Vinegar and milk! Homemade cheese in 10 minutes! Recipe from my Italian grandma
Cheese making might sound like a complex task reserved for artisans, but with just two simple ingredients—vinegar and milk—you can create fresh, delicious cheese at home in under ten minutes! Not only is this method quick and easy, but it’s also significantly cheaper than buying cheese from the store. Here’s how you can enjoy the satisfaction of making your own cheese with the bonus of keeping your budget in check.
Gather Your Ingredients:
- 1 liter of whole milk (the fresher, the better)
- 2 tablespoons of white vinegar or apple cider vinegar
Ensure the milk is not ultra-pasteurized, as this type can affect the cheese-making process.
2. Heat the Milk:
Pour the milk into a large pot and slowly heat it on the stove. You want to bring the milk to just before boiling, around 190°F (88°C). It’s important to heat the milk gently to avoid burning. Stir occasionally to ensure even heating.
3. Add the Vinegar:
Once the milk is hot, remove the pot from the heat and gently stir in the vinegar. The acidity of the vinegar will cause the milk to curdle. Let this mixture sit for a couple of minutes as the curds (solid) and whey (liquid) separate.
4. Strain the Curds:
Line a colander with a clean cheesecloth or a fine linen towel and place it over a bowl. Pour the curdled milk through the lined colander to catch the curds. The liquid whey can be saved for other recipes, like smoothies or baking.
5. Press and Season:
Once you’ve strained out the whey, you can press the curds gently to remove any excess liquid. At this point, you can add a pinch of salt or any other seasonings you like. Pressing for a longer period will result in a firmer cheese.
6. Enjoy Your Cheese!
Your homemade cheese is ready to eat immediately! It’s delicious spread on crackers, crumbled over salads, or simply enjoyed on its own.

I’ve been making my own flour tortillas. They’re inexpensive and taste way better than storebought!
Here’s the recipe everyone: I used 2 cups of flour, 1 tsp salt, 1 tsp baking powder, 4 tbs melted butter and 3/4 cup of warm water.
Add the flour, salt and baking powder to a large bowl and mix well. Then add the melted butter (let it cool first before adding). Start mixing with your hand while slowly adding the water. Knead for about 5 min and shape into a ball. Next divide the dough into 8 equal sized balls. Roll out the dough balls using a little flour. Then in a skillet over medium heat cook the tortillas for about 1 min on each side. The tortillas should bubble up.
Snickerdoodles cookies: This isn't an Amish recipe, it's an old family recipe.
1 cup unsalted stick butter, softened
1 1/2 cups granulated sugar
2 eggs
2 teaspoons pure vanilla extract
¼ teaspoon pure almond extract
2 3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/4 teaspoon salt
To roll cookies in:
¼ cup granulated sugar
1 tablespoon ground cinnamon
Preheat oven to 400 degrees F.
Cream together butter and 1 1/2 cups sugar, the eggs and the vanilla & almond extracts. Sift together all dry ingredients. Add dry ingredients and stir until well blended. Shape dough by rounded spoonful into balls (a small cookie scoop or heaping teaspoon).
Mix the remaining sugar and cinnamon for snickerdoodles to be rolled in. Roll balls of dough in cinnamon/sugar mixture. Place 2 inches apart on parchment lined baking sheets or ungreased if you don't use parchment. I always use parchment - makes the cookies better on the bottom.
Bake 8 to 10 minutes, or until set but not too hard. Remove immediately from baking sheets to cooling racks. Cool completely and store in an air tight container.

SPICY RANCH CRACKER DELIGHT
Ingredients:
1 box of saltine crackers or 1 box of mini saltine crackers
1 cup of vegetable oil
2 tablespoons of crushed red pepper flakes
1-2 teaspoons of garlic salt (course ground with parsley)
1 package of dry Ranch Dressing Mix
Instructions:
Preparation:
Preheat the oven to 350°F if you choose to bake the crackers.
Mix the Spicy Ranch Coating:
In a mixing bowl, combine the vegetable oil, crushed red pepper flakes, garlic salt, and dry Ranch Dressing Mix.
Stir the ingredients well, ensuring they are thoroughly combined.
Prepare the Crackers:
Place the saltine crackers (or mini saltine crackers) in a large sealable plastic bag.
Coating Process:
Pour the prepared spicy ranch mixture over the crackers in the bag.
Seal and Mix:
Seal the bag tightly, removing excess air.
Turn the bag upside down, shake it, and rotate it to ensure the coating evenly covers all the crackers. Do this for a few minutes until the crackers are well-coated.
Baking Option (Optional):
If you prefer baked crackers, spread the coated crackers on a baking sheet.
Bake in the preheated oven at 350°F for 5-10 minutes until the crackers are crisp and the coating is set. Keep an eye on them to prevent burning.
Cool and Enjoy:
Allow the crackers to cool before serving.
Store in an airtight container once cooled, if there are any left!
Note: Feel free to adjust the quantity of crushed red pepper flakes and garlic salt according to your spice preference. Experiment with the flavors to create your perfect addictive snack

Cream Cheese Chicken Enchiladas
3 Chicken breasts or rotisserie chicken, cooked, shredded
8 oz Cream cheese, soft
2- 10 0z Enchilada Sauce (I use Old el Paso Green in this pic)
5 cups shredded cheddar or Monterey Jack cheese
12 taco size flour tortillas
Mix shredded chicken (I shred the chicken breasts in the Kitchen Aid Mixer), cream cheese and 1/2 of a can of enchilada sauce, and 1 cup cheese. Mix well. Pour the remainder of the can of enchilada sauce in a 9x13 pan. Fill the tortillas with a couple of tablespoons of filling spread and roll. Place enchiladas seam side down on top of sauce in the baking pan, repeat to fill the pan. Pour 2nd can of sauce on top of the enchiladas and top with cheese. Bake 25-30 min at 350 degrees until hot and bubbly. Let sit a couple minutes before serving.
One pan has red enchilada sauce the other with green sauce.

Amish Apple Fritter 😋😍
Ingredients:
2 cups all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
2 large eggs
1/2 cup milk
1 teaspoon vanilla extract
2 cups finely chopped apples
Vegetable oil for frying
Powdered sugar for dusting
Directions:
In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
In a separate bowl, beat the eggs, milk, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and mix until just combined.
Fold in the chopped apples.
Heat the vegetable oil in a large, deep skillet over medium heat.
Using a cookie scoop or spoon, drop the batter by the tablespoonful into the hot oil, making sure not to overcrowd the skillet.
Fry the fritters for 2-3 minutes per side, or until golden brown and cooked through.
Remove the fritters from the oil with a slotted spoon and place them on a paper towel-lined plate to drain.

HAMBURGER STEAKS WITH ONION GRAVY
1lb. ground beef
1 cup sliced mushrooms
1 egg
1/3 cup bread crumbs
1/2tsp. black pepper
1 tsp. salt
1/2 tsp. onion powder
1 clove garlic minced
1tsp. Worcestershire sauce
1tbsp. oil
1 1/2 cup thinly sliced onion
2tbsp. all-purpose flour
1 cup beef broth
1/2tsp. salt
In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic, and Worcestershire sauce. Form into thick patties.
Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned. Remove the beef patties to a plate, and keep warm.
Sprinkle flour over the onions, mushrooms and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes. Serve with a big bowl of mashed potatoes

Fried cabbage with bacon
*Ingredients:
•6 slices of bacon.
•A large head of cabbage, I removed the core and cut it into strips.
•2 minced garlic cloves.
•1 large onion, cut into cubes.
•1 tablespoon of salt.
• 1 teaspoon ground black pepper.
• 1/2 teaspoon of onion powder.
•1/2 teaspoon of garlic powder.
•1/2 teaspoon paprika.
•Carrots, but it's optional
* Methods :
1) In a large skillet, sauté the bacon over medium heat until crispy and fried.
2) Chop up the bacon and place it on paper towels. I cut it into crumbs.
3) I stirred the garlic and onion into the bacon fat and cooked in a skillet, stirring constantly, for about 5 minutes, until softened.
4) I then quickly added the cabbage and continued to cook for another ten minutes or until tender!
Hamburger Potato Cheese Casserole
Ingredients:
5 large russet potatoes, peeled and sliced about 1/4-1/2 inch thick
2 -3 tablespoons chopped onions
1 lb ground beef ( really lean is preferable)
salt and pepper
Cheese sauce (the same one I use for macaroni and cheese)
2 cups milk
3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces shredded sharp cheddar cheese
ketchup ( optional condiment)
Directions:
1. I use a 2 1/2 quart covered casserole dish for this. This will stick unless you have a great non-stick baking dish.
2.Preheat oven to 350.
3.Brown hamburger and onion.
4.Place a layer of sliced potatoes in casserole dish, top with half of hamburger/onion mixture. Salt and pepper to taste (kind of depends on how salty your cheese sauce is – you can always salt it later if it needs it).
5.Repeat layering of potato slices and hamburger mixture (and salt and pepper if desired).
6.Make Cheese sauce:.
7.Melt 3 T butter in saucepan over med-high heat.
8.Add 3 T flour, and the salt and pepper. Stir quickly to blend.
9.Add 2 cups milk; stir with whisk to incorporate butter/flour mixture.
10.Reduce heat, stir till thickened and bubbly.
11.Remove from heat and add shredded cheddar. Stir until cheese melts.
12.Pour cheese sauce over hamburger and potatoes in baking dish. Push potatoes around to let cheese sauce into all of the crevices so it’s well coated.
13.Cover and place in oven. Bake for about 1 1/2 hours, till potatoes are tender and top is browned. I like to take off the lid for the last 20 minutes or so to brown the top a bit.
14.Even with the leanest ground beef, this can get little pools of grease on top – I just spoon these off. It doesn’t mean the whole thing is greasy – just cheesy.
15.My family members consider generous amounts of ketchup a necessary addition to this dish. I like it fine by itself (ok, maybe a spot of ketchup on the side).

Ingredients
1 pound ground beef
1 egg
¼ cup bread crumbs
⅛ teaspoon ground black pepper
½ teaspoon seasoned salt
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 tablespoon vegetable oil
1 cup thinly sliced onion
2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon cooking sherry
½ teaspoon seasoned salt
Directions
In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes
Homemade Krispy Kremes
Ingredients For Homemade Krispy Kremes
3 tbsp milk
3 tbsp boiling water
1 tsp dry active yeast
8 oz all purpose flour (a little under 2 cups - i recommend you measure and weigh. see my note above)
1 1/2 oz sugar (about 3 tablespoons)
1 egg
1 oz butter, cold to room temperature (just don't melt it, okay?)
dash of salt
enough oil to cover the bottom few inches of a wok, or a deep fryer.
Glaze:
1/3 cup butter
2 cups confectioners' sugar
1 1/2 teaspoons vanilla
4 tablespoons hot water or as needed
How To Make Homemade Krispy Kremes
In a large measuring jug, combine the milk and boiling water. Add a teaspoon of the sugar and the yeast. Stir it gently, then leave it in a warm place for the yeast to activate (aka foam).
In a large mixing bowl, combine the flour, the rest of the sugar, and the salt. Cut in the butter using your fingers or a pastry blender, until it resembles crumbs.
Add the egg (give it a quick beat) and yeast mixture to the flour mix, and mix into a smooth dough. This usually takes about 5 minutes of mixing.
Turn the dough out onto a lightly-floured counter and knead for about 5 to 10 minutes—it should feel springy and little bubbles should form under the surface. Place it back in the bowl, cover with a cloth or plastic wrap, and let rise for about an hour until double in size.
Once risen, place the dough onto the counter and cut it into 4 pieces. One piece at a time, stretch it into a long rope about an inch to an inch and a half wide. Cut strips about an inch long, ball em up with your hands, and place them on a baking tray or wire rack to wait.
Cover the doughnuts holes with a cloth to rise while you heat the oil to 375F.
Place the doughnuts into the oil and fry until golden brown on each side, about 2 minutes. Be sure to fry only a few at a time so they don’t overcrowd and stick together.
Drain on a paper towel or wire rack over a cloth, before glazing them. Be sure to glaze them warm, or else they won’t get that delicious coverage!
Grandma's Potato Soup
INGREDIENTS:
8 slices bacon chopped
4 tablespoons butter
4 large Russet potatoes peeled and cubed
1 medium onion finely chopped
2 cloves garlic minced
⅛ teaspoon cayenne pepper
¼ cup flour
2 ½ cups low sodium chicken broth
2 ½ cups milk
1 cup shredded sharp cheddar
1 cup shredded white cheddar
½ cup sour cream
¼ cup chopped chives
Salt and pepper to taste
INSTRUCTIONS:
In a Dutch oven or heavy stockpot over medium heat brown the bacon. Using a slotted spoon remove the bacon from the pan reserving the grease. Add enough butter to make 2 tablespoons of fat. Melt the butter over medium heat. Add the potatoes and onions to the pan cooking for 5 minutes or until the onions are soft. Add the garlic and the cayenne pepper; cooking for 1 minute stirring constantly. Using a slotted spoon remove the potatoes, onions and garlic to a bowl or plate; reserving any fat in the pan.
Melt enough butter to make 4 tablespoons of fat. Sprinkle in 1/4 cup flour and whisk to combine. Cook for 2-3 minutes stirring constantly. Whisk in the chicken broth and milk in several intervals alternating between the two.
Add the potatoes, onions and garlic back to the pot and simmer until the potatoes are tender.
Whisk in both shredded cheeses until melted. Remove from the heat and stir in the bacon, sour cream, chives and salt and pepper to taste.
ALABAMA WHITE SAUCE
Ingredients
1 cup mayonnaise
¼ cup apple cider vinegar
1 tablespoon brown mustard I use a spicy brown mustard
1 tablespoon brown sugar
2 teaspoons prepared horseradish I use a hot horseradish
1 teaspoon lemon juice
½ teaspoon Worcestershire sauce
½ teaspoon hot sauce
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon cayenne pepper
Salt and pepper to taste I use ½ teaspoon each
Instructions
Whisk all of the ingredients together in a small bowl until smooth.
Use the white bbq sauce right away, or transfer to a sealable jar and refrigerate a few hours to let the flavors develop and meld.
