Scratch & Serve: Episode 1: 當Pizza遇上葡國雞
What a fun experience to collaborate with John. We are both interested in trying out new and innovative dishes, and most importantly, this collaboration DO NOT have any scripts; everything is ‘free-style’! It’s easy to find someone to work with, but it’s hard to find someone who share the same interest and mindset.
同John合作真是一個很有趣的經歷。 我們有共同的興趣,喜歡嘗試一些創新的烹調方法及菜餚配搭。但最重要的是這種合作沒有任何劇本,一切都是即興自由發揮。正因如此,才能使整個視頻更加真實。找一個人一起工作是很容易的,但是要找到一個與自己有共同興趣和想法的人並不簡單。 這個以食為橋樑的合作只是僅僅開始,我們將會繼續努力,同大家分享更多不同的烹飪方法,實踐我們的共同理念「一步到胃」,令觀眾能夠將美食一步一步地帶到朋友、家人及愛人的胃裏。

Who says pizza dough is only for making pizza? Pizza dough can be used for many different things, such as Garlic Bread, Baguette, Pita Bread, Calzones, Crackers, and more!!
Why bother buying it from supermarkets when it’s super easy to make?! Try it out, and you can also easily create 100% handmade and delicious gourmets at home!

材料 [Ingredients]
高筋或中筋麵粉 [All Purpose Flour or 00 Flour]: 250g
橄欖油 [Olive Oil]: 1 tbsp
鹽 [Salt]: 1 tsp
糖 [Sugar]: 1 tsp
酵母水 [Yeast Mix]:
酵母[Yeast]: 7g
暖水(60°C - 65°C) [Warm water]: 185ml
糖 [Sugar]: ½ tsp
**請準備多些麵粉,搓 Pizza Dough 時用 [Please prepare additional amount of flour for kneading purpose]

Time flies.... it has been 2 years since I graduated from Le Cordon Bleu London. In the Diploma de Cuisine programme, I have gained the Superior Cuisine certificate and the diploma in Culinary Management.
During the 12-month programme, there were multiple culinary technique and theory classes, coupled with cheese and wine workshops. These opportunities were conducted by world class experts, from which I had the chance to enlighten my taste buds and flourish my world of flavours.
時間過得真快……我從藍帶廚藝學院畢業已經兩年了。在烹飪文憑課程中,我獲得了高級烹飪證書和烹飪管理文憑。
12個月的課程過得很快,還記得每天就是上堂,烹飪技術、理論、芝士和葡萄酒研討會。這個課程除了令我認識更多美食的烹飪及配搭方法,最寶貴是可以認識到一班有共同興趣,志同道合的朋友,令煮食增添一點樂趣。今天翻看這相片,看看自己也開始在廚藝世界拼起來,很有百般滋味在心頭的感覺。
