This tostada is so good. A mix of fresh corn,tomato, red pepper, cilantro, green onion on mashed cooked white beans atop a corn tostado shell. I topped it with the most yummy poblano pepper cream sauce. All vegan too!
A useful app on the smart phone is the Argus. It tracks your food, water, steps and weight. When I checked weight chart this morning, I have lost 12 pounds since January. We eat a large salad at lunch using a no oil/no sugar dressing. This is after a fast of about 15 hours since the evening meal which consists of a vegetable soup and/or a vegetable dish. My blood sugars are coming down too!
We don't get hungry eating this way and get superior nutrition!

Since it is so encouraging to see success stories, here is mine.
I have had success eating this way. My friend's son lost 60 pounds and is diabetes free. She gave me Eat to Live and I was half hearted at first and have a reluctant husband who needs the health benefits too but has a hard time giving up SAD and meat. . But I got serious a year ago and purchased the Hello Nutritarian food prep program which guides you step by step so you can prep ahead for a week. I followed it at first but now just eat a big salad for lunch and soup and veggies and fruit for dinner. I try to stop eating at 6 pm and then have my salad at 11:30 Am at which time I check my glucose. I still take 30 units of Lantus at bedtime and 1.8 Victoza when I wake up. I take 1000 metformin at each of my 2 meals.My readings are now averaging 116 for 7 days. I don't feel shaky. I have lost about 25 pounds in the past year and have not been completely compliant as hubby wants burgers sometimes.
