My Golden Chicken✨🌞 I baked this chicken in my German cooker for 25 min at 475 F. But you can use a Dutch oven or casserole dish! I love this recipes because it has tons of flavor, is healthy, and also tastes great in the summer. My chicken turned out super tender as well (because of the acidity of the citrus and the sodium in some of the condiments I used). Try it for yourself! If you love citrus, ginger flavor— you’ll like this!

1/4 c Melted butter
1 beaten egg
2 T rice vinegar
2 T grapefruit juice
1 tsp Dijon mustard
Juice of half a lemon
Salt + Pepper
Ground ginger
Ground mustard
Parsley
1/4 cup oat flour (or any sort of flour to thicken the mixture that goes on the chicken)
Teaspoon turmeric (or more… I like more turmeric)
Then I added clementines slices to the chicken while it bakes. I think it adds flavor/garnish.

I ate this with bread or rice and vegetables!

What’s for dinner meal prep this week:

🥦Steamed broccoli
🐓Diced, Grilled chicken cooked in sesame oil
🍚Quinoa cooked in 🥥coconut milk or coconut water
All topped with salt/pepper, coconut aminos (soy sauce substitute), and Makoto’s ginger dressing (look it up— it’s amazing. You can get it at Kroger)

Sara’s Cinco de Mayo Bowls

- 2 lb Turkey + Cooked w/ taco seasoning (low sodium)
- Three bell peppers (doesn’t matter what color) chopped/diced
- 1 mango (diced…or pineapple)
- **** lightly sauté mango and bell peppers with lime juice and chili seasoning
- 1-2 cans of black beans (drained and rinsed— it gets off the extra sodium)
- 1 cup quinoa (cooked as instructions say on back of the package)
- 3 cups spinach (steamed or sautéed)
- Sprouts + Mexican sauce of choice for topping!!
- MAKES 6-7 servings. I ate 1-2 servings for dinner tbh hehe.

I always meal prep my dinners because that is where I have the most trouble sticking to my diet (with the exception of my going out to eat 1-2 times during the week or something) you can also do this with your lunches!!

SNACKS FOR THIS WEEK: mango popsicles, cut up mango/papaya, and cucumbers w/ fun street taco dip!

Hey gals! Sara Talley here. So, this has been in the works for quite some time. If you know me, you know that I have always had such a passion for nutrition, fitness, and all things wellness-related. I am still working full time as the dietitian at Magnolia Regional Health Center, but I also had a desire to create a small community of my own! I will soon start my nutrition consulting + personal training business called Glutes and Grapefruits (as you can see— this is the business's page). Most of my work will be online, but, I also plan to have an office space and do some training/group classes at Pro 31 women's gym in Corinth, MS (next to Chick Fil A on Hwy 72) I want to offer services to women, whether nutrition consulting, building a workout plan, or both! So that all the gals in this little wellness tribe can thrive and feel their most fabulous self. See the link to my website at the top of this page to see the service packages that I offer :)

Not sure if you want to have a nutrition consultation or maybe you already have your fitness regimen established?? WONDERFUL! You should still join this page. I plan to make a Facebook group where we all can share what has (or hasn't) been working for us on a weekly discussion board. (e.i. your fav healthy dessert recipe, new exercise you've been trying, your favorite way to decompress after a long day, or your fav cheat meal! etc!)
