Our Keto Cheeseburger Casserole bake is loaded with bacon, pickles, mustard, and cheddar cheese – just like a hamburger but without the bun, a delicious low carb dinner.
This Keto Cheeseburger Casserole recipe makes 6 serves. 1 serving has 4g net carbs.
Store leftover Keto Cheeseburger Casserole in the fridge for up to 4 days, or freeze for up to 3 months.
Keto Cheeseburger Casserole Ingredients
1 teaspoon Olive Oil
1 pound Ground Beef
½ teaspoon Salt
¼ teaspoon White Pepper ground
5 ounces Bacon diced
1 small Onion diced
2 Dill Pickles sliced
¼ cup Sugar-Free Tomato Ketchup
¼ cup Yellow Mustard
¼ cup Low Carb Mayonnaise
2 tablespoons Worcestershire Sauce
1 teaspoon Garlic Powder
1 cup Cheddar Cheese shredded
3 large Eggs
1/4 cup Heavy Cream
Instructions
Preheat your oven to 190C/375F.
Place a large saucepan over high heat, add the oil, ground beef, salt, and pepper. Break the beef up and cook until browned, then remove from the heat.
Place the bacon into a nonstick frying pan over high heat and saute until crisp, drain off the fat and add the bacon to the beef mixture.
Add the onion, pickles, ketchup, mustard, mayonnaise, Worcestershire, garlic powder, and half the cheddar into the beef mix. Mix well.
Add the beef mixture to a casserole dish.
In a bowl, whisk together the eggs and cream, pour over the beef mixture.
Top with the remaining cheddar and bake for 30 minutes.
Serve immediately.

Crock Pot Green Enchilada Chicken Soup 😋
*2.5 lbs of boneless skinless Chicken Breasts or thighs
*28 oz can of Green Enchilada sauce
*24oz of Chicken broth
*1 Cup half and half or heavy whipping cream
* 2 Cups Monterey jack cheese (I use whatever I have, usually cheddar and mozzarella)
*4 oz cream cheese, cubed at room temp
*4oz Green Salsa ( salsa verde)
*Salt and Pepper to taste
1. In Crock Pot add Chicken breasts or thighs, green enchilada sauce and chicken broth...cook on low for 6-8 hrs
2. About 30 min before serving Remove Chicken and Shred. the add shredded chicken, Jack Cheese, Cream Cheese, 1/2 and 1/2 and green salsa to crock pot. stir until cheeses are melted. * you can add additional salsa for taste.
3. You can top with sliced avacado, Cilantro, green onion and sour cream and add strips of Crisp tortillas if you like!.

I went to Aldi’s and grabbed my favorite keto breads. I get my bagels, bread and varies products that I can eat and I don’t miss eating bread like before.

Steps to make the roll ups
Get prepped
Preheat the oven to 350 degrees F, and slice the crusts off the bread
Lay out 2 shallow dishes
2. Flatten the bread and mix up the filling and coating
Using a rolling pin, flatten the bread out.
Combine the cream cheese and swerve powdered sugar until smooth. Combine the swerve brown sugar and cinnamon until well combined and add to one of the shallow dishes. In the other, add the melted butter.
Assemble
Spread each slice of bread thickly with the cream cheese mixture.
Roll up tightly
Dip in the butter.
Then dip the sugar and place on a baking sheet crease down. You can toothpicks to keep it in place
4. Bake
Bake for 20 minutes until lightly browned.
Devour
