If you're looking for a delicious Mexican dish to satisfy your cravings, you can't go wrong with these Mexican Style Stuffed Peppers. Enjoy a tantalizing flavor and the benefits that come with it! Check out the recipe out below! Enjoy!!

Ingredients:
4 medium bell peppers, sliced in half and seeded
1lb chicken breast, diced
1 cup brown rice, cooked
8-10 oz thick and chunky salsa
½ cup black beans, drained and rinsed
½ cup frozen corn
⅓ cup shredded Mexican cheese

Cooking Instructions:
Preheat oven to 375 degrees.
Bring a pot of water to a boil add in peppers and cook 4-5 minutes or until tender.
Drain and lay cut side up in a line baking pan.
Heat a large nonstick skillet over medium heat. Add in your chicken and cook 2-3 minutes.
Add remaining ingredients except cheese to the chicken. Stir and allow to simmer for 5 minutes.
Evenly divide filling between pepper halves. Top with shredded cheese.
Cover baking dish with foil and cook for 30-35 minutes or until cheese has melted.
Serve hot.

*You can make this recipe low carb by removing the brown rice and corn.
*This recipe can also be made vegetarian friendly by swapping the ground turkey for additional black beans or substituting with your favorite vegetarian soy crumbles.
*Vegans can sub ground turkey for soy crumbles and use almond cheese.

Ingredients:⠀
✅4 oz. salmon ⠀
✅½ cup of brown and wild rice, cooked⠀
✅½ eggplant, diced⠀
✅1/3 red bell pepper, diced⠀
✅½ onion sliced⠀
✅1 tbsp. parsley, minced⠀
✅Salt and pepper ⠀
✅Paprika ⠀

Directions:⠀Preheat the oven to 350 F. Season salmon with paprika, salt and pepper. Cook for 20 minutes. Meanwhile, spray cooking oil on a heated pan and sauté vegetables for 15 minutes. Serve with salmon and rice.

I eat chicken and rice 3 to 4 x per week to stay lean. Very healthy addition to your diet. and there are many recipes available to change it up so you do not get bored! I will post some more in the future!

Check out this healthy recipe. Moroccan style chicken and basmati rice. I great dinner choice packed with protein and energy. Anyone looking for a lean meal, this is a great option. The ingredients and recipe below:
Ingredients
1 cup Basmati Rice
1 tbsp olive oil
1 yellow onion, thinly sliced
1 tbsp garlic, minced
1 tbsp fresh ginger root, grated
1 lb. chicken tenders, diced
½ tsp. all-spices affron threads or
Âź tsp turmeric (optional)
2 cups chicken Broth
1 cup bell peppers
1 tbsp fresh lime juice
Âź cup fresh cilantro leaves, chopped

Instructions:
Moroccan-inspired chicken an Basmati Rice dish with all the fixings. If you’re up for experimenting with bold and fragrant spices, Moroccan food is just up your alley. With plentiful amounts of aromatic spices and herbs, this chicken and rice dish is much more than the average one-pan recipe.
Step 1
In a large skillet, heat oil over medium heat. Add onions and cook for 5 minutes, stirring occasionally, until golden.
Step 2
Add garlic, ginger and chicken and sautĂŠ for 5 minutes. Stir in allspice and a pinch of saffron or turmeric, if desired, rice and chicken broth. Bring to a boil.
Step 3
Reduce heat to low, cover and simmer for 20 minutes. Remove from heat and stir in lime juice.
Step 4
Transfer to serving dish and garnish with cilantro.

Ingredients:
1 scoop of all-natural whey protein or protein of your choice
1 tablespoon of chia seeds
1 tablespoon of flax seeds
1/2 cup of fresh strawberries
1/2 banana
1/2 cup of fresh blueberries
1/2 cup of fresh raspberries
1/2 cup of oats
