🌸Spring has sprung! (Or getting there☀️!)

Eating in season isn’t only tastier, but also provides us with higher nutrient-density at a more cost-effective price. Incorporating natural, minimally-processed foods into our diets ensures that we get more of the good stuff and less of the added fats, sugars, added sodium.

Let’s break down the specifics of some of these benefits:

Asparagus - A prebiotic powerhouse! Being a good source of insoluble dietary fiber, asparagus helps feed the important gut bacteria and wash the bad out of your system!

Lemons - Lemon juice contains tons of antioxidants, vitamins, and fiber, which helps to boost the body’s metabolic rate and aid in detoxification. Try adding fresh lemon to a glass of water in the morning!

You’ve experienced burnout before and want to avoid it in the future. You love your families but let work responsibilities get in the way of feeling present or spending quality time with loved ones as much as you’d like.

You want to create healthier work boundaries but have a hard time saying no or feel your work is your only outlet. You recognize the importance of self care but have a hard time prioritizing yourself.

my favorite part of the week is hitting farmers market on sunday and whipping up new recipes to try! these aren’t the prettiest photos but trust me it’s worth making- dm me for the recipe!

this garlicky rainbow chard pasta with lemon zest, fresh breadcrumbs and (optional) pecorino may have been the best pasta dish I’ve made yet 👩🏻‍🍳

i’ve been OBSESSED with watermelon juice this summer. i use the instead of a juicer because I want all the amazing benefits of the fruit! this has been a summer staple and I’m sad to see the season winding down

when I say this is my fave homemade potato salad, i mean it! i found it from the thug kitchen cookbook years ago and has been a staple- they’ve since rebranded as but have the same recipes- check out their bad mannered delivery on their recipes- it’s great! i highly recommend you try this vegan and amazing, herbed potato salad 🤤🥔🌿🥕

recipe below ⬇️ serves 4 (side dish)
1.5 lbs yukon gold or red potatoes (yukon featured here)
1 tsp dijon mustard
3 tbs white wine vinegar
2 tbs lemon juice (about 1 lemons)
¼ c extra virgin olive oil
2 cloves of garlic
1/3 c shredded carrot*
¼ c of chopped chives or green onions
¼ c chopped dill
s+p to taste

cut your potatoes into pieces. boil some water in a medium pot, add a pinch of salt, and the potatoes. boil them until you can easily stab a fork through one, like 10-15 minutes depending on the size of your potatoes.

while the potatoes cook, chop up the garlic. mix together the mustard, vinegar, lemon juice, oil, and garlic in a small glass. drain the potatoes and put them in a large bowl. add the dressing and toss it all together. add the carrots, herbs, and a little salt and pepper and mix them in. let the salad sit in the fridge for at least 30 minutes so that the potatoes can soak in all the flavor. if it looks dry after that then add a little more vinegar and olive oil and stir.

(you can make the day before you go somewhere and keep it in the fridge- i personally feel most dishes are more flavorful this way!)

there is so much you can do with this versatile little fruit! smoothies, desserts, toasts, dips, mayo replacer, soups, salads, bowls and more! avo’s are a staple for me and here are a few reasons why…

🥑full of nutrients like: potassium, healthy fats, fibers, folate, protein, C, E, K, magnesium, copper and more
🥑antioxidants and anti-inflammatory defenses
🥑gut health
🥑keeps you full and satisfied- can lead to weight loss/management
🥑extra folate can be good during pregnancy
🥑more! just know that you can’t go wrong with 1/2 an avo daily 😋

🥑my only con with these lovely things is that their ripe window is very short. you have to master the art of picking them at the right time! i look for almost soft (unless im@eating it right away,) with their little nub still in tact and keep them out of the refrigerator and don’t buy too many at once
