“Sugar Cookies” directions:⠀
🌸 Preheat oven to 350F ⠀
🌸 Combine 1/3 cup GF flour, 2 tbsp coconut flour, and 1/2 tsp baking powder⠀
🌸 Stir until mixed⠀
🌸 Add 1/4 cup plant-based yogurt, 1 tbsp maple syrup, and a splash of vanilla extract. ⠀
🌸 Stir again until evenly mixed. ⠀
🌸 Form cookies on a baking tray, then bake for 9-10 minutes. ⠀

Pink pitaya frosting directions:⠀
🌸 Place 2 medjool dates and 1/4 cup raw cashews into your blender and cover with water. ⠀
🌸 Allow to soak for at least 30 mins. ⠀
🌸 Add 1 tsp our pink pitaya powder, a few more splashes of water, and blend. ⠀
🌸 You might need to add more water depending on your blender strength and also how thick you want the frosting. This will make enough for 2 servings. Store in the fridge. ⠀

4. Add wet mixture into dry and mix to combine. Divide the dough into 8 parts.⠀
5. Form each part of the dough into balls and make a well in the center using your finger. Place a spoonful of chia jam into each well.⠀

1. In a bowl, mix almonds, pecans, maple syrup and coconut sugar.⠀
2. Spread nuts onto a parchment paper lined baking tray. Bake at 350°F for 10min.⠀
3. In a separate bowl, combine pink pitaya powder, coconut flour and salt⠀
4. Add baked nuts into the mixture from step #3 immediately after they come out of the oven, and shake to coat (**nuts and sugar mixture are extremely hot, so be careful not to touch them directly🔥)⠀

🎄Ingredients:⠀
1/4 cup cacao butter⠀
1/3 cup cashew butter⠀
3 Tbsp maple syrup⠀

2 tsp cacao powder ⠀
Pinch of salt⠀
1/4 cup pistachio + more for topping⠀
1/2 cup puffed rice⠀
1/3 cup dried strawberries + more for topping⠀
1/2 cup mini vegan marshmallows ⠀

🎄Method:⠀
1. In a heat proof bowl, add cacao butter, cashew butter and salt. Place the bowl over a pot of shimmering water to make a double boiler. Stir until cacao butter is melted and combined with cashew butter.⠀
2. Remove the bowl from the pot and add maple syrup, pink pitaya powder and cacao powder. Stir well until combined.⠀
3. Add pistachios, puffed rice and dried strawberries into a bowl and fold in. ⠀
4. Transfer the mixture into a parchment paper lined tray and flatten the surface. Sprinkle marshmallows, chopped pistachio and crushed dried strawberries over the top.⠀
5. Refrigerate for a few hours until set. Cut into bite size pieces and enjoy!🎁🎁

3. Make roasted delicata squash: In a bowl, toss delicata squash slices with olive oil, smoked paprika powder, garlic powder, onion powder, salt and pepper to evenly coat. Place the delicata squash onto the same baking tray with the Brussels sprouts. Bake together at 350F° for 15min.⠀

4. Make the dressing: In a blender, add all the ingredients for the dressing and blend until smooth.⠀

5. In a bowl, add kale and 3 Tbsp of pink horseradish dressing and massage well.⠀

2. In a bowl, combine cooked tapioca pearls, coconut sugar and 1 Tbsp of water. Let the mixture sit for 10 min. ⠀
3. In a blender, add pink pitaya powder and 2 Tbsp of water. Blend until smooth.⠀
4. In a glass, add tapioca pearls with coconut sugar syrup, ice cubes and plant based milk. Pour over pink pitaya mixture and mix well. Enjoy!

🌺Ingredients🌺⠀
⠀
For the base:⠀
• 1/4 cup almonds⠀
• 1/4 cup pecans⠀
• 2 dates, pitted⠀
• 1/2 teaspoon vanilla extract⠀
• Pinch of salt⠀
⠀
For the fudge layer:⠀
• 3/4 cup cashew butter (raw cashews blended in a blender until creamy consistency is formed)⠀
• 1/4 cup coconut oil, melted⠀
• 1/4 cup maple syrup⠀
• 3 Tablespoons organic pink pitaya powder⠀
• 1 Tablespoon lemon juice⠀
• Pinch of salt⠀
⠀
🌺Directions🌺⠀
1) In a food processor, add all ingredients for the base. Blend until crumbly consistency.⠀
2) Transfer the crumble into a container and press to make a flat layer.⠀
3) Into a bowl, add cashew butter, coconut oil, maple syrup, lemon juice and salt. Stir to combine to make white fudge.⠀
4) Save 2 Tablespoons of the white fudge in a separate bowl and add pink pitaya powder to the remaining fudge.⠀
5) Pour the pink fudge mixture over the base and flatten. Pour remaining white fudge over the top layer and create a swirl.⠀
6) Freeze for 1 hour. Cut and enjoy!
