It was an unplanned day so I opened up the Michelin Guide app on my iPhone to looked up a couple of restaurants recommended to me by the concierge at my hotel. Kabo was open for lunch, and it was only a 20-minute walk.
Pamplona is beautiful with shady tree lined chestnut trees and polite pedestrians and drivers. People actually wait at crosswalks for the light to change, as they chat and socialize. It feels very civilized.
When I arrived, a cute young man asked if I had a reservation, and haltingly, I explained that my arrival was unplanned and hopefully they could accommodate me. He very warmly showed me to a discreet little table where I was comfortable and could observe everyone around me. Perfection.
Lunch was delicious and professionally served. The beautiful young woman who served me explained what each dish was with great care, with instructions for the best way to consume it. It has a delicious flavor and texture, light, with bright notes of orange zest and cinnamon.
