US Prime Angus fillet steak from Huber’s Butchery with blanched broccoli and sweet potato fries. The steak is thick and juicy, done just right and my dinner is happy. That’s my job satisfaction right there!

Sometimes all you need is just vegetables!

Simple tray of pumpkin, Brussels sprouts, baby corns, Swiss button mushroom, cherry tomatoes and black olives. You can use any vegetables you want, just make sure you are not overcrowding the pan too much.

Preheat oven to 230c. I’m using a 9”x9” baking pan - add in 10-12 baby corns (sliced and halved), 6-7 Brussels sprouts (halved), 6-7 Swiss button mushroom (quartered) and a few quartered thinly slices of pumpkin (I prefer using Japanese pumpkin for roasting as they are sweeter). Add in about one to one half tablespoon of oil (I’m using avocado oil), one to one half teaspoon of sea salt, dashes of black pepper and cayenne pepper. You can add herbs or other spices in small amount if you want but I feel with vegetables, there really isn’t much need to enhance their flavour because they are already great on its own! Gently toss to combine. Then add 5-6 cherry tomatoes (halved) to the top. Placed it in the oven for 18-20 minutes. If you have root vegetables (potatoes, sweet potatoes), you will need more time to cook, so roast them on their own first before adding the rest at around the 15-minute mark, adding another 18-20 minutes to your cooking time.

5 minutes before they are done, gently toss and mix the vegetables again. Remove when done. Add in slices of black olives. I like to add dashes of truffle oil on them and then gently toss them one last time.

I’m a pretty much a lazy person, so I will simply serve the vegetables in the baking pan! My one and only diner is ok with it! In fact he is ok with anything I served😎

Late night bakes ~ focaccia! Happy with the result and planning to test with slow fermentation in the fridge for the next one.

Day 2 of my sourdough starter! I’m using method for creating this starter. Day 1 practically has very little activity until past the 14-hour mark but today has been bustling right after feeding!

Miso paste is one of the staples in our home. I used it a lot in my dishes but most of all, whenever I yearn for a quick bowl of soup, I will reach out for the miso paste and throw in whatever I have in my fridge.

Here's a quick dinner last night ~ miso soup with dried wakame and huge tiger prawns! Yes just the soup.
