“Tikoni Mini Masala Mathri”
Ingredients:-
* 1+1/2cup Maida
* 1/2 tsp Black Pepper
* 1/2 tsp Ajwain
* 1 tbsp Kasuri Methi
* 1 tsp Jeera Powder
* 1/4 tsp Soth Powder
* 1 tbsp Crushed garam
masala powder
* 1/4 cup Oil for moin
* 1/4 cup Water
* Salt and red chilli powder according to taste
* Extra Oil for frying
Method :-
* Take maida, and all dry masala ,
mix it in a bowl , now add 1/4 cup oil and rub it till crumbly texture and now with help of water knead the dough and keep it for rest for 10 mins.
* Now take marble size ball and
make small and thin roti, now fold it half and then in another half to form triangle shape , repeat the process for other
* Now fry these on
slow flame till it’s turn to light golden brown .Repeat process for other mathri ,now let it cool down.
* Now it with on this

“Dahi Papdi chaat”
Ingredients for Papdi:—
* 2 cup Maida
* 1 tsp Ajwain
* 1/4 cup vegetable oil
* Salt according to taste
* 1/2 cup water
* Oil for frying
Ingredient required for assembling Papdi chhat :—
* Papdi
* 1 cup boiled potatoes(diced into small pieces)
* Fresh Yogurt/Dahi/curd as per your requirement
* Tamarind chutney as per your requirement
* Green chutney as per your requirement
* Salt,red chilli powder ,jeera powder and chhat masala powder as per your requirement
* Some crushed dried pudina(opt)
* Some sliced onion
Method of making papdi :—
* In a blow add maida,ajwain,salt
and oil, rub it with your hands to form crumbly texture,now add water and mix it to make a tight dough. Keep this dough for rest for 10 mins.
* After 10 mins knead dough for
5-6 mins. Now heat oil on medium flame in heavy bottom pan and take lemon size dough ball to make 5” thin roti 🫓, prick this roti by fork so that while frying it does not puff up.
* Now fry this on low
flame till it becomes golden brown, repeat process for other papdi.
* Now its time to assemble
.Put papdi in a plate add dahi, tamarind chutney,green chutney, potatoes, onion and all dry masala as per your taste.Now is ready enjoy it with your family and friends.Happy Fooding 🙏

“Tawa kulcha”
Ingredients:—
1. 3 cup Maida
2. 1 tsp Baking powder
3. 1/4 tsp Baking soda
4. 1 tbsp salt
5. 2 tbsp Powdered sugar
6. 1/2 cup Curd/Dahi(thick)
7. 3/4 cup Lukewarm Milk
8. 1 tbsp vinegar
9. 2 tbsp oil
10. Some Butter to put on kulcha
Method:-
* Take a bowl, put maida,baking
powder,baking soda,salt and sugar, mix well now add curd and vinegar,mix once again to form crumbly texture,now add milk and mix it to form a dough, now add oil and knead the dough for 3-4 mins. After kneading keep dough for rest for 1/2 an hour.
* After half an hour knead dough
for 7-8 mins and keep dough for rest once again for 3-4 hours.
* Now kulcha dough is ready,now
keep tawa ready on high flame, take cricket size dough ball roll it into 6 inch thick roti, now apply generous amount of water on one side of kulcha, stick water side part of kulcha on hot tawa, now flip tawa to cook kulcha by rotating it from all sides. Now flip tawa once again and remove kulcha with the help of a spatula and apply butter over it. Repeat process for other kulchas
* Now is
ready to eat enjoy it with with your family and friends.Happy Fooding 🙏

“Custard Almond Milk”
Ingredients:—
* 500 ml + 1/8 cup milk.
* 1+1/2 tbsp Custard Powder
(Vanilla flavour).
* 1/2 cup Sugar(add or less
according to taste).
* 1/4 cup almonds Powder(opt).
* Some chopped almonds for
garnishing.
Method:-
* Take heavy bottom pan, pour
milk in it and bring to boil on high flame,till milk comes to boil mix custard powder with 1/8 cup milk n mix it.
* Now as milk comes to boil add
Custard powder mixture to boiled milk,stir continuously for 5-6 minutes on medium heat.
* Now add sugar and almond
powder into it,stir it for 1 min and off the flame, now cool it first at room temperature and then in refrigerator.
* Now is
ready to serve enjoy it with your family and friends.Happy Fooding 🙏.

“Cheesy Corn Uttapam”
Ingredients:—-
* 3 cup leftover idli Batter
* 1/2 cup sweet corn
* 1/2 cup Mozzarella cheese
* 1 tbsp Chaat Masala
* 1/8 cup Water
* Salt and red chilli powder
according to taste.
* Some Oregano and Red chilli
flakes to sprinkle over it.
* Some vegetable oil to pour over it.
Method:—-
* Take idli batter in a bowl add
water, chaat masala,salt and red chilli powder in it, mix well.
* Now put nonstick tawa on
medium heat and pour idli batter with the help of ladle and spread it little, wait till you see holes over it, now put some sweet corn over it, sprinkle little oil with the help of brush, now flip it for 30 sec and cook,turn it over once again, now put mozzarella cheese and sprinkle oregano and red chilli flakes over it, cook it for 30 sec and remove it on some plate and repeat the process for other .
* Now
is ready to eat with some sauce.Enjoy it with your family and friends.Happy Fooding 🙏

“Dry Masala Arbi”
Ingredients:-
* 500 gms Arbi(washed and
dried and cut into long strips into slightly thick pieces).
* 1/2 cup Mustard oil
* 1/2 tsp Fenugreek seeds
* 1/4 tsp Asafoetida
* 2 tbsp Onion tomato paste
(I used 1 onion and 2 tomatoes of medium size for this paste).
* 1/2 tsp Ginger garlic paste
* 2 tbsp Dhania powder
* 1/2 tsp Kashmiri mirch powder
* 1/4 tsp Haldi powder
* Salt and red chilli powder
according to taste
Method:-
* Take heavy bottom pan, put it on
high flame, pour mustard oil in it and heat till smoking point.
* Now slow down flame and add
asafoetida and fenugreek seeds, now immediately add arbi and sauté on high flame for 2 mins.
* After 2 mins, once again slow
down flame and add onion-tomato paste, ginger garlic paste and all dry masala along with salt and red chilli powder, now sprinkle hand full of water on it and close lid and cook for 3-4 mins.
* After 3-4 mins open lid and
cook it open till you see oil over it. Now is ready, enjoy it with chapatis or parantha with your family and friends. Happy Fooding 🙏

“Cream Puff”
Ingredients:-
* 1/2 cup Water
* 3/4 cup Milk
* 115 gms Butter unsalted
* 1 cup Maida
* 4 eggs
* 1 tsp powdered sugar
* 1/2 tsp Vanilla essence
Ingredients for garnishing
* Whipping cream (any flavour)
* Liquid chocolate for pouring on top
Method:-
* Take sauce pan, put water, milk
butter and powderd sugar and cook
for 1 min on medium heat,now add maida /apf to it and stir continuously till 2-3 mins. Now off the flame and let batter cool for 3-4 mins.
* Now in this batter add egg 1 by 1
and beat it with electric be**er also add vanilla essence and bring to a smooth paste.
* Now preheat oven @220 degree
for 10 mins, meanwhile fill piping bag with batter and drag this batter on baking tray in the shape you want.
* Now bake it @220 degree for
15-20 mins or till golden brown. After they are baked cool it completely before piping whipping cream into it.
* You can use of
any flavour after filling cream pour some liquid on and they are ready to be served. Enjoy it with your family and friends.Happy Fooding 🙏

“Makhane Paneer”
Ingredients:-
* 300 gms Paneer
* 1/2 cup Mustard oil
* 1 cup whole makhane
* 1/2 cup powdered makhane
* 1 cup onion and tomato paste (for this I used 1 onion medium size and 2 tomatoes of medium size)
* 1 tbsp Ginger Garlic paste
* 1+1/2 tbsp homemade garam masala paste
* 2 Black cardamom
* 1 Bay leaf
* 3-4 Laung
* 1 tbsp Kashmiri Mirch powder
* 1/4 tsp Haldi powder
* 1+1/2 Dhania powder
* 1 tsp Saunf powder
* 1/2 cup Milk
* 1/4 cup fresh cream
* Salt and red chilli according to taste
* Hand full of chopped green coriander
* Water as per requirement
Method:-
* Take heavy bottom pan, put on high flame,pour oil and bring it to smoking point,then slow down flame and put black cardamom, bay leaf and laung in it,wait till aroma comes and immediately put onion and tomato paste in it,turn on flame to medium and sauté for 1 min then add ginger garlic paste and garam masala paste and wait till you see oil over it
* Now add 1/4 cup water and add all dry masala in it,now add salt and red chilli powder according to taste your taste and cook till oil comes over it.
* Now add 2 cup water,milk, powdered makhane and whole makhane in it,cook gravy for 6-7 mins till it becomes slightly thick, now add paneer to it, cook it for another 2-3 minutes then off the flame and add cream and chopped green coriander on it.
* Now your is ready to serve eat it with rice, roti or naan with your family and friends. Happy Fooding 🙏

“Chocolate Cupcake 🧁“
Ingredients:—
🧁 200 gms Brown sugar
🧁 2 Eggs( at room temperature)
🧁 1 tsp chocolate essence
🧁 125 ml vegetable oil
🧁 1+1/2 cup Maida
🧁 1/2 cup unsweetened cocoa powder
🧁 1/2 tsp Baking powder
🧁 1/2 tsp Baking Soda
🧁 1 cup Buttermilk/curdled milk
Ingredients for frosting
🧁 200 ml whipped cream
🧁 2 -3 drops of blue and green food colour
Method:—
🧁 Preheat oven @180 degree for 10 minutes.
🧁 Meanwhile sieve maida,cocoa powder, baking soda and baking powder in a bowl and keep aside.
🧁 Now in another bowl take oil and sugar,beat till they combine well,now add egg 1 at a time and beat till frothy and at this point add chocolate essence.
🧁 Now add dry ingredients little by little through cut and fold technique till no lumps found.Pour this batter in cupcake mould and bake it for 10-15 minutes @180 degree.Check it by inserting toothpick to comes out clean.After they are baked properly let them cool for at least for 2-3 hours in refrigerator.
🧁 Now take whipping cream with your desired colour’s and pipe it on cupcake in the way you all want. Enjoy these with family and friends.Happy Fooding 🙏

“Green chilli pickle”
Ingredients:—
* 500gms Thick Green Chilli (properly washed and dried)
* 200ml Mustard Oil
* 2 tbsp Lemon juice
* 1/4 cup White vinegar
* 1/8 cup Thick Saunf
* 1 tbsp Rai
* 1/2 tbsp Ginger powder
* 1 tbsp Amchur Powder
* 1/2 tbsp Laung
* 1/2 tbsp Black Pepper Powder
* 1 tbsp Black Salt
* 1 tsp Haldi Powder
* 1/8 cup Salt
* Red chilli powder according to taste
Method:—
* Heat mustard oil in a heavy bottom pan on high flame as it reaches to smoking point, off flame and let it cool completely.
* Now take saunf,rai,ginger powder, amchur powder,laung,black pepper,black salt in a grinder to form a powder.Now mix haldi powder, salt and red chilli powder(according to taste.keep aside in a bowl
* Now take green chilli make a slit in between and fill powder masala in it as per requirement. Repeat the process for all green chilli.
* Now fill these chillies in a dry jar add lemon juice,white vinegar and mustard oil. Close the jar, mix it by shaking it once.
* Now keep this in direct sunlight for at least 3 hours for 10 days.
* After 10 days your green chilli pickle is ready.Enjoy it with rice, roti or parantha. Happy Fooding 🙏

“Old is always gold”
This can be said when we eat Roorkee’s famous “Andhe ke chhole”.This is really mouthwatering dish with less mirch and lots of flavours and taste.Its can’t be explained in words but can be feel when we eat this.Uncle(in the pic) father’s who can’t see use to sell these chhole. I think it’s almost more than 50 yrs they are selling these delicious chhole in Roorkee, they sell in the evening time only, near “Tyagi Market”.Do visit once to enjoy this famous “Andhe ke chhole”.Happy Fooding

“Kesari Lassi”
Ingredients:——
* 1+1/2 cup Thick curd/Dahi (chilled)
* 2 tbsp Fresh Malai/ Cream
* 1/4 powdered sugar(or according to taste)
* Few Strings of kesar
* Top layer of curd/dahi (remove top layer of dahi with the help of a spoon)
Method:——
* Take blender put dahi, malai, powder sugar and few strings of kesar in it, now blend it for 1/2 min give rest of 1/2 min and repeat the process till you see froth on top of it.
* Now remove it in glass add 1 tbsp of top layer of dahi on it, keep it for 1 hour in refrigerator, and serve it chilled.

🍫Eggless Chocolate cookies🍫
Ingredients +++
* 200 gms unsalted butter (I used homemade)
* 2 cup Maida/All purpose flour
* 1 cup + 2 tbsp powdered sugar
* 1/2 cup unsweetened cocoa powder
* 1 tsp baking powder
* 1 tsp chocolate essence
* 1/2 tsp vanilla essence
* Choco chips for topping
Method+++
* Take butter, sugar and essence in a bowl and mix till light and fluffy.
* In this mixture add maida, cocoa and baking powder by passing through a sieve, combine all the ingredients with spatula to form a dough.
* Now preheat oven @180 degree for 10 minutes, meanwhile grease baking tray and make lemon size ball of chocolate dough, press it lightly to give cookie shape top some choco chips and repeat the process for other cookies.
* Now bake these cookies for 15 minutes @180 degree at convection mode. After 15 minutes off the oven and leave cookies for 5 more minutes in oven.
* After 5 minutes remove cookies from oven, cool it and then enjoy it with your family and friends with a cup of coffee or tea.

“Chicken Biryani“
Ingredients ===
* 500 gms chicken(washed)
* 500 gms Biryani rice( washed and soak in water for 1 hour)
* 3/4 cup Dahi/ curd
* 1 big tomato in paste form
* 3/4 cup Biryani Masala (I use homemade)
* 500 gms fried onion(crushed)
* 2 cup onion oil(in which onion is fried)
* 2 tbsp green chilli paste
* 2 tbsp coriander leaves paste
* 4-5 green chilli
* 1+1/2tbsp ginger garlic paste
* 1 tbsp garlic paste
* 1 tbsp Laung,1 tbsp black pepper,2 black cardamom,5 green cardamom,2-3 cinnamon stick,1 javitri flower
* 3 tbsp lemon juice
* Hand full of dhania and Pudina
* Salt according to taste
* 1/4 tsp haldi powder
* 1/2 cup boiled rice water
* 2 tbsp milk with few strings of saffron
Method ===
🧉Take bowl put chicken,dahi,
salt,1 tbsp lemon juice,ginger garlic paste,green chilli paste,400 gms crushed fried onion,coriander leaves paste, mix it well and kept aside for 1 hour.
🧉Now in a big vessel boil water for rice on high flame, put salt,2 tbsp lemon juice,green chilli,laung,black pepper, cinnamon stick, javitri,green
cardamom ,black cardamom and 1/2 cup onion oil in it and bring it to boil, let all masala boil for 5 minutes and after that remove all masala from water with the help of a strainer.Now in this water add rice, boil till it is 90% cooked.Then strain rice from water and keep it aside.
🧉Now take vessel in which Biryani is going to be prepared, put it on high flame, pour 1 cup fried onion oil,add garlic paste sauté it for 2 minutes and then add marinated chicken and tomato paste in it and cook till oil comes out from it, off the flame and remove 1/2 cup masala in a bowl from it,add boil rice water and 1/2 cup onion oil, keep it aside.
🧉Now layer 1/2 rice on chicken, put
crushed fried onion,green chopped coriander and pudina , 1/2 masala with rice and oil and some saffron milk.Now add another layer of rice and repeat some layering process. Now put rolled atta dough on all side of vessel,cover it with lid and cook it for 5 minutes on high flame and then cook it for 7-8 minutes on slow flame. After it off the flame and let it remain like this only.
🧉After 5 minutes is ready to eat , enjoy it with your family and friends.Happy Fooding🙏

Red Velvet coconut Cookies 🍪
Ingredients:—
* 250gms Maida/All purpose flour
* 10gms Cocoa powder (unsweetened)
* 150gms unsalted butter (I used homemade white butter) @ room temperature
* 150gms Brown/Castor sugar
* 1 egg temperature
* 1/2 tsp Baking Soda
* 50gms desiccated coconut
* 2 tbsp Curd/Dahi
* 1 tsp vanilla essence
* 2-3 drops of red food colour
Method:-
* In a bowl put butter and sugar and beat it till light and fluffy, now add egg and vanilla essence and mix it once again, now combine maida, cocoa powder,baking soda,desiccated coconut and curd to form a soft dough.
* Now cover dough and refrigerate for 1 hour.
* After 1 hour remove dough from refrigerator and make cookies in the desired shape you want.
* Now preheat oven @180 degree for 10 minutes and bake cookies in preheated oven 8-10 minutes @180 degree
* After it is baked, cool cookies properly,now are ready to eat enjoy it with your family and friends.Happy Fooding 🙏

“Egg Mayo Sandwich 🥪“
Ingredients:—
* 2 Hard boiled egg 🥚
* 1/4 cup Mayonnaise
* 4 Slices of bread 🍞
* 1/4 tsp black pepper powder
* Some amount of melted butter to put on sandwich maker
Method:—
* Separate boiled egg white from yolk.Now take bowl,add mayonnaise, yolk and black pepper powder beat it in a smooth paste, now chopped egg white into small pieces and mix it in mayo batter, keep this filling aside.
* Now take 1 bread slices, spread mayo filling on it and cover with another bread slice, repeat the process for other bread.
* Now take sandwich maker,heat it,put some butter on both side of heating plate, now put bread slices in it and cook till it turns to golden brown.
* Now your are ready enjoy it with your family and friends

🙂🙏Today I am sharing with you my most favourite recipe “Sarson Mutton”in my style. This recipe is very close to my heart as I grown up eating this mutton.Hope you all will like it and if u like my recipe plz like n share it and do mention ._.rasoi and let me know in comment section how you like the recipe.
“Sarson Mutton”
Ingredients:
* 1 kg Mutton (properly washed)
* 1 kg Sarson leaves (properly washed and finely chopped)
* 1 cup Mustard oil
* 3 Black cardamom
* 5 cloves
* 1 (1 inch) piece cinnamon
* 2 Bay leaves
* 350 gms finely chopped onion
* 400 gms Tomato paste
* 5-6 chopped green chilli
* 2+1/2 tbsp ginger garlic paste
* 1+1/2 tbsp homemade garam masala paste
* 3 tbsp dhania powder
* 1/4 tsp haldi powder
* 1 tsp Kashmiri mirch powder
* Salt and red chilli powder according to taste
Method:
* Take pressure cooker,pour mustard oil in it and heat on high flame till smoking point.
* Now add black cardamom, cloves, cinnamon and bay leaf sauté for 1 min and now add onion sauté it till golden brown.Now add mutton,salt(according to your taste)and chopped green chilli sauté it for 5 minutes.
* Now add sarson leaves,ginger garlic paste, tomato paste, garam masala paste, dhania powder, Kashmiri mirch powder ,haldi powder, also add red chilli powder according to taste, give a quick mix and close the lid till 5- 6 whistle.
* After 5-6 whistle off flame and open lid to check if mutton is properly cooked, if not then cook it further till mutton is properly cooked with lid closed.
* Now off the flame, open lid and check if mutton is properly cooked then further cook mutton without lid till all water is reduced and you see oil in it.
* Now your is ready to eat ,enjoy it with rice or roti.

🙂🙏Today on the beautiful warmth festival of Lohri I pray for all that all sorrow’s and worries of every human being vanish in the bright fire of Lohri .So I am sharing with you my recipe of “Til Gur Dryfruit Laddu”in my style. “Til Gur dryfruits Laddu”
Ingredients:-
* 250 gms white Til(sesame seeds
* 250 gms Jaggery Powder
* 1 cup mixed dryfruits powder (opt)(almonds,cashew and magaz)
* 1/4 cup water
* 1/8 cup Desi Ghee
Method:-
* Take heavy bottom pan, put til in it and dry roast it on medium flame till light golden brown.Then off flame and put Til in grinder to make a coarse powder.
* Now once again take heavy bottom pan put jaggery powder, water and desi ghee in it,now cook it on medium flame till one boil comes in it,as one boil comes turn off the flame and put coarsely grind Til, dryfruit powder and mix it.

🙂🙏Today I am sharing with you my all time favourite”Tutti Fruti Butter cake”in my style. Hope you all will like it and if u like my recipe plz like n share it and do mention ._.rasoi and let me know in comment section how you like the recipe.
🤗Tutti fruti Butter cake 🍰
Ingredients :-
🍰 1 cup unsalted butter (I use homemade butter)
🍰 1 cup castor sugar
🍰 4 egg(room temperature)
🍰 1 cup All purpose flour/maida
🍰 1 tbsp cornflour
🍰 1/2 tsp Baking Soda
🍰 1 tsp Baking Powder
🍰 1 tsp vanilla essence
🍰 1/4 cup tutti fruti (I use vanilla flavour tutti fruti)
Method:-
🍰Put butter and castor sugar in a bowl ,now beat it with hand/electric blender till light and fluffy.Now add egg one at a time and mix it till its combine perfectly also add vanilla essence and mix it well till it becomes a smooth paste.
🍰Now add All purpose flour, baking soda,baking powder and cornflour by passing through a strainer in the paste and combine it through cut and fold technique in a smooth batter.
🍰Now preheat oven without convection for 10 min. Meanwhile grease your mould and put cake batter in it,tap it to remove air.
🍰Now bake it @180 degree for 35 mins with convection mode.After 35 mins keep cake in oven for 5 mins.
🍰Now is ready to serve, enjoy it with your family and friends. Happy Fooding 🙏
