A few years ago, my travel dream came true. I solo travelled to and spent 2 weeks there.

I sampled the food and took in the culture. Wow!

I bought this recipe book and promised to try the recipes. I haven't...yet.

My challenge is to try some of the recipes...maybe with a Jamaican twist!

Some people are emotional eaters, but I'm definitely an emotional cook.

I just love experimenting creating dishes when my emotions are high. 🤡

Breakfast: toasted waffle, grilled bacon & tomato, boiled egg & okra with plain Greek okra.

What are some inspiration dishes you've made?

Dinner was beef bone marrow with mushrooms served with simple fried rice.

I also made some beef bone stock.

Did you know that bone marrow is served in restaurants? That you have to pay for it? Yep, and it's quite delicious.

Today was a bread baking day!

And, just like that breakfast was made.

Can you identify the different ingredients?

It's been an unbelievably busy and somewhat emotional 2 weeks for me.

1. I found homes for my foster cats, Tobi and Kokoro, and not having them has been more emotional than I'd expected.

2. I have begun foster 2 neonatal kittens. They require round-the-clock care. With kitten formula being difficult to find in the country, I've had to make from scratch.

3. But, I have been cooking and eating...more meat than I care to. Most of tge meats are precooked and bought.

4. I had one order of my Coconut Cake, but my coconut powder supplier has closed her business. So I had to buy the terrible supermarket coconut flakes

At some point in your life, you have to step back and reassess what you want to or need to do. It may requiring turning to others to figure it out. I have reached that point. There something I must do...and it's COMING SOON!

A cake a threw together using some mixed fruits and nuts, apples sauce and a little rum.

Kapsa, a Saudi Arabian inspired one-pot dish.

Pasta with spinach, tomato and vegan mayo.

These words are music to my ear!

My regular Coconut Cake is deliciously popular among my customers.

I try use quality ingredients because as a picky eater I want my customers to enjoy the food as much as I'd enjoy eating it.

Cauliflower drumettes with quinoa/couscous. Sauce drizzled over the 'drumettes': cilantro, sugar, oil and lemon juice.
