EASY BLACK BEANS
Our current favourite way to serve these black beans is in flour tortillas with cheese, chopped onions, and chilies, topped with salad and spicy salsa. I make a big batch for the two of us, and we literally eat them for three days in a row. Once they're gone, we're just waiting for them to appear again in the next rotation 😍

I've been told these are better than meat tacos. I have created a mince that is super tasty with a great texture, and a spicy miso sauce that brings the umami we crave. These veg mince tacos are a recipe where you will not miss the meat—trust me on this one!

This is one of my proudest recipes. It really got me excited when I made them for my niece and nephew (5 and 8 years old), who love their standard chicken nuggets. When I gave these 'nuggets' to them, they ate them just like any other nuggets. Even the adults came back for seconds.

This Red Sauce with Lentils is on our fortnightly rotation because: 1. It's easy to make 2. It stores well in the fridge or freezer 3. It makes enough for 5-6 servings (dinner sorted for a couple of nights) 4. It's super tasty.

Ever noticed those plant protein graphs by weight? For me, I never found them very helpful because, well, yes, it's interesting to know how high in protein pepitas are, but I'm not reaching for pepitas as my main source of protein at a meal, maybe just a handful as a snack or in a muesli bar. That's why I created this chart showing protein per serving instead. 📊💡
And remember, serving sizes are just recommendations. They represent standard portions, but it doesn't mean you have to stick to them. For example, if you love beans but notice tempeh packs more protein punch, why not add an extra serving of beans to your plate? Plant proteins are generally lower in calories and fats than animal products, making it easy to adjust your intake to meet your goals.
