We had all of our fave things thrown together on a plate and somehow it worked out really well!!

It's been a while since I posted, in all honesty I've been so busy and have prioritised other things. But I'm back to it now and I'm hoping to start posting me recipes regularly again πŸ˜€

I'm now over half way through Semester 3 and I'm fully loving it!! I've decided I'm really interested in pursuing neurology going forward so watch this space!

Today's tea was No Lamb kebabs (from Morrisons), tomato cous cous, salad and a homemade vinaigrette dressing πŸ‘Œ

It's finally reading week!!! Very shocked that I am 5 weeks into my second year (halfway through semester 1 already 😱)

The past 5 weeks have been extremely busy with lots of content. Even with all the extra work, I'm enjoying this year even more than last and I'm finding neurology super interesting 😁🧠

With that said, this reading week has come at the right time and I'm ready to relax and recharge. I'm starting things off right by baking some banana muffins with chocolate chips 😍🍌

Banana bread was definitely a thing in the first lockdown so I'm changing things up with banana muffins for lockdown 2.0

Hope everyone is doing ok in the current lockdown, times are hard but we have got each other ❀️

Thank you all for your suggestions on how to stay healthy while busy. Lots of people suggested a meal plan so I will be putting one together over the weekend for next week β˜ΊοΈπŸ’ž

Good morning πŸ‘‹ just a cute little bowl of yoghurt and fruit to brighten up your day!

Alpro vanilla Greek style yoghurt with a little vanilla protein powder stirred in. Topped off with raspberries, strawberries and PB 😍

I might branch out and try different nut butters as I always get peanut butter. What would you guys recommend!?

Hey guys πŸ‘‹ As you may have seen, I've not been using social media as much recently. I've been really stressed getting ready to start back at uni as well as personal issues. But I'm back now, and really appreciate all your support and kind words πŸ’ž

Don't forget to look after yourself when you're stressed out, for me that means making a delicious healthy meal!! For today's lunch, I had no lamb kebabs, roasted Mediterranean vegetables and golden rice. I topped it off with some tahini, a wedge of lemon and some fresh parsley πŸ˜πŸ‹πŸ…πŸ₯’❀️

Kidney bean fajita boats 😍 this is the first time I've tried using these little boats and I love them!! They are so cute and versatile, I may even try doing a dessert boat soon 😏

For these, I made a kidney bean, red pepper, tomato, chilli and baby corn filling. I topped it with avocado (a must), fresh tomato salsa, corriander and a wedge of lime πŸ‹πŸ₯°

Tropical porridge bowl for breakfast this morning🍌🍍πŸ₯­ I've run out of peanut butter so was forced to branch out from my usual toppings but this might be a new favourite!!

Rolled oats and soy milk porridge topped with vanilla alpro yoghurt, sliced banana, frozen pineapple and frozen mango ☺️ I also added a little maple syrup as I've got a major sweet tooth πŸ˜‚

Tried something a little different tonight πŸ˜ƒ

Roasted some broccoli, kale and butternut squash in olive oil, garlic salt and pepper.

Fried up some chicken and had it all with a tahini dip!

Chinese chicken salad for tea tonight 😍

I tried the chicken for the first time tonight and I've got to say I loved it! Will definitely be getting it again πŸ‘Œ

Ingredients for 2 servings:
🌟1/2 packet alt chicken
🌟1 diced shallot
🌟2 diced garlic cloves
🌟1 carrot cut julienne style
🌟mixed salad bag

For the sauce:
🌟2 tbsp sweet soy sauce
🌟1 tsp dark soy sauce
🌟1/2 red chilli diced
🌟1 tsp chinese 5 spice
🌟1 tsp rice wine vinegar

Method:
🌟Cook the chicken according to packet instructions then set to one side.
🌟Fry the shallots, garlic and carrots in a frying pan for 5 minutes
🌟Mixed all the sauce ingredients together in a small bowl.
🌟Add the chicken to the frying pan then the sauce. Cook it all for 5 more minutes.
🌟Serve the chicken warm on top of the salad. Garnish with a lime and corriander.
