Qui il Margarita diventa uno statement. Tequila e Mezcal si fondono al lime e al Cointreau in un velluto di mandorle salate: omaggio alla tradizione dolciaria siciliana a base di mandorle e alla Chiesa di Santa Caterina – da cui questo cocktail prende il suo nome – celebre oltre che per la sua incredibile bellezza, per l'importante eredità storica tramandata attraverso la pasticceria conventuale che costituì una fonte di reddito importante per la sopravvivenza del monastero.

Here Margarita turns into a statement. Tequila and Mezcal are combined to the lime and the Cointreau in a velvet of salted almonds: that's a tribute to the sicilian almond-based pastry tradition, and to Santa Caterina Church – after which this cocktail is named – famous for its breathtaking beauty and for its historical heritage passed down through the sweets invented by the nuns that formed a significant source of income for the monastery guaranteeing its survival over the centuries.

Alessia è la nostra executive Bar Chef.
Nata a Palermo nel '93 si è formata alla MIXOLOGY Academy di Roma e ha proseguito la sua carriera a Londra e in Francia. Specializzata in cocktail-pairing, ovvero l'arte del concepire i cocktail in abbinamento alle portate per creare sinergie e combinazioni uniche, la sua firma è associare una storia dietro alla creazione di ogni drink che lei stessa definisce "emozionali": oltre ai grandi classici e ai nostri signature, Alessia è infatti esperta in tailored cocktail, creati ad hoc e su misura in base ad ogni personalità o stato d'animo.

Born in Palermo on February 12th 1993, she trained at the MIXOLOGY Academy in Rome and she continued her career in London and France. She's expert in cocktail-pairing, the art of conceiving cocktails in combination with dishes to create unique synergies and pairings. Her signature is thinking of a story behind every drink, which she describes as “emotional”: in addition to the classics and our signature, Alessia creates tailored cocktails to match everyone's personality and mood.
