Ingredients:
Jaggery - 150 gms
Water - 600 ml (three glasses)
Juice of three lemons (medium size)
Dry ginger powder - half teaspoon (can be substituted with crushed ginger)
A pinch of cooking camphor (optional)
Add little cardamom (optional)
Method:
Soak jaggery in the water till it melts completely
Filter the water to remove any particles
Add the lemon juice
Add the powders and stir well
Although it is refreshing at room temperature, it tastes even better when chilled.
While it's okay to substitute jaggery with palm sugar, the drink doesn't work with sugar instead of jaggery.
It's not uncommon to use tamarind extract instead of lemon juice.

Panakam or panagam is a cooling drink from the South Indian temple civilisation and is especially made during Ram Navami

(1 CUP = 250 ML)
Ingredients

½ cup chopped jaggery
2 cups water or add as required
¼ teaspoon dry ginger powder (saunth)

2 tablespoons lemon juice or juice of 1 lemon
1 pinch of salt

How To Make Panakam Recipe

1. In a bowl, take ½ cup chopped jaggery and 2 cups water. You can add water as required.

2. Mix very well and let the jaggery soak in water for 30 to 40 minutes or till all of it is dissolved. If there are impurities in the jaggery syrup, then filter the solution.

3. Then add 2 tablespoons lemon juice or juice of 1 medium sized lemon.

4. Next add ¼ teaspoon dry ginger powder (saunth).

5. Then add ⅓ to ½ teaspoon cardamom powder.

6. Add a pinch of edible camphor. If offering panakam to deities then you can add edible camphor. Edible camphor is optional and can be skipped.


7. Then add ⅛ teaspoon black pepper powder.

8. Add a pinch of salt.

9. Mix very well.

10. Offer panakam to the deities. while offering to the deities, you can add a few holy basil leaves (tulsi leaves) in the panakam. If serving to your family and friends, you can refrigerate or add some ice cubes in the panakam.

Ayurvedic recipe with detox ingredients style of preparation

(Inspired from My good times Anurag Sharma)

ingredients:
+ 1 cup jowar seeds (sorghum)
+ water to boil
+ 5 baby sweetcorn - diced
+ 1/2 green zucchini - diced
+ 3 or 4 dryed cardamon fruits
+ 1/2 tsp sliced ginger
+ 1 tsp cumin seeds
+ 2/3 tsp turmeric powder

instead of curry leaves
+ a hand full fresh herbs like coriander + leaves to garnish, soft fresh herbs
+ eatable flowers
avoid chillies as usual
+ rice bran oil
+ black pepper and
+ salt to flavour

method:
Soak the jowar overnight in water, change the water after 1-3 hours and then next day or after 6 hours boil it in the same water around 15 min till it looks swelled up.

Then heat the rice bran oil in a pan - add cumin seeds, cardamon, pepper, turmeric, fresh herb leaves and ginger.

When the seeds splutter, add the sweetcorn, fry on high heat and stir often. and after 3 min add the zucchini and prefered veggetables that are quickly fryed (for example like swiss chard, kohlrabi, topinambur
kale, fennel, china cabbage)
stir well and lower the heat.

Then add the salt and cooked jowar.
Add Haritaki and neem as much as you want.

Blanch some herbal leaves.

🍛Vegan Beetroot curry 🍛
🥭ready in 30 min🥭

Ingredients

4 large, fresh beetroots
2 tbsp groundnut oil

1 tsp crushed coriander seeds
1 tbsp fenugreek leaves
1 tsp turmeric powder
1/4 tsp neem powder

1 thumbnail-sized piece of ginger, chopped finely
¼ tsp mango powder
1 tsp salt
¼ cup water
¼ pint good plant milk f.ex. oat milk
1 small bunch fresh coriander, chopped

Wash, peel and cut the beetroot into small cubes and set aside.

Heat the oil on a low heat and fry the coriander seeds. When the mustard seeds begin to splutter, add the fenugreek leaves, ginger, turmeric and neem powder and stir. Lower the temperature and add the mango powder.

Add the beetroot cubes. Stir well and then add the salt. Add the water, cover the pan with a lid and cook the beetroot for 10 mins on a low heat.

Once the beetroot is cooked, add the plant milk and cook for a further 10 mins without the lid on to reduce the coconut milk down. Remove from the heat and add the chopped fresh coriander. Serve.

UNDERSTANDING THE ‘WHY’

It may seem like it’s easier and more ‘instant’ to cook dried beans, lentils, seeds and nuts directly without soaking them, but trust me, you’re doing it wrong and only hurting yourself!

💦Soaking overnight before cooking is the right way to handle beans, grains, nuts and seeds and the perfect start to homemade sprouts!

🙃Do you feel bloated and heavy after eating a meal made with beans, grains, nuts and seeds? Did you soak them overnight before cooking them? Aha! Gotcha! As I spend more time researching and learning about food, I come to understand that the old ways of eating was the right way. Our ancestors leading all the way up to our grandmothers would consider it blasphemous to cook lentils without soaking them first. And while they may not have very many reasons besides ‘it reduces cooking time’ or ‘that’s how it was always done’, here are the actual reasons why you must ALWAYS soak your ‘seeds’

WE CAN’T PROCESS COMPLEX NUTRITION

Beans, grains, lentils and nuts are essentially seeds, each one designed to give life to a whole new plant! These seeds contain an immense amount of nutrition locked and coded specifically to be unlocked as the seed grows into a plant. The human gut is not equipped to digest such complex compressed poisonous seed shell, and the by-product of that is the adverse production of hydrogen...

IT ACTUALLY AGES YOU!

The body also uses up a lot of enzymes to digest them and contributes to early aging. Eat them right to put the brakes on the aging process.

PHYTIC ACID SUCKS!

It literally ‘sucks’ guys! Sucks the nutrition in our food from being absorbed into the blood stream. Soaking for atleast 8-24 hours breaks down the phytic acid and ensures that you get all the nutrition you are signing up for.

KNOWING THE ‘HOW’

🟢 STEP 1: PICK YOUR SEEDS

Take some ‘seeds’ – the popular choice (mine and everybody’s) is Moong (Mung) beans. Close second would be Black Chickpeas (Kala Channa). This time, I also did Black-eyed peas and Chickpeas. If this is the first time you are making sprouts at home, start with 1/4 cup. Although with mung beans, the yield was much higher than with others. So, nifty too!

🟢 STEP 2: DROWN THEM

Rinse and submerge in water overnight. Optionally, add a tsp of acid (lemon juice, whey or apple cider vinegar). Helps break down the acids much faster and inhibit growth of harmful bacteria.

🟢 STEP 3: AND THAT’S IT!

Rinse and drain out the soaking liquid. You may do this several times during a 24 hour soak, but it’s not really necessary. If you’re just going to cook them straightaway, pressure cooking is the fastest way to cook soaked beans, lentils and other seeds. Once you’ve drained the soaking liquid, add more water and cook!

🟢 STEP 4: HOMEMADE SPROUTS

Skip the previous step if you want to take this one step further! To sprout the soaked seeds, drain, rinse and place in a clean glass jar. Cover the mouth with cheesecloth/muslin and hold it in place with a rubber band. Invert on a wire rack and place in a cool, dark place in your home. Pick a place that doesn’t get much traffic, you really don’t want them in the way. The best way to sprout is to forget about them from time to time.

🟢STEP 5: RINSE AND REPEAT

Every 12 hours, rinse, drain, cover, invert and repeat. I do the rinse cycle once in the morning and once after dinner. Keep doing this until they sprout tails long enough for your preference.

💧Tip: The day before you plan to eat your homemade sprouts, leave them by the windowsill to catch a little sunlight. This little burst of sunshine treatment would help the sprouts develop chlorophyll and carotene.

🌱The only thing left to do is eat your homemade sprouts, done right! Top your salads, soups, add to smoothies, stir-fry, make them into curries/stews – enjoy your dose of proteins and minerals, done right!

Note: Black-eyed peas, Chickpeas and other lentils with a thick husk tend to spoil quickly, so do not plan to keep these in long-term storage. If you want to store them, you’ll need to de-husk them before storage. You can do this by drowning them, and squeezing the husk out. Once they float up, you can drain, dry and store. But honestly, too much work! I’d rather just eat them up quickly!

This flavorful and delicious White Pumpkin Sambar, or Poosanikkai Sambar, has lentils infused with a spice blend, and it is flavored with white pumpkin. You can try it with most summer or winter squashes.

🍈 Pressure cook the dal and turmeric until the dal is soft and mashable. You can also do this on a stovetop. Cover the dal with an inch of water, bring to a boil, cover and simmer until soft, about 45 minutes to an hour. Add water if the dal gets dry.

🍈 Heat 1 tsp oil and add to it the coriander seeds, chana dal, fenugreek seeds. Saute, stirring frequently, until the coriander seeds and dal are a couple of shades darker. Don't let anything burn.

🍈 Remove the coriander seeds mixture to a blender, add the coconut and enough water to make a smooth paste. Blend.

🍈 Place the tamarind extract in a saucepan with 1 cup of water or, if you used the tamarind pods, place the pulp you extracted in a saucepan.
Add some salt and bring the mixture to a boil.

🍈 Add the pumpkin cubes, return to a boil, cover, lower heat to a simmer, and let the pumpkin cook until it's almost tender, about 8-10 minutes.

🍈 Add the ground masala, increase heat, and bring the mixture to a boil.

and stir well. Add more water if needed.

🥥 When the dal comes to a boil, lower the heat once again and simmer for about 10 minutes. Add water if the sambar gets too dry. You want a fairly fluid texture.

🥥 Heat the remaining 1 tsp of oil and add the mustard seeds
When the mustard crackles, pour the oil over the dal and mix well.

🍚 Serve hot with rice or Val Pongal.

🌺🌼 Satvic tiffin Sambar powder 🌼🌼🌺

Ingredients in picture ⬇️

🌼 In a heavy small frying pan, heat 2 teaspoons oil. Keep the flame to its lowest. first add mustard seeds. Mix and stir.

🌺 Then add the remaining whole spices – coriander seeds, fenugreek seeds, cumin seeds, black pepper, chana dal (husked and split bengal gram). Mix and stir.

🌼 Stir non-stop and roast till the spices become aromatic. Your kitchen will smell fragrant while roasting these spices. Once the spices are roasted well, you can also add 2 to 3 tablespoons fresh coconut or desiccated coconut. Mix and roast for 1 to 2 minutes and switch off the flame.

🌺 Keep aside to cool.

🌼 Once the spices cool, grind them to a fine powder in a dry grinder or coffee grinder.

🌺 Keep tiffin sambar powder aside for preparation with Dosa, Vada or Pongal.

🍲🌹🌿Ven Pongal🐁🌹🍲

Rice
Mung lentils or moong dal
Coconut oil
Cumin seeds
Black peppercorns
Ginger
Cashew nuts
Coconut milk

‘This is the season to eat Pongal, a rice and lentil dish from the culinarily gifted Indian state of Tamil Nadu.

🐁January is the month when Tamilians celebrate Pongal, the harvest festival. This is a four-day affair and it involves lots of good eats, including two namesake dishes made with the newly harvested rice and lentils, one sweet and the other savory. The sweet kind, with jaggery added to it, is called sakkarai or chakkara pongal. The savory kind, the one I have for you today, is called ven pongal.

🕊A vegan, gluten-free, soy-free recipe, can be nut-free.

🐁Coconut oil and coconut milk are staples in Tamil cooking, and although they are not traditional ingredients in a pongal, they make it taste as good as the stuff with ghee in it.

🎊Ven pongal is usually made with newly harvested, short grain rice, which tends to turn mushy when cooked and doesn’t hold its shape. This might appear to go contrary to other Indian rice dishes like biryani where we focus on getting the rice grains to stay separate, but remember, pongal is a different animal. A good pongal has the consistency of a risotto, and a rice-pudding-like texture.

🎊That said, I know that those of us with kitchens outside India do not have five different varieties of rice in our kitchens...

🎊I do cook the rice with the lentils until it’s really, really soft, to get the right texture. If you do have a short grain Indian rice, like sona masoori, use that instead.

🎊You will need yellow mung lentils for pongal. Not the kind with the skin still on, or the whole mung bean — you will need the tiny yellow lentil, sold as moong dal, in Indian groceries or online. There are no compromises or substitutes for this.

🎊Different cooks use different ratios of rice to lentils for their pongal, but I like a ration of 2:1 — two parts rice to one part lentils. I find that it gives me the best-tasting pongal.

🎊I pressure cook the rice and lentils together — for four whistles. You can use an instant pot — mix the rice and lentils with six cups water and set to pressure cook for 10 minutes. You will need to add the tempering ingredients after the rice and lentils are cooked and mix. You can also do this in a saucepan on the stovetop — cover the rice and lentils with two inches of water, bring to a boil, cover and cook until the rice and lentils are really soft. You will need to keep stirring and adding more water to make sure nothing is sticking to the bottom of the pot.

🎊Once the rice and lentils are cooked, you still need to make sure the consistency of your pongal is right. Like I said, you need a slightly runny consistency, like that of risotto. Once you have that right, you can stir in your tempering.

🍦Its so tasty, you can’t believe it 🤭Mixed Vegetables In Coconut Cream 🥥🥒🥕🍲🍦

Ingredients

1 cup carrots, peeled and diced length wise
1 salad cucumber, peeled, deseeded and cut length wise
1 raw banana, peeled, and diced length wise
1/2 cup sweet potato, peeled and diced length wise

1 cup fresh grated coconut
1/2 tsp turmeric powder
1/2 tsp cumin powder
3 Tbsp coconut puree
1 Tbsp coconut oil
salt, to taste
fresh delicate herbs

Directions

Wash, cover and cook the vegetables with enough salt, half a cup of water and turmeric powder. Do not overcook or mash the vegetables.
Grind the coarsely grated coconut, and cumin powder and mix together.

Add the coarsely ground paste to the cooked vegetables and simmer and cook, covered, for another 5 minutes.

Open the lid and add the yogurt and mix well. Once yogurt is added, switch off the flame.

Add coconut oil and fresh herb leaves on the top and keep the lid closed until served. When ready to serve, mix well and serve warm.

This a simple, but tasty and nutritious recipe. The vegetables can be added according to your choice. Since it has many veggies, it pacifies all the three doshas, and is easy to digest. It’s non spicy which makes it an ideal dish for kids as well.
