APPLE CINNAMON SCONES w/ STREUSEL TOPPING & CINNAMON GLAZE

I didn’t realize until fairly recently that I even liked scones, in fact, I don’t just like them… I LOVE THEM! Since then, I’ve made a lot of different flavors, some sweet, some savory, some totally plain for my little guy who’s a very picky eater (which he loved 🤷🏻‍♀️) but these Apple Cinnamon Scones are hands down my most favorite! Between those Honeycrisp apples cooked in brown sugar and cinnamon that give these a burst of flavor, to the crisp texture of the streusel topping, to that sweet cinnamon glaze, every bite is pure heaven! 🍎

In fact, this is the very first recipe my husband has ever told me to never give away. He also tells me that I always do the opposite of what he suggests which I totally disagree with… but here’s the recipe! 😉

Apple Cinnamon Scones with Streusel Topping and Cinnamon Glaze
Makes approximately 8 scones
Ingredients:
For apples:
• 3 cups of apples, cubed
• 1/3 cup brown sugar
• 2 tsp. cinnamon
• 1/8 tsp. salt
• 1/4 cup water
• 1 Tbs. cornstarch
For scones:
• 2 3/4 cups flour, plus 1/4 for flouring before cutting
• 1 Tbs. baking powder
• 1/2 tsp. cinnamon
• 1/8 tsp. nutmeg
• 1/2 tsp. salt
• 1 stick cold butter, cut into cubes
• 1 cup milk
• 1 Tbs. apple cider vinegar
• 1/2 cup granulated sugar
For egg Wash:
• 1 egg, beaten
• 2 tsp. milk
For streusel topping:
• 1/3 cup brown sugar, packed
• 1/2 tsp ground cinnamon
• 4 tbsp butter, melted
• 2/3 cup plus 1 tbsp all-purpose flour
For cinnamon glaze:
• 1/2 cup powdered sugar
• 1/2 tsp vanilla
• 1/4 tsp. cinnamon
• 1 Tbs. milk

Directions:
1. Preheat oven to 400°
2. Start with the apples. In a skillet, add cubed apples, brown sugar, cinnamon, and salt. and cook over medium-high for several minutes, until apples begin to release juices and become tender. In a small bowl, stir together cornstarch and water. Stir slurry into apple mixture and cook until sauce has thickened. Remove from heat land set aside.
3. Move onto the scones. In a large bowl, mix flour, baking powder, salt, cinnamon, nutmeg and sugar. Then cut in cold cubed butter with a fork or pastry cutter until combined (a food processor also works great for this step).
4. In a small bowl or glass measuring cup, mix together milk and apple cider vinegar and let stand for 5-10 minutes. (This step sounds weird but you have to trust me on this one, it’ll be amazing!)
5. After 5 minutes, add milk mixture to flour mixture and stir until combined.
6. Add cooked apple mixture and stir again until combined.
7. Gently press the dough into a 9-inch circle. Cut into 8 wedges then place wedges on a parchment-lined baking sheet. Arranging approximately 1” apart.
8. Whisk the egg and 2 teaspoon of milk together and brush over scones.
9. Now for the streusel. In a small bowl mix together flour, brown sugar, cinnamon, and melted butter. Mix until well combined. Add to the top of each scone.
10. Place scones into the oven and bake for 20 minutes.
11. Remove from the oven and allow the scones to cool while you mix together the Cinnamon Glaze then drizzle over each scone and enjoy!

Have you ever wondered why some mussels are orange and others are white? Well, it all comes down to gender!

The orange mussels are female and the creamy white mussels are male. Both have the same rich, sweet flavor but look quite a bit different from another.

Curious how mussels reproduce?
Marine mussels reproduce by releasing their eggs and s***m into the water. The young then begin life as floating plankton for between one and six months before settling on the bottom as an adult. As the mussel develops, it grows a byssus aka the beard which is a mass of threads it uses to secure itself to a solid surface where it will continue to grow.

How long does it takes for mussels to grow to a harvestable size?
Well this answer might just be the most surprising yet. Out of the 297 different species of mussels, some live for over 100 years! However, the mussels we have here on the Oregon coast which are blue mussels or sometimes referred to as bay mussels only have a lifespan of approximately 12 years and take roughly 12-18 months to grow to a harvestable size.

So the next time you’re out harvesting mussels, impress your friends and family with these random mussel facts!

SALMON & FRESH DILL DEVILED EGGS

Salmon & Fresh Dill Deviled Eggs
6 hard boiled eggs
1/3 cup Oregon's Choice Gourmet canned salmon (use remainder for topping eggs as garnish)
1/4 cup mayonnaise
2 tsp. mustard
1 Tbs. Worcestershire sauce
1 tsp. freshly squeezed lemon juice
1-2 tsp. lemon zest
1/4 tsp. garlic salt
1/8 tsp. salt
1/4 tsp. paprika
1 Tbs. fresh dill
Directions
1. Cool eggs in ice water after cooking, until cold. Peel eggs, and cut in half.
2. Gently scoop yolks out of whites, and mash yolks with a fork or food processor until fine.
4. Add mayonnaise, mustard, garlic salt, salt, and paprika. Beat with a food processor, or mixer, until light and creamy.
5. Mix in lemon juice and lemon zest.
6. Add salmon and dill. Mix until well combined.
7. Divide filling between eggs. Use 2 spoons, or large ziplock bag with the corner cut off, or large pastry bag tip.
8. Garnish eggs with additional piece of salmon, small sprig of dill, and lemon zest if desired.
10. Refrigerate until cold. Enjoy!

BEER BATTER FRIED MUSSELS w/ GARLIC AIOLI 🍺

When I first made these fried mussels I wondered if frying them was a little too extra… but then remembered that I love everything fried so I went for it and dang it, I’m glad I did because these were so good!!! Honesty, you could probably substitute pretty much anything for the mussels with this recipe and it would be amazing in that beer batter dipped in garlic aioli! 🙌🏻

Beer Batter Fried Mussels w/ Garlic Aioli
Beer Batter Fried Mussels
Ingredients:
2 dozen mussels
1 cup Krusteaz tempura mix
1 cup Rogue Colossal Claude beer
1/2 tsp garlic powder
1/2 tsp pepper
Oil for frying
Directions:
Preheat oil to 375°
Mix all ingredients in a bowl, dip mussels (I precooked mine so they were easily removed from the shell) to coat evenly and deep fry until golden brown. Approximately 1 minute per side.

Garlic Aioli
Ingredients:
3 garlic cloves
1/2 tsp. coarse sea salt
1/2 cup Mayo
1 Tbsp. Fresh squeezed lemon juice
2 Tbsp. Olive oil
1/2 tsp. Worcestershire sauce
Directions:
With a mortar and pestle smash garlic with coarse sea salt until mixed into a smooth paste.
In a small mixing bow, add Mayo, lemon juice, olive oil, Worcestershire and garlic mixture.
With a hand mixer, mix for approximately one minute.

THAI BASIL MUSSELS

From ocean to table in less than an hour!
This recipe is so dang easy but such a flavorful way to enjoy the mild taste of wild mussels.

Thai Basil Mussels
Ingredients:
• 2 dozen fresh mussels, scrubbed and debearded
• 1 small onion, chopped
• 2 garlic cloves, minced
• 1 Tbs. coconut oil
• 1/2 cup of chicken stock
• 1 (13.5 ounce) can unsweetened coconut milk
• 1 roma tomato diced
• 2 Tbs. Thai green curry paste
• 1 Tbs. fish sauce
• 1 tsp white sugar
• 1 Tbs. honey
• 1 cup of chopped basil
• 1 cup of chopped fresh cilantro
• 1 lime
Directions:
1. In a large saucepan, melt coconut oil and sauté onions and garlic until soft.
2. Add the chicken stock, coconut milk, Thai green curry paste, fish sauce, sugar, and honey.
3. Summer on medium - high heat and bring to a light boil.
4. Add in the chopped tomatoes, simmer another 5 minutes.
5. Add the juice from 1 lime and fresh Oregon Coast mussels.
6. Cover and stir occasionally for 8 minutes.
7. Discard any mussels that have not opened.
8. Add chopped basil and cilantro and serve immediately. Enjoy!

VELELLA VELELLA

The “Blue Tide” is upon us, as beaches all along the Oregon coast are scattered with small jellyfish looking creatures known as velella velella.

“Velella Velella are also known as sea rafts, little sailers, and by the wind sailors. They are a very unusual species of free floating hydrozoans.

Velellas are equipped with a floating disc composed of concentric gas filled tubes. Atop the disk is a small chitinous semi circular sail which allows the wind to propel them across the surface of the sea. If wind conditions are right thousands of them can be washed up on beaches. These mass stranding’s could play an important role in cycling carbon and nutrients from the sea onto the land.

Velella have either a right angled sail or a left angled sail. This propels them downwind either 45 degrees to the left of the wind or 45 degrees to the right of the wind. This often splits the population in two. Presumably this provides an evolutionary advantage to the organism. On a strong given wind direction, only half the population will end up beached.

Interestingly, the 45 degree angle of velella’s sail aligns closely with fastest angle that a sailing boat may travel at. This is also the maximum angle in which yachts can sail up into the wind.“

Cockle Clam Bucatini w/ Rogue Newport Daze Ale Cream Sauce & Pea Tendrils
Ingredients:
1 limit cockle clams (20 clams), chopped
3 garlic cloves, minced
1/4 cup buttter
1 cup Rogue Newport Daze Ale
1 cup chicken stock
1 cup heavy cream
2 Tbs flour
1/4 cup reserved clam juice
1 cup Parmesan cheese
Large handful of pea tendrils from Lil Swiss Farms

Directions:
•Cook bucatini pasta per package directions, drain and set aside.
•In a saucepan over medium heat add butter and let it melt. Add minced garlic and whisk together to combine.
•Sprinkle the flour over the butter and garlic mixture. Whisk together and then slowly add the beer and heavy cream while whisking. Let sauce begin to boil, add chopped clams then reduce heat to low and allow it to simmer for 2-3 minutes.
•Add Parmesan cheese, salt and pepper and whisk together.
•Remove from heat then fold in pea tendrils. Serve immediately.

FRIED COCKLE CLAMS w/ SPICY COCKTAIL SAUCE

I’ll just put these bad boys right here for anyone harvesting clams this weekend during these minus tides!

Fried Cockle Clams with Spicy Cocktail Sauce

Ingredients:
• 1 limit of cockle clams, cut lengthwise into approximate 1/4” width strips
•2 cups flour
•1 tsp. baking powder
•1 tsp. baking soda
•1 Tbsp. Johnny’s seasoning salt
•1 egg
•1 cup milk
• Oil for frying

Directions:
1. Heat oil to 375°
2. In one large bowl combine flour, baking powder, baking soda, Johnny’s seasoning salt. Whisk to fully combine the ingredients.
3. In seperate bowl whisk together milk and egg.
4. Dredge clams on both sides with the flour mixture, then to the egg mxture on both sides, and again into the flour mixture. For this step I press the flour mixture down onto the clams to ensure they’re dredged fully. Gently shake off excess flour.
5. Fry to a golden brown, serve either Spicy Cocktail Sauce and enjoy!

Spicy Cocktail Sauce
Ingredients:
1 cup ketchup
2 1/2 Tbs. prepared horseradish
1 Tb. Worcestershire sauce
Directions:
Mix all ingredients in a small bowl. Enjoy!

COCKLE CLAMS

A cockle clam is an edible marine bivalve mollusc.

These hard-shelled clams are easy to harvest – sometimes you can just pick them up off the sand – making a good choice for families with little ones or first-timers.

Habitat: Cockles are “hard shelled” clams. Their protective, stout shells and short siphons mean that they do not have to bury as deeply as other common bay clams. Good cockle beds will often have cockles right on top of the sand on a good tide. They prefer sandy areas with high salinity, but can be found at many types of tideflats.

Technique: The best clamming is during low/minus tides. Because these clams are so near the surface, you rake, rather than dig, for them. A four prong gardening rake is perfect for raking the wet sand near the water line. You’ll feel a “clunk” when you hit one. In softer sediment, you may also feel them under your boot. Feeling adventurous? Pull on your waders and rake in shallow pools or channels to find cockles. - ODFW

You must have a valid shellfish license to harvest cockle clams (kids 11 and under can clam for free!), and the limit in Oregon for cockles is 20 clams per person, per day.

And just between you and me, they’re my favorite clams to cook with! Shh… don’t tell anyone though, people on the internet get really ticked when I say that! 😂

CHOPPED ALBACORE TUNA SALAD SANDWICH

This was such a hit with the whole family! Even my little ones who think they don’t like onions or tomatoes devoured it! When everything is chopped up small like that you get the overall tuna salad flavor of the sandwich instead of the individual ingredients making it the perfect bite, every bite!

As always, a huge thank you to my fishing buddies over at Crack'n Crab Cleaner for making my pantry stocked full of albacore tuna possible!

Chopped Albacore Tuna Salad Sandwich
Ingredients:
Tuna salad (see recipe below)
Iceberg lettuce
Tomato
Red onion
Pickles
Salt and pepper

Directions:
Layer all ingredients on a cutting board in desired quantities then chop & chop & chop.
Keep chopping until everything is in nice small bite-sized pieces, then scoop into a hoagie roll and enjoy!

For albacore tuna salad
Ingredients:
1, 7.5oz can albacore tuna (do not drain)
1/4 cup mayonnaise
1 Tbs. yellow mustard
1/2 Tbs. Worcestershire sauce
1/4 tsp. Johnny’s Seasoning Salt
Directions:
If using Oregon Albacore, do not drain tuna
Combine all ingredients in a small bowl and mix well.

PACIFIC HERRING

The herring have entered the Yaquina Bay!

Pacific herring begin to enter the Yaquina Bay in February through early April to spawn, with the most action happening in March. Females produce up to 30,000 sticky eggs that adhere to eelgrass, seaweed and rocks. Males then discharge their milt into the water to fertilize the eggs and the eggs begin to hatch within 10 days and the estuary becomes a nursery for the young herring that remain there through the fall.

Pacific herring are best known for being a bait fish - although I’ve personally cooked them up and aside from their thin, hair-like bones that make them difficult to eat, they taste pretty delicious and are incredibly nutritious. Herring are rich in protein, iodine, omega-3, and omega-6 fatty acids, so you can certainly eat them too but they’re typically best reserved to be used as bait to catch larger, more desirable fish like salmon and halibut.

Pacific herring are found in large schools of hundreds of fish called “bait balls” and can oftentimes be found gathered near docks, jetties and piers so having a boat to catch these fish isn’t always necessary but if you do happen to have a boat having a fish finder to locate the schools is always helpful. However, if you’re like me and don’t have a fish finder on your boat, keep an eye out for for a swarm of feeding birds. Per ODFW “if you see a large group of birds hovering over and diving into the water, chances are good it’s a school of bait fish attracting their attention.”
