Throwback to this incredible meal I had with last week πππ
We had all of our fave things thrown together on a plate and somehow it worked out really well!!
Fried tempeh, crispy roasted sweet potato and courgette, hummus, guacamole, rocket, cauliflower and broccoli π
Butternut squash, aubergine and chickpea stew with brown rice π₯° This is perfect for cold winter days, especially with fresh coriander on too! I used the recipe. I've got several of her cook books and highly recommend βΊοΈ

It's been a while since I posted, in all honesty I've been so busy and have prioritised other things. But I'm back to it now and I'm hoping to start posting me recipes regularly again π
I'm now over half way through Semester 3 and I'm fully loving it!! I've decided I'm really interested in pursuing neurology going forward so watch this space!
Today's tea was No Lamb kebabs (from Morrisons), tomato cous cous, salad and a homemade vinaigrette dressing π
It's finally reading week!!! Very shocked that I am 5 weeks into my second year (halfway through semester 1 already π±)
The past 5 weeks have been extremely busy with lots of content. Even with all the extra work, I'm enjoying this year even more than last and I'm finding neurology super interesting ππ§
With that said, this reading week has come at the right time and I'm ready to relax and recharge. I'm starting things off right by baking some banana muffins with chocolate chips ππ
Banana bread was definitely a thing in the first lockdown so I'm changing things up with banana muffins for lockdown 2.0
Hope everyone is doing ok in the current lockdown, times are hard but we have got each other β€οΈ
Tonight's menu π
Sh*ttake mushroom and vegetable gyozas with pad krapow and jasmine rice ππΆοΈ All made completely from scratch!! @ Manchester, United Kingdom

My fave breakfast, it never ever gets old ππ₯
Plus, avocado is full of healthy fats so it's a great start to the day and really fills you up!
And it only takes 2 mins which is perfect for a busy week night breakfast!! π
There's a jacket potato under there I promise π
I've never had chili with jacket potato before but it was definitely a hit!!! Absolutely loved it, especially with the Morrisons vegan cheddar cheese on top!!

Very much enjoying a chill night with my gal π Popped into Morrisons after uni and came out with these treats π margarita pizza and mozzarella sticks with some olives because why not!!!

Not every meal is gonna be insta perfect but I'm just going to be honest, a lot of my meals are like this at the moment π
Thank you all for your suggestions on how to stay healthy while busy. Lots of people suggested a meal plan so I will be putting one together over the weekend for next week βΊοΈπ

I've had a super busy day so started my day with a big bowl of porridge topped with the best combo- banana and peanut butter πβ€οΈ
I think someone was a bit too interested in my lunch today π
I can't blame her, it smells amazing π Indonesian inspired nourish bowl. Stir fried veggies and greens with red cabbage, tempeh (my FAVE), spicy peanut sauce with lime and corriander to garnish ππ @ Manchester, United Kingdom

Had a very long, busy day so it's a late tea, but well worth the wait!! π

Alpro vanilla Greek style yoghurt with a little vanilla protein powder stirred in. Topped off with raspberries, strawberries and PB π
I might branch out and try different nut butters as I always get peanut butter. What would you guys recommend!?
Hey guys π As you may have seen, I've not been using social media as much recently. I've been really stressed getting ready to start back at uni as well as personal issues. But I'm back now, and really appreciate all your support and kind words π
Don't forget to look after yourself when you're stressed out, for me that means making a delicious healthy meal!! For today's lunch, I had no lamb kebabs, roasted Mediterranean vegetables and golden rice. I topped it off with some tahini, a wedge of lemon and some fresh parsley πππ

Good morning π Starting my day off with a high protein breakfast, scrambled tofu on toast! Seasoned with shallots, garlic, turmeric, paprika, salt and pepper π
Last nights tea... My new fave boats π so easy to make but still healthy and delicious. I filled mine with loads of salad, bean chilli, avocado and tomato salsa ππ₯
The biggest bowl of pasta ever π Spaghetti with home made pesto and loads of veg!
Kidney bean fajita boats π this is the first time I've tried using these little boats and I love them!! They are so cute and versatile, I may even try doing a dessert boat soon π
For these, I made a kidney bean, red pepper, tomato, chilli and baby corn filling. I topped it with avocado (a must), fresh tomato salsa, corriander and a wedge of lime ππ₯°
My fave combo, mushroom and truffle risotto with garlic bread π
This time I made the risotto with woodland mushrooms and loads of truffle oil and it was amaaaazing ππ
Tropical porridge bowl for breakfast this morningπππ₯ I've run out of peanut butter so was forced to branch out from my usual toppings but this might be a new favourite!!
Rolled oats and soy milk porridge topped with vanilla alpro yoghurt, sliced banana, frozen pineapple and frozen mango βΊοΈ I also added a little maple syrup as I've got a major sweet tooth π
Tried something a little different tonight π
Roasted some broccoli, kale and butternut squash in olive oil, garlic salt and pepper.
Fried up some chicken and had it all with a tahini dip!
Chinese chicken salad for tea tonight π
I tried the chicken for the first time tonight and I've got to say I loved it! Will definitely be getting it again π
Ingredients for 2 servings:
π1/2 packet alt chicken
π1 diced shallot
π2 diced garlic cloves
π1 carrot cut julienne style
πmixed salad bag
For the sauce:
π2 tbsp sweet soy sauce
π1 tsp dark soy sauce
π1/2 red chilli diced
π1 tsp chinese 5 spice
π1 tsp rice wine vinegar
Method:
πCook the chicken according to packet instructions then set to one side.
πFry the shallots, garlic and carrots in a frying pan for 5 minutes
πMixed all the sauce ingredients together in a small bowl.
πAdd the chicken to the frying pan then the sauce. Cook it all for 5 more minutes.
πServe the chicken warm on top of the salad. Garnish with a lime and corriander.
