Chicken thigh marinades you might want to try. 😋
Chipotle Chicken Marinade:
1-1.5 lb boneless chicken thighs
2 tablespoons olive oil
2 teaspoons adobo sauce (from a can of chipotle peppers)
½ teaspoon paprika
2 teaspoons brown sugar
2 cloves garlic minced
¼ teaspoon salt
Honey Mustard Marinade:
1-1.5 lb boneless chicken thighs
3 tablespoons Dijon mustard
2 tablespoons honey
2 clove garlic, minced, or 1/2 teaspoon garlic granules
1 teaspoon onion powder
1/2 teaspoon each sea salt and pepper
Greek Chicken Marinade
1-1.5 lb boneless chicken thighs
3 tablespoons olive oil
3 tablespoons lemon juice
3 garlic cloves, minced
1 1/2 tablespoons dried oregano
1 tablespoon red wine vinegar
1/2 teaspoon salt
1/2 teaspoon black pepper
Fajita Chicken Marinade:
1-1.5 lb boneless chicken thighs
3 tablespoons olive oil
Juice of one lime
1 1/2 teaspoons chili powder
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/2 teaspoon cumin
1/2 teaspoon dried oregano
1/2 teaspoon each salt and black pepper
Teriyaki Chicken Marinade:
1–1.5 lbs. boneless chicken thighs
1/4 cup soy sauce
2 teaspoon fresh grated ginger
1/2 teaspoon sriracha
2 cloves garlic minced
3 tablespoons maple syrup
2 tablespoons chopped green onion
2 tablespoons rice vinegar
Directions
Place the chicken breasts or thighs in a ziplock bag, large bowl or container. In a small bowl or jar, mix together the marinade ingredients. Pour over the chicken and allow to sit for at least 30 minutes, or package in a ziplock bag and store in the freezer for later use.

Created my own Beef Enchilada Burritos tonight!! These are 🔥🔥🔥 🤤
1/2 pd. ground lean Beef
1/2 bell pepper chopped
1/2 onion chopped
1 cup steamed cauliflower rice
1/2 cup salsa
1 small can green chilies
1 can green enchilada sauce
Cheese
low carb Tortillas
Add bell pepper and onion to ground beef- cook beef until done, drain grease. Mix in cauliflower rice, chilies, salsa, and green enchilada sauce. Fill Tortilla and place cheese on meat mixture then roll. Place in the oven at 350 degrees until hot and lightly brown. Serve with a side salad (served mine on top with guacamole and ranch) Enjoy!! 😋

Zucchini Lasagna Bake
1.Seasoned sliced zucchini with olive oil,Italian seasoning, salt, pepper, grated parmesan
2.Use a 1/2 cup of Rao’s sauce (5 net carbs) add to ground beef/turkey
-I also chopped a small amount of onions & peppers into the ground beef
3. Layer with mozzarella or your choice of cheese
4. Bake on 350 for 20 minutes (longer for softer zucchini)❤️
You can also add ricotta or cottage cheese if you prefer…

My quick an easy but yummy sweet treat!!
High Protein Chocolate Mug Cake 🤤 ❤️🍫
1/4 c. Greek Yogurt
1 tsp. Baking Powder
2 TBS. Cocoa Powder
1 scoop Chocolate Protein Powder
Splash of Almond Milk
Lilly's Chocolate Chips- just a few
Mix all ingredients in a mug. Microwave for 90 seconds.
Choco Peanut Butter Mug Cake
Ingredients
2 Tbsp unsalted butter
½ cup Almond Flour
¼ cup Unsweetened Cocoa
¼ cup Monkfruit sweetener
½ tsp vanilla extract
½ tsp cake batter extract
1 tsp baking soda
1 egg
1 Tbsp all natural peanut butter
Lily’s chocolate chips (as toppings, optional)
Instructions
Place butter in a mug, melt in microwave
Add in almond flour, monkfruit sweetener, cocoa, vanilla extract, cake batter extract, backing soda
Mix up all ingredients
Add in egg, stir until all ingredients are well mixed
Place mug in a microwave for 90 seconds
Once done, place mug cake in a plate, top it with peanut butter and lily’s choc chips

Keto Lemon Mug Cake
Ingredients:
3 tablespoons almond flour
1 tablespoon coconut flour
2 tablespoons unsalted butter, melted
1 large egg
2 tablespoons granulated erythritol (or your preferred keto-friendly sweetener)
1 tablespoon lemon juice
1/2 teaspoon baking powder
Zest of one lemon
Pinch of salt
Instructions:
In a microwave-safe mug, melt the butter.
Add the almond flour, coconut flour, egg, erythritol, lemon juice, baking powder, lemon zest, and a pinch of salt to the melted butter. Mix well until the batter is smooth.
Microwave the mug on high for 1.5 to 2 minutes, or until the cake is set and springs back when touched.
Allow the mug cake to cool for a few minutes before digging in.

When you are wide awake at 3am- you make these quick-n-easy Lavash Flatbread Chips/Crackers!! 👀
20 minutes and completely done with two different flavors- original and nacho cheese!
Lightly spread Avocado/Olive Oil on both sides of flatbread with seasoning of your choice, cut with Pizza cutter to desire size, place in air fryer basket. Place in air fry on 400 degrees for about 2 minutes or until desire crisp. Careful to watch chips- will BURN if not paying attention.

High Protein/low carb Ranch Dip
I- 16 ou. container of Cottage Cheese
1 package Hidden Valley Ranch Dressing
Dash of Unsweetened Almond Milk
Blend Cottage Cheese in a blender until smooth, add Almond Milk with Ranch Seasoning. Blend again. If the mixture is still thick- add another dash of Almond Milk to thin to your desired consistency. Serve with veggies of choice!! OH SOOO GOOD!

Buffalo Chicken Dip
2 cups shredded cooked chicken
8 ounces nonfat Greek Yogurt
1/2 cup Frank's RedHot Original Cayenne Pepper Sauce or Frank's RedHot Buffalo Wings Sauce
1/2 cup Hidden Valley Original Ranch Dressing
1/2 cup Shredded Mexican Cheese
Preheat oven to 350°F.
Combine all ingredients and spoon into shallow 1-quart baking dish.
Bake 20 minutes or until mixture is heated through; stir. Garnish with chopped green onions if desired and serve with vegetables of your choice or Quest/Wilde Chips.

High Protein/low carb Chia Seed Pudding
In a large bowl whisk together 2 1/2 cups of milk (your preference of dairy, almond milk, cashew milk, etc), 3/4 cup chia seeds and 3/4 cup Fit & Lean Fat Burning Meal Replacement (Vanilla, Chocolate, or Banana).
Transfer to a sealed Tupperware container and let sit overnight. The chia seeds will soften and create a delicious protein pudding.
The next day get creative! Layer the chia protein pudding with your favorite fruits, nuts or granola. We put ours into jars so that they can be sealed tightly and taken with us to eat later.
Chia seeds have many health benefits and this is an unstoppable, super simple and convenient breakfast, mid-day snack, or sweet treat with fresh berries!! 🍓🫐
This may be my dinner tonight 😍
‼️White Chicken Enchiladas‼️
Mix 3 cups of cooked chicken with 2 oz of taco seasoning, 1 cup of grated cheese (I used sharp cheddar and Monterey Jack), a 4 oz can of diced chilies, and 1/4 cup of sour cream.
Spoon the mixture into flour tortillas ( I used 10 taco sized ones) and place into a greased 9×13 baking dish. Heat 3 tbsp of butter in a skillet over medium heat.
Whisk in 3 tbsp of all purpose flour and cook for 3-4 minutes. Slowly stir in 2 cups of chicken broth and stir until slightly thickened. Turn off the heat.
Stir in 4 oz of diced chilies and 1 cup of sour cream, and half cup of heavy cream. Pour over the tortillas. Top with 2 more cups of cheese and bake at 400 for approximately 15-20 minutes or until the cheese is golden brown and bubbly.
3 ingredient chicken nuggets
0 net carbs
1 can flaked chicken (go with a premium brand)
1 small egg
1/2 cup marble cheese
Sea salt (your preference on how much)
Mix your chicken egg and cheese until fully combined.
Pat into chicken nuggets
Use parchment paper and throw on a sheet pan.
Bake at 375°F 20 mins, flipping half way through
Broil for 2 mins on each side when cooking time is done.
You want that crunch
Dip in Buffalo wing sauce, SF BBQ, SF Honey Mustard.
5 oz ground beef or turkey
1.4 oz shredded cheese
1 dill pickle spear, chopped
2Tbs thousand island dressing
2 c shredded lettuce
1/2 c diced tomatoes.
Homemade Thousand Island Dressing:
1 c Duke’s Mayo
1/2 c no sugar added ketchup or G. Hughes SF ketchup
1 c SF sweet relish
A pinch of salt & pepper
