- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1 tablespoon vegetable oil
- Salt and pepper to taste

:
1. In a small bowl, mix together soy sauce, oyster sauce, and cornstarch. Set aside.
2. Heat the vegetable oil in a large pan or wok over medium-high heat.
3. Add the minced garlic and grated ginger to the pan and sauté until fragrant.
4. Add the beef slices to the pan and cook until browned, about 2-3 minutes.
5. Add the broccoli florets to the pan and stir-fry for another 2-3 minutes, or until the broccoli is tender-crisp.
6. Pour the soy sauce mixture over the beef and broccoli. Stir well to coat everything evenly.

- 1 cup cooked rice (preferably day-old rice)
- 200g beef, thinly sliced
- 2 tablespoons oyster sauce
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 carrot, diced
- 1/2 cup frozen peas
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste

Instructions:
1. In a small bowl, marinate the beef slices with oyster sauce for about 10 minutes.
2. Heat the vegetable oil in a large pan or wok over medium heat. Add the minced garlic and diced onion and sauté until fragrant.

Chicken Adobong Batangas sa kamias n tuyo at tumeric.

- 1 whole chicken, cut into serving pieces
- 1/4 cup soy sauce
- 1/4 cup vinegar (preferably cane vinegar)

- 4 cloves garlic, minced
- 1 onion, chopped
- 2 tablespoons cooking oil
- 2 tablespoons brown sugar
- 1 bay leaf
- 1 cup water
- Salt and pepper to taste
- 1/3 cups of kamias n tuyo

1. In a bowl, combine soy sauce, vinegar, turmeric powder, minced garlic, and chopped onion. Mix well to create the marinade.

3. Heat the cooking oil in a large pan or pot over medium heat. Add the marinated chicken pieces, reserving the marinade for later use. Sear the chicken until browned on all sides.

4. Pour in the reserved marinade and add the brown sugar, bay leaf, and water. Stir well to combine all the flavors.

5. Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let the chicken simmer for about 30-40 minutes or until the chicken is tender and fully cooked.

6. Once the chicken is cooked, add kamias na tuyo into the adobo. This will give the dish a unique flavor and texture.

Beef short ribs with homemade mashed potatoes!

Ingredients:
- 4 pounds beef short ribs
- Salt and pepper to taste
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 carrots, diced
- 3 celery stalks, diced
- 4 cloves garlic, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons Worcestershire sauce
- 2 tablespoons tomato paste
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 4 cups mashed potatoes (homemade or store-bought)
- Fresh parsley, chopped (for garnish)

Instructions:
1. Preheat your oven to 325°F (163°C).
2. Season the short ribs generously with salt and pepper on all sides.
3. Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat. Sear the short ribs on all sides until browned. Remove them from the pot and set aside.
4. In the same pot, add the diced onion, carrots, and celery. Cook until softened, about 5 minutes. Add the minced garlic and cook for another minute.
5. Stir in the beef broth, red wine (if using), Worcestershire sauce, and tomato paste. Bring the mixture to a simmer.
6. Return the short ribs to the pot, along with any drippings. Add the fresh thyme and rosemary sprigs.
7. Cover the pot with a lid and transfer it to the preheated oven. Braise the short ribs for 2.5 to 3 hours, or until the meat is tender and easily falls off the bone.
8. While the short ribs are braising, prepare the mashed potatoes according to your preferred method. You can boil and mash peeled potatoes, or use store-bought mashed potatoes as a time-saving option.
9. Once the short ribs are done, carefully remove them from the pot and set aside. Skim off any excess fat from the cooking liquid.

- 1 red bell pepper, diced
- 1 carrot, diced
- 1/2 cup frozen peas
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon oyster sauce
- 2 tablespoons vegetable oil
- Salt and pepper to taste

1. Heat vegetable oil in a large skillet or wok over medium heat.
2. Add minced garlic and cook until fragrant.
3. Add the mixed seafood and cook until they turn opaque.

8. Continue cooking for a few more minutes until everything is heated through.

3. Once the pork is tender, remove it from the pot and let it cool. You can refrigerate it for a few hours or overnight to dry out the skin, which helps in achieving crispiness.

- 1 onion, chopped
- 1 red chili pepper, chopped (optional, for added heat)
- 1 tablespoon mayonnaise
- 1 tablespoon calamansi juice (or lemon juice)
- 1/4 cup chopped green onions
- Cooking oil for frying

Instructions:
1. In a bowl, combine soy sauce, vinegar, brown sugar, minced garlic, and chopped red chili pepper (if desired) to make the adobo marinade.
2. Marinate the salmon pieces in the adobo marinade for at least 30 minutes, or overnight for a more flavorful taste.

Ingredients:
- 1 lb ground pork
- 1 cup chopped onions
- 1 cup chopped bell peppers (red and green)
- 1/2 cup chopped carrots
- 1/2 cup chopped celery
- 1/4 cup chopped green onions
- 1/4 cup soy sauce
- 2 tablespoons calamansi juice (or lemon juice)
- 2 tablespoons mayonnaise
- Lumpia wrappers
- Cooking oil for frying

Instructions:
1. In a large pan, heat some oil over medium heat. Add the ground pork and cook until browned.
2. Add the onions, bell peppers, carrots, and celery to the pan. Sauté until the vegetables are tender.
3. Stir in the soy sauce and calamansi juice. Cook for a few more minutes to allow the flavors to meld together.
4. Remove the pan from heat and let the mixture cool down slightly.
5. Once cooled, stir in the chopped green onions and mayonnaise.
6. Take a lumpia wrapper and place about 2 tablespoons of the sisig mixture in the center. Fold the sides inward and roll it tightly into a cigar shape. Seal the edge with a little water.
7. Repeat the process until all the sisig mixture is used up.

2. Add the chopped onions and bell peppers to the pan and sauté until they soften.
3. Stir in the soy sauce and calamansi juice. Cook for another 2-3 minutes.
4. Remove from heat and let the mixture cool slightly.
5. Stir in the chopped green onions and mayonnaise until well combined.
6. Take a lumpia wrapper and spoon about 2 tablespoons of the sisig mixture onto the center. Fold the sides of the wrapper towards the center, then roll tightly.
7. Seal the end of the wrapper with water to ensure it doesn't come undone.
8. Repeat the process with the remaining wrappers and sisig mixture.
9. Heat oil in a deep pan or fryer to about 350°F (175°C).
10. Carefully add the lumpia to the hot oil and fry until golden brown and crispy, about 3-4 minutes.
11. Remove from the oil and place on a paper towel-lined plate to drain excess oil.
12. Serve the lumpia sisig hot with a dipping sauce of your choice.
