and pour into the ham cavity. Proceed as per recipe.

Today I want to share with you the "Ham potato patties with green zucchini".

Servings: 16
Total Time: 1 hr 30 minutes

Nutrition Information (per serving):
Energy 638 kj (152cal)
Protein 7.3g
Total Fat 7g
Saturated 2.2g
Carbohydrate Total 13.7g
Sodium 328mg

Ingredients:
600g sebago potatoes, peeled, chopped
1 bunch English spinach, stems trimmed
1 large zucchini, grated
2 green onions, chopped
250g sliced leg ham off the bone, chopped
100g fetta, crumbled
2 garlic cloves, crushed
3/4 cup plain flour
1 egg, lightly beaten
3/4 cup panko breadcrumbs
Extra virgin olive oil, for shallow-frying

Tomato salsa:
1 tomato, finely chopped
1/2 small red onion, finely chopped
2 tbsp small fresh basil leaves
1 tbsp extra virgin olive oil

Directions:
1) Place potato in a large saucepan. Cover with water. Bring to the boil over high heat. Boil for 10 minutes or until tender. Drain. Return to pan. Roughly mash. Set aside to cool completely.

2) Meanwhile, roughly chop spinach leaves. Place in a colander in sink. Pour over boiling water. Rinse under cold water. Squeeze out excess moisture. Process in a small food processor until very finely chopped.

3) Combine spinach, zucchini, onion, ham, fetta, garlic and potato in a large bowl. Add flour and egg. Season well with salt and pepper. Mix well to combine. Shape ¹⁄³ cup mixture into a patty (see note). Toss lightly in breadcrumbs. Place on a tray. Repeat with remaining potato mixture and breadcrumbs. Refrigerate for 30 minutes.

4) Meanwhile, make tomato salsa. Combine tomato, onion, basil and oil in a bowl. Season with salt and pepper.

5) Heat oil in a large frying pan over medium-high heat. Cook patties, in 3 batches, for 4 minutes each side or until golden and heated through. Drain on paper towel. Serve warm or cold with salsa.

Recipe notes:
All these potato patties can be made a day ahead, coating with breadcrumbs just before cooking. Store them on a tray covered with plastic wrap in the fridge.

Ingredients:
olive oil cooking spray
4 (150g each) salmon or ocean trout fillets
1/2 cup coriander leaves, chopped
1 tbsp brown sugar
1 tsp fish sauce
1/4 cup lime juice
2 tbsp sweet chilli sauce
3 green onions, thinly sliced diagonally
Fresh coriander, to serve
Lime wedges, to serve
Jasmine rice, steamed, to serve

Directions:
1) Preheat oven to 200°C. Spray 4, 30cm x 40cm sheets of baking paper with oil. Score thickest part of fish twice with a knife. Place fish onto baking paper.

2) Combine coriander, sugar, fish sauce, lime juice and sweet chilli sauce in a small jug. Brush fish with mixture.

3) Top fish pieces with green onions. Bring long sides of paper together and fold over twice. Fold short sides in to form a parcel.

4) Place parcels, seam side up, onto a baking tray. Bake for 12 minutes or until fish is cooked through. Open parcels. Top with coriander. Serve with lime wedges and jasmine rice.

Today I want to share with you the "Spicy salmon and soba noodle salad".

Ingredients:
3 (180g each) salmon fillets, skin removed
200g snow peas, trimmed, sliced diagonally
250g soba noodles (see note)
4 green onions, thinly sliced
60g baby spinach leaves, trimmed
2 tbsp olive oil
1 1/2 tbsp rice vinegar
2 tsp spicy sesame oil
1 tsp salt-reduced soy sauce

Directions:
1) Preheat the oven to 180°C. Place a large sheet of baking paper on a large, flat baking tray. Place all the fillets in the centre of baking paper. Fold paper to enclose salmon and tuck in edges. Bake for 5 minutes. Stand for 5 minutes.

2) Meanwhile, bring a large saucepan of salted water to the boil over high heat. Add snow peas and cook for 1 minute. Using a slotted spoon, transfer to a sieve. Refresh under cold water. Pat dry with paper towels. Place in a large bowl.

3) Return water to the boil. Add noodles and cook for 4 to 5 minutes or until just tender. Drain. Rinse under warm water. Add to snow peas.

4) Open paper parcels. Flake salmon into large chunks. Add noodles with green onion and spinach. Combine olive oil, vinegar, spicy sesame oil and soy sauce in a screw-top jar. Secure lid and shake well. Drizzle over salad. Toss to combine. Serve.

Recipe notes:
Soba noodles are brown Japanese noodles made from buckwheat. Find them in the Asian section of the supermarket.

Nutrition Information (per serving):

Ingredients:
450g Turkish bread, split in half lengthways
3/4 cup Mutti Tomato Passata
1/2 cup fresh flat-leaf parsley leaves, chopped
425g can tuna in springwater, drained, flaked
280g jar chargrilled vegetables in oil (see note)
1 1/2 cups grated tasty cheese
Mixed salad, to serve
Lemon wedges, to serve

Directions:
1) Preheat the oven to 220°C/200°C fan-forced. Line a large baking tray with baking paper. Place bread on the prepared tray, cut-side up.

2) Spread bread with tomato passata. Sprinkle with half the parsley, then top with tuna, vegetables and cheese. Bake for 15 to 20 minutes or until the base is crisp and top golden. Sprinkle with remaining parsley. Serve melts with salad and lemon wedges.

Recipe notes:
We used a chargrilled vegetable combination of eggplant, capsicum and zucchini.

Today I want to share with you the "Egg white omelette".

Servings: 1
Total Time: 20 minutes

Nutrition Information (per serving):
Energy 584 kj (140cal)

Ingredients:
olive oil spray
2 green onions, sliced
50g baby spinach
1 tbsp chopped fresh dill
sea salt and cracked black pepper
3 egg whites

Directions:
1) Lightly spray a non-stick frying pan with olive oil spray. Add green onion, spinach and dill, and cook over medium heat until spinach is wilted. Remove from the pan and season with sea salt and cracked black pepper.

2) Lightly spray the pan again with a little oil. In a bowl, whisk egg whites with electric beaters until soft peaks form.

3) Add egg whites to the pan and cook over medium heat for 2 minutes or until nearly set. Sprinkle spinach filling over half the omelette and cook for a further 3 minutes or until the base is golden.

4) Carefully fold over the omelette to enclose the filling. Serve immediately.

Recipe notes:
Try a selection of different fillings for the omelette such as tomato, basil and red onion; mushroom, thyme and spring onion; or grated pumpkin, nutmeg and rosemary.

Today I want to share with you the "Mediterranean tuna slice summer rolls".

Servings: 4
Total Time: 15 minutes

Ingredients:
4 small ciabatta rolls
185g can tuna slices
2 tbs red wine vinegar
1 garlic clove, crushed
2 large tomatoes, thinly sliced
1 japanese cucumber, thinly sliced
1 roasted red capsicum, cut into thin strips
1/4 cup basil leaves

Directions:
1) Slice the rolls in half horizontally. Strain oil from tuna into a small bowl. Add the vinegar and garlic to oil, and season with salt and pepper. Drizzle oil mixture over cut sides of bread.

2) Arrange the tomato, cucumber, capsicum, basil, tuna and remaining bread half on top.

Note:
You may add eggs.
